One half feels historic and the other half feels modern with the artwork, mirrors, and finishes. The lighting is dim but you can still read the menu. It wasn't busy while I was there but quiet enough I couldn't hear other conversations. Initially the host wanted to seat me at the bar but when I declined, gave me a seat near the open kitchen. My waitress was friendly and helped me select the strawberry blonde to go with the strawberry salad. This was smaller than expected and just one or two strawberries. There was a little too much dressing for my taste as I forgot to order it on the side. I did like how the flavors came together. I also had the chocolate torte which was rich and decadent. I left here a little squeamish from what I witnessed. After all, I was seated at a booth table with a full view of the open kitchen. I noticed the food runner repeatedly touching his nose then the plates of food. I watched him reset a table and was touching the silverware by the tines, the part that goes in your mouth, rather than the handles. I'm not sure if the hands had been washed when he added by hand garnish to my dessert. I immediately removed the garnish but should have returned the dish to get it remade. Also, a table of six was seated then left a few minutes later and the glasses and silverware were not replaced while I was there, leaving me to assume they were not replaced for the next guests. I also noticed the restaurant had many cameras, so these hygiene lapses were likely recorded. For an upscale spot, these hygiene issues were disappointing. I truly enjoyed the flavors and the atmosphere, and I would be happy to return in the future if I could be confident that basic hygiene and service protocols were being strictly followed. For one of the most highly talked about restaurants in New Bern, I was hoping for more impressive taste though. My partner and I got the half dozen oyster special, pamlico curry, and the duck pastrami pizza. It came out pretty quick and looked great (they even split our meal without us specifying and without up charge when they confirmed we were sharing), but just tasted decent. For the oysters, I would've preferred their vinaigrette on the side. Also think a classic mignonette is a bit better. The curry takes a creative but underwhelming spin on shrimp and grits. Lastly, the pizza was pretty good but could've used some more duck. To be fair, we may have just not ordered the right foods, but we weren't very impressed by the drinks either. However, based on the service and other great reviews, we will be back to try their other stuff!

I received a mound of spinach that would make Popeye extremely happy. I would have loved some crispy romaine to vary the density of the spinach. However, the house dressing and candied walnuts added a great touch. My husband ordered the Cajun Chicken Pasta which I sampled. I loved the sausage and the complexity of flavors for this dish. My son had the crab cakes which were also greatly portioned. He said that the cakes were very good, but for the premium prices he'd expected more crab and less filler. After numerous trips I still can't put my finger on what exactly is done differently at Blu to outperform so many fantastic restaurants. It's as if they have somehow managed the flavors of a Michelin restaurant with plating that isn't so... boring and sterile. Portion sizes are more than adequate, none of that one taste nonsense here. The service is always fantastic, professional and friendly. The owner is occasionally willing to share recipes with you and has never disappointed me with a recommendation. The cocktails? Just "wow". Perhaps what makes this place so fabulous is that they manage to do so well in so many categories. I'll consider that more in depth next time I make a reservation which may just have to be today. Speaking of, if you don't make a reservation, don't be disappointed when you don't have a seat. This isn't a place you can always walk in and sit down. They don't have many tables and it's obvious that they aren't the type of place to sit more people than they can take care of. Take some time, enjoy a drink and one of the best meals you'll have in the area. You won't regret it!
