I think I just found my new favorite spot for Spicy Beef Noodle Soup. I was impressed with the quality of ingredients and the overall balance of the dish. The meat was the correct type of meat for the dish, beef shank, and every piece was wonderfully tender. The noodles tasted like homemade noodles and had a really nice bite to it. It wasn't too firm or soggy. The broth was flavorful and complex with chili oil for added kick and the added fresh scallions and cilantro really brightened up the dish. The dish by itself was 5/5 stars. I'm surprised I hadn't tried Let's Noodle sooner since it's across the street from one my favorite ramen spots in the area, Ju Ichi. Let's Noodle optimizes a "Hole in the Wall" restaurant, very unassuming but it delivers authentic Asian flavors and delicious noodles. Although I didn't try it, Let's Noodle lets you craft your own noodles with choices of sauce and protein. The interior had very limited seating but a cute bar style table looking out toward the street. The windows where I sat had a nice large ledge which was super convenient to put my bag so it's out of the way and off the ground. The food came out pretty fast despite there only being 3 staff members that I saw - a front desk cashier who doubled as a server to deliver food when ready and 2 kitchen staff. The price was a little above average for what you'd expect for a non-full service restaurant, but it wasn't horrible either considering how close it is to the Green in Morristown. The pork buns I had were tasty but the pork mince inside was minced a bit too finely for my taste. It almost resembled a paste when it should have had a more structured and juicy bite. It was still enjoyable but it wasn't the star of the show. After I finished dinner, I decided to also try the Dan Dan Noodles to go. The takeout container nicely separated the noodles from the sauce so the noodles wouldn't get soggy when I got home. The sauce was flavorful and the noodles had great texture but once again, the pork was so finely minced, like the pork buns, that it really detracted from the quality of what was otherwise a fantastic dish. Overall, my experience was great. I love authentic hole in the wall spots and I am excited to go back to try the other dishes I missed! read more

We ordered the Spicy Beef Noodle Soup and Pickled Slaw to share as part of a food crawl. The Spicy Beef Noodle Soup was extremely flavorful, and the beef was cooked perfectly. I LOVE fresh noodles and these noodles had a nice, eggy texture with a good bite. Even though the food arrived fast, it tasted like the noodles were house-made. They weren't mushy, despite being in soup and probably being prepared in advance. The pickled slaw was also delicious but just a little bit salty for my preference. I really liked how they were doused in a bit of tasty chili oil though. We ended up liking this stop so much we ordered the Lets Wonton Bowl and Dan Dan Noodles for dinner, and both were excellent. the Lets Wonton Bowl may have been my favorite item, as the Dan Dan Noodles were a bit soupy for me. I think this place is a solid 4.3. I got one of their spring specials, the Let's Wonton Bowl, and I really enjoyed it! I honestly think the best part is how much food I got for $12 -- 12 pork wontons, plus a pretty hefty amount of vegetables! The wontons were on the firmer side, which I actually like because I hate when they fall apart when I'm trying to eat them, but I know not everyone prefers that. The sauce was just slightly spicy, which I found more than manageable and I liked, but I know many prefer to leave with their noses running :). Plus, I got a free mango oolong iced tea since I spent $12 on a Tuesday! What a pleasant surprise. The tea was refreshing and not nearly as sweet as I thought it would be. The only reasons this wasn't five stars for me is because (1) I had asked for scallions in my bowl and didn't get any, and (2) because the wontons weren't super flavorful, my dish relied heavily on the sauce. I ended up in here by accident. I was trying to go somewhere else, but they were closed on a Sunday, so I decided to wander in here and try a meal. I've seen pictures of the dishes from here and the noodles all look too oily for my liking. I tired the non-noodle option, which is their scallion pancake wrap - inside had chicken. Very oily. I mean, it is a fried scallion pancake, but it had a heavy oil taste/feel to it. Flavor wise it was good and enjoyable, but it did not make my stomach very happy later. The OG sauce, as they call it, on this was good. It's "spicy", but barely. The inside of this place feels a bit empty and unfinished. I really do not see myself coming back here. read more

Wow, this place is so good and quick. And also very inexpensive. The interior is pretty generic and casual, but the noodles are delicious. We ordered our noodles to go. I got the cold sesame noodles and my date got the scallion noodles. Both did not disappoint. They give a sizable portion, we couldn't finish in one sitting. Food: I have been trying to find Dan Dan noodles for a long time, and I found a place that does it pretty well. A large bowl with some great minced pork that went a long way to fill me. A lot of oil though so make use of their bibs / aprons. Aesthetic: clean interior with seating in the front and back and small order counter that's sharp looking. Service: the two employees I met today we're not only nice and funny, but the one gentleman pulled out a tide pen for a young girl who got oil on here (despite wearing an apron). We ordered Dan Dan noodles, cold sesame noodles, beef noodle soup, Szechuan buns, scallion pancakes, and the Szechuan pickled slaw. Our critiques: We did not really enjoy the sauce of the pickled slaw and the minced pork inside the buns were a bit too crumbly. Scallion pancake $5: 4/5 super crispy and flaky, came with 4 slices. It was a bit expensive for the portion in my opinion. Cold sesame noodles $12: 4/5 my favorite dish we got! The noodles were a bit too chewy for my liking but I enjoyed the thick nutty sauce that they were coated in! Beef noodle soup $15: 4/5 the beef was super tender and the noodles were yummy! The flavor of the soup was the perfect saltiness and it had a little kick to it. Dan Dan noodles $15: 3.5/5 I didn't really taste a lot of peanut in it, but they did not skimp out on the minced pork! Finally got to try this hot spot. I was really happy with the noodles. they were cooked nicely and the meats were flavored. they even have bibs to protect your clothing. here are the dishes we tried: - scallion pancakes, crispy and the dipping sauce helped bring out flavor. Noodles room temp, dumplings I added ice cold and cucumbers HOT??? Inedible. Make your own bowl: soft overcooked cellophane noodles with extremely mushy vegetables and room temp 5 spice beef. So many decisions, like so many other fast-casual places you pick a base like noodles rice or greens, a protein like beef or pork, a sauce either regular or spicy, exactly three mix-in vegetables and finally toppings like chili oil or scallions.  The price varies with the protein, $13 to $15. If you dine in they put your food in a nice ceramic bowl and bring it out to your table. Free WiFi. I tried standard thick noodles with minced pork and sesame sauce plus some veg mix-ins. Was very quiet when I visited, no problem getting a table, the friendly staff brought my food quickly. Heat level of that sesame sauce was between mild and medium, very good. Noodles were thick and chewy. My only complaint was that it was thermally just warm-hot, I expected a much higher temperature for food straight from the kitchen. Vegetarian rating: 3 stars; 1 for the shredded tofu protein option, 1 for the sauces since all are veg and 1 for the veggie dumping & the pickled slaw sides For everyone who remembers Tito, the dine-in tables are now normal height, the surfboard counters are gone, the funky ceiling panels remain and the floor is *finally* clean lol. read more

A new and different place to try - fast casual szechuan food! I tried the let's noodle signature bowl, dan dan noodles, and the let's wonton bowl. While the noodles might be what they're known for, I enjoyed the wontons way more. The signature noodles were a little too sweet for me and the dan dan noodles didn't have enough sesame and could have been sweeter. The wontons in chili oil were very good and on par with other szechuan restaurants I've been to. I would recommend this place since it's unique for the area. read more

Just an update - the owner reached out to me (not via yelp) and assured me the issue with the brownie was a one-off mistake. They also offered to make things right with a refund and a gift card, so I did try the same dish again. Chicken was better this time, and I solved my sauce issue myself - there's an option to get that on the side and after trying maybe a half or a bit more of the sauce rather than the whole thing the sweetness was much less overpowering. Let's Noodle is great for what it is - a noodle heavy menu with some other options in a setting that is fine for one or two people to enjoy a quick bowl of noodles, but definitely has the air of a takeout place. The folks behind the counter were friendly and fast. I didn't see a lot of takeout action early in a Friday afternoon, and there was just one other party of two in the shop. IMO there are only two good tables (the ones up front) because the other tables are in the back, away from natural light and right next to the gender neutral bathroom. I was happy to see Dan Dan noodles on the menu as it's been a while since I've had them. Despite the warning that they were spicy (as they least should be), the heat was pretty tame. The noodles looked hand cut and were perfectly chewy. The rest of the menu looks good enough for me to go again and try something different. Maybe for take out. The location is pretty good, but there have been lots of places on this corner. Parking is a bit of a challenge, but there ought to be enough foot traffic to keep it going. I'm rooting for you, LN! Welcome to Morristown, Let's Noodle! My wife and I visited on opening day (1/3/2023) and were warmly greeted by the owner and her father. Her father turned out to be head chef of Florham Park's China Chalet, who you may know as the James Beard semifinalist Wei Lu. We ordered 4 things from the menu: Dan Dan Noodles, Szechuan Pork Buns, Shrimp Toast, and Szechuan Pickled Slaw. Dan Dan Noodles ($15): The plate came out on a plastic takeout plate, definitely with enough for 2 people. The Szechuan broth was salty, a bit sour, and ever so slightly numbing, perfect for those new to Szechuan cuisine. Crispy bits of ground pork and spinach decorated the dish and added texture to the plate. Although the noodles were not handmade, everything else in the plate was, and the noodles were still yummy and delicate. Szechuan Pork Buns ($5): These buns came out perfect looking, and had a bit of seasoned roast pork in the middle. Slight sweetness on the bun and not bad value for $5. Shrimp Toast ($5): Although these 2 triangles don't look like much, hear me out - these were awesome. The way these were fried up we're perfect and had me wishing for more. I haven't had legit shrimp toast like this in a while, and I'm glad it was crispy but not dry and loaded with minced shrimp. Szechuan Pickled Slaw ($5): This iconic cold slaw is homemade and came with a container full of cabbage, red pepper, carrot, and celery. It was a tiny bit salty, but the pickle on it would make a good introduction to the famous appetizer for anyone. In total, we paid $33 for 2 people and felt like it was good value. Even though some of the dishes might seem a bit pricey for the quantity, we spoke with the owner and she said they definitely have plans to feel out the town and adjust the menu accordingly (even adding seasonal dishes). With the effort and homemade feel, Let's Noodle gets a 5/5 for me, and I do plan to be back to see what they're like after they settle down. read more

Cute new noodle shop in downtown Morristown. It used to be a Mexican restaurant. I stopped by one weekend and the owner appeared to be in the shop supervising the new staff which was nice to see. The food quality was good. The atmosphere was nice and standard. You can get take out or sit inside as there are a few tables spaced out nicely throughout. The wait was short. We were so excited to try this place out. We stopped in for take out and to wait for it. There were several people waiting. One woman was extremely frustrated for the wait and we almost didn't order. 25-30 minutes later, we had no food, saw what just looked like chaos trying to figure out what order was what and the staff was fighting and yelling through to the kitchen right at the counter. We were told our meal would be ready soon after we were asked the order name twice. More staff arguing and then realized our order was never sent to the kitchen. We got our money refunded after being there for 35 minutes. I cannot speak to the food, but it is extremely unorganized. Customers waiting extreme lengths and just a negative vibe. read more

I've come in a few times and have enjoyed everything, but my favorite is the Dan Dan and the cold sesame noodle. Their food is a nice authentic change from some basic pub / pizza places in town. The staff was friendly and helpful. They have beautiful windows to sit and look out. Plus food comes very quickly! Love that their menu rotates with the season and stays fresh ! Loved my dan dan noodle bowl! So much flavor, good portion size and value. Dunno what other reviews were talking about - staff were great, service was quick, and dining in was a nice option.
