Several friends and I visited this restaurant the final day of January and we had the best time! Sam, the manager and Tanya, our bartender were absolutely amazing! The drinks were delicious AND beautifully made. I had Sangria, a couple of others had Mango Margaritas. All delicious. Chips were served along with a special queso as well as salsa. Food was generous and beautifully presented. I had a mucho fiesta combo Enchiladas and a Tamale along with rice and black beans. Another friend ordered the Shrimp Ceviche and the presentation was stunning! She is a lover of Ceviche and gave it double thumbs up. This place was fun, with excellent service and they were busy! We are all in the restaurant hospitality business ourselves and we will absolutely get together there again. We ate at La Marimba because we were out doing errands, were hungry, and there it was at the side of the road. (411 Barton Blvd, Rockledge) Totally random. The restaurant looks like it used to be something else with oak booths and accents. There was some Mexican decor mixed in. We were welcomed immediately and escorted to a booth. The large screen TV had the football game on (soccer) Jose was our waiter and he was excellent the entire time we were there. A little challenged with English. Attentive, well-mannered, polite, non-intrusive, and professional. He seemed genuinely concerned that we have a nice experience. Immediately, chips and made-on-premises salsa was placed on the table with a big smile. The salsa was very good. The chips were well-shaped, but desperately needed salt. We ordered the combo and shared it. Two pork burritos & one pork enchilada plus rice & refried beans. The beans were very soupy. We had to ask for a spoon. The burritos & enchilada were covered in sauce & cheese. Tasty, but missing something. Not exactly bland, but not the Mexican flavor to which we have become accustomed. Seniors who are concerned about their food being too spicy would enjoy this. There is an outside covered and screened eating area. They had a large assortment of unique alcoholic drinks at specialty prices. The portions were large. We split one entree. We ate until we were full and took leftovers home for later. Plenty of parking. All the staff were pleasant, smiling, and acted as if they were happy we were there. It had a pleasant family feel. The restaurant is quite large with plenty of tables. This place is fantastic! We sat at the bar and Arath was the bartender. He was very attentive and friendly, and he made an excellent margarita! My husband got the Baja burrito, and I got the taco and enchilada combo. The food was super hot, fresh, and delicious! I rarely do reviews but in this case I need to warn people as to what to expect. The service was so so. Our server was by a person that had an underlying vibe that she really didn't want to be there. The food was nasty. We had an appetizer of street corn. It was not eatable it was not fresh it had no flavor and was mushy and got sent back with no offer to prepare a replacement. For the main dish we had fajitas. The food came out cold maybe lukewarm at best. We grumble and got through it. I didn't want to send it back and be there any longer than we had to. Went with a friend on Wednesday lunch. We were greeted promptly and seated right away. It's a typical Mexican decor bright colors. We were brought a basket of chips and salsa first. Jose was our server, he was very attentive and did an excellent job. We both ordered the chimichanga lunch portion. It came with a Mexican rice and a choice of refried beans or black beans. The chimichangas are just the meat of your choice and cheese. I really appreciate the fact that there were no fillers like rice or beans in them. Overall it was a very enjoyable meal. The day we moved to Brevard County, we had the furniture unloaded and were ready to have our first decent meal since our move began. We looked on Yelp and saw La Marimba was open and had good reviews. So, we went! I have a pretty basic matrix for deciding if I like wherever Mexican food I discover. Salsa. Salsa is a tricky item to conquer. It can be too chunky, too thin, too seasoned, and--gasp--be contaminated with cilantro (which tastes like soap). At La Marimba, the salsa is well balanced between chunky and thin. Sadly, they put cilantro in the salsa--BUT, it's still good. I'll add more about the salsa when I get to the fajitas. Beans Their refried beans are simple, which is what I like about them. They're not over seasoned, or too thick. They work perfectly on fajitas! Margaritas These are essential to a great Mexican experience. At La Marimba, they lean to the sweet side, but enjoyable all the same. And they're a great price. Quality of the meat All the times I've eaten there, the meat quality is good. They don't serve up a bunch of gristly meat, and the fajitas are perfectly seasoned. So, my habit is to order chicken fajitas. My wife and I share a single order. She only eats one serving, and I eat two. It's a perfect size for us to split. And, when the fajitas arrive, sizzling on the skillet, I pour some of the salsa over the top of the meat and let it sizzle for a moment. It's fantastic! Give it a try! I've also had the fried tilapia, and it was AMAZING! It's hard to choose between them. The service is always great and they have a friendly staff. Like movies and wine, we all have a different opinion of what makes Mexican food good. I grew up eating Tex Mex, so it has a special place in my heart, but I'm agreeable to all the other variations. Been coming here a long time; however, on the most recent take out order, the restaurant usually gives chips AND salsa; but this time they didnt. After a call and eventually speaking with a manager, they doubled down and said "it's our policy" they we don't give salsa for the chips. If they are going to be that obstinate about salsa; then I would recommend going to another nearby restaurant like the new on Fiske or even the one in Cocoa off of 520. This is a hidden gem in sleepy little Rockledge, Florida. I have driven by it so many times, and I'm glad I finally stopped by for an early dinner. It was a Friday night, so by the time we left, it was filling up. However, service was still good considering how many customers started flowing in. There were 4 of us, each ordering one of the combination dinners where you can order 1 item (taco, enchilada, chimichanga, burrito, or tamale). 2 of us got the chimichanga, one the taco, and one the enchilada. All of it was excellent. You can either get black beads or refried. I got the black beans, and they were the only thing on my plate that I wasn't thrilled with. They weren't back, just not as delicious as the rice (which was outstanding) and beef taco I ordered. I love how they put the salsa in a little decanter and give each person his/her own little bowl so there's no double dipping. The chips and salsa were delicious, and we received generous amounts of them. I plan to visit again when I'm in the area. read more

We have been loyal customers and frequented this establishment for over 15 years once to twice a week. However, We have seen things deteriorate and decline over the last few several months. With 2 new very good Mexican restaurants close by opening recently, I can no longer support this place. I can handle change but they no longer will put salsa with your to go orders. I tried to speak with the manager on the phone to explain our patronage trumps his 3 years as manager and how important hospitality is but he didn't really HEAR me. La marimba is my family's go to spot. For any random night or special occasion we hit the restaraunt. The food is fantastic! Everything from the chips salsa and queso, to the shrimp diabla and birria dishes. Everything is delicious. The margaritas are top notch and are perfectly strong. My daughter is a maniac toddler that loves to run around when she gets the opportunity and all of the staff there treat her like she's family. We love La marimba 10/10 read more

The chips and salsa that we got when we sat down were very good....Nice touch having individual dishes for each diner to serve themselves. As I was told the best queso in Brevard.....well it was flavorful, even a little hint of heat, but the execution in a large flat dish (see picture) made for difficulty scooping or as I like to do...immerse and let the excess drip off then eat...I know why be so particular right? It is my queso and I will eat it as I like. Well, the dish also gave plenty of surface area for the dip to cool. So while there was little heat in the taste there was not much in the actual dip....tepid almost. We ended up not fighting it and mixed it with salsa and that was tasty. Vanessa was on it and very nice. Gave menu hints and told us her favorites....and not the most expensive items either so she either failed up-sell school or is just plain honest....I assume the latter. The timing of the food coming out was a little off with my wife's very large chicken chimichanga coming out with my fajita fixings....a full five minutes until the actual steak and chicken arrived sizzling hot. This is where we got a little disappointed and thus the three stars. Her chicken in her chimichanga was bland...the whole thing was not seasoned. The tomatillo sauce was good as was the cotija cheese on top. But the insides left her and I short for good flavor. She used the pretty good selection of hot sauces to doctor it up and all was not lost. My fajitas were well seasoned, flavorful, and hot. The flour tortillas were perfectly warmed....not dried out like you sometimes get. The fixings were fresh although the guacamole was really green like abnormally green for guac. The beans were also pretty good and I liked the fact they offered black beans instead of refried if I had wanted. I chose the refried. The sweet tea was good and I would avoid the water....it is obviously not filtered. A good meal but not better than some of the others in the county. Came into town and stopped by for a margarita before the football game at the local high school. Friday night and the restaurant was packed which is a good sign that it is yummy. BUT, THE FOOD, OH MY STARS - one of the best guacamole I've had. Couldn't stop eating the enchiladas Bandera (which means flag) & it's served with red, green and white sauce to resemble the Mexican flag. EVERYTHING IS HOMEMADE and you can tell. The salsa and queso are bland cheap versions. The nachos have barely any meat on them and the bland toppings don't help. The fact you have to pay $2 for extra chips and salsa even though everything feels low quality doesn't sit right with me. The service was ok, nothing outstanding and could definitely be better, however they weren't rude or anything. As for the ambiance its an ok decoration, personally I don't feel the uniqueness I get from some other Mexican restaurants. Was in the mood for some legit Mexican food and found this place not too far from home. Went with little expectations beyond something vaguely authentic and maybe a paloma or two. Served right away and had my paloma with chips and salsa within maybe 2 minutes. The chips were warm and the salsa, while not chunky, had a great flavor that really complimented my cocktail. The paloma had a smoky aftertaste that was unusual but not offensive at all, almost felt like I screwed up like the time in Monterey Mexico when I ordered my Palomas with Don Julio 1942 anejo (expensive mistake lol). For dinner I saw the weekend special was quesabirria and I was pretty much done looking! It did not miss the mark, and definitely qualifies as one of the best Mexican dishes I've had this side of the Mississippi! Perfect blend of shredded beef and pork with a cheese pull that went from here to sunset. 4 on the plate and I barely managed to scarf them all down. No rice or beans on the side, but between it and the chips and salsa I was just the right kind of full. Definitely going back! read more

We came here for the Cinco de Mayo celebration. They had a nice set up in the parking lot with a DJ playing festive music. We hung out there and enjoyed a nice margarita.
