For our meals, we ordered the Salmon à la carte with a Caesar salad and the Wagyu Short Rib dinner. The salad was nicely made with a light and flavorful dressing and good presentation. The salmon was excellent. It was melt in your mouth tender with a beautiful pan sear, which is a perfect combination. The Wagyu Short Rib was a different experience. This was my first time having this "Denver" cut of short rib. I was expecting a very luxurious, rich texture, but instead it was fairly lean and a bit dry. The outside was nicely charred and had a slightly ashen flavor, which was not unpleasant, just unexpected. On its own, the meat was a disappointment. Paired with the risotto and bordelaise, it improved considerably. Still, it is not something I would likely order again. We took our leftovers home and still had room for dessert, so we shared the Banana Bread Pudding. It was delicious, though the texture was more muffin-like than the dense, creamy style we usually prefer. The rum raisin ice cream was a very nice addition. Service: Like the rest of the service at the American Club, it was very good. The entire evening felt relaxed and well paced. Water and drinks were always attended to, and our server was knowledgeable about the menu and helpful when explaining items. My only small issue was the tone of the service. This is a minor criticism in what was otherwise a very good experience. Atmosphere: Like the rest of the hotel, the Wisconsin Room is full of character and charm.
