Love this place! I came to Seattle to visit a girlfriend, she always takes me to hip and cool places. This place is defiantly one of those, we came around 9:30 pm on a Sunday night, dark, cozy, bar/cafe feel. The place is not big but plenty of seating. We grabbed a comfy couch near the front window. Soon after was greeted by a nice server. We ordered some cocktails, wow really good! I ordered the grapefruit and guava drink forgot what it was called but didn't forget how yummy it was and a Red roll sushi, another shocker did not expect good sushi at a place like this. My boyfriend and I were visiting from out of town, saw this on yelp based on the neighborhood we wanted to check out and decided to give this place a try. We got there right before happy hour and it wasn't that busy. I forget what drinks we got, but they were both incredible and had fresh picked flowers in them (im a sucker for presentation). I would hands down say this was the best drink we had in Seattle and we went to many places. We also Joe Hanoos roll, per the bartenders recommendation and it was incredible as well. So the first and only time I went to this bar, I was invited out by my friends for New Years Eve in 2017. I got a fancy gin cocktail. It was delicious! The whole place was super cute and cozy. We sat in the booth by the window. 15 minutes after leaving this bar, I met up with friends at another bar in Capitol Hill where I worked. I didn't even get to taste my drink there, because I blacked out. I didn't come to until 6am. It took me another several days to realize I was drugged at Liberty. Thankfully my friends were with me when I lost conciousness, because I could be dead right now or worse. Since then, I lost my job because it was too overwhelming to work in the neighborhood where someone poisoned my drink. Everytime a customer would come in I'd wonder if they were the one who did it, and the anxiety resulted in the worst panic attack of my life that I had while at work! Super fun! I still dont feel safe drinking out or leaving my drinks where other ppl might have access to it, even at work or family get togethers where I should be safe. I spent months recovering physically from where my shoulder met the cement floor when I fell once the roofie took affect. The failure of your staff to prevent tampering with their drinks has resulted in upending my safety and my independence. I used to walk Seattle like I owned this city, and now I can never feel safe here again. And I know that its not 100% the fault of the staff, and that this happens everywhere in Cap Hill, but I can only speak on my ONE experience here. I had never been here before. I was here less than an 45 mins. I got served one drink and I ended up roofied. Service staff in this city need to do better protecting drinks from tampering, because there's no accountability for it, and its probably never going to stop, but at least it can NOT happen to SOME people if preventing tampering becomes a serious priority. Don't leave or make drinks where customers can easily tamper with them! Thats not asking a lot. Obviously, I wont be back! Anytime someone so much as mentions this place it makes me sick. Patience is a virtue at Liberty. The drink menu is HUGE and the drinks are absolutely fabulous - so yes, definitely come here. I came with a group of folks for a holiday celebration. There was about 15 of us at times, and we took over three of the couches in the front area. It was kinda busy, and I know it's hard to keep track of big parties - but only 2 bartenders were trying to make drinks and serve the whole damn bar. So it wasn't surprising when 30 minutes after I arrived I still hadn't been asked what I wanted to drink. I went up to the bar and was told to go sit back down and tell the other bartender when he came around (it felt very defeating). Others who arrived after me were served drinks before me, which was just weird. But literally, I'd come back here because I have compassion for people who try to do it all. You'd think they'd have the profits to hire another hand to help on busy holiday nights - but it was a Wednesday so it's probably fairly dead most Wednesdays. I dunno. I'll have to try it out again another night! I think their drink-crafting skills are top notch - and that's why the 4 stars despite the service. Liberty make libations that make you swoon! I've always been a fan of this place. Great sushi, happy hour, cuteness of a neighborhood bar. Amazing spirits! One of the two biggest collections in the west coast to be exact! They've got it all. Cocktails here are swoon worthy as much as their amazing spirit collections. And if you are lucky, you just might get to struck a conversation with Andrew at the bar. He's a man that knows and love his spirits and cocktails. He founded this little space way back in 06! The passion , the love and the collection is all there! I often sit at the bar and tell them my spirit of the choice for that moment. And wait for them to make something magical with it. Holy Shit! Liberty fuckin rocks! This might be my new favorite bar. Yes, I admit it, I'm an alcoholic, just like everyone else in the world, but I'm not afraid to say it! I love whiskey, it's my jam. Bourbon, ryes, scotch, whatever, I'll drink it, just no Crown Royal! (Crown was cool back in college. Now I look back and think how much of a loser I was thinking I was the "man" drinking that garbage). Liberty has a huge variety of whiskeys ranging from American Bourbons, to scotch, to even whiskeys from India! This is definitely your go to whiskey bar, since they have a lot of rare whiskeys. I'm a huge fan of Japanese Whiskeys. Something about their nose and taste really has me hooked. I have many Japanese bottles at home, so I wanted to try some that I've never had. The bartender informed me that I should have a flight of Japanese whiskeys so I could try the ones that I was curious about. After a quick chat, Brandon (awesome & nice) brought out 4 bottles and gave an in depth, informative description of each. I could tell he really knew his shit. The man stood by our table for over 5 minutes explaining all of the whiskeys. He definitely chose ones that were unique and even rare. My flight of 4 came out to be $35, which is a good deal considering bottles ranged from $75 to about $200. Also, you can have a flight of any type of particular whiskey or liquor that interests you. I'm sure it will be a reasonable price. In addition, they serve sushi, which is weird, but surprisingly fresh and good! Happy Hour is from 4-7 everyday. Even though I am a selfish bastard and don't want this place to get overhyped, I have been told, "sharing is caring." Wow. I've always had a pleasant experience at Liberty - the bartenders are skilled at their trade, the cocktails are creative and tasty, and the atmosphere is casual and inviting - but after having an event here last night, I can firmly say that I will never return there again. I reserved the back room for a private going-away party. It's a huge room with a projector, an audio system that allows you to plug in your own iPod, plenty of couches - basically it's an awesome gathering space and the fact that there's no reservation fee or drinks minimum made it all the better. Throughout the night, we had great service, with several servers constantly in and out of the room, making sure all orders were taken promptly and no one wanted for anything. There were a good twenty of us drinking, laughing and having a good time - and spending several hundreds of dollars on cocktails. Everything was great. Until about a half hour to closing, when the owner (I presume) brought a party of three strangers into the private room and seated them. Confused, I said "um, this is my room..." (probably not the best choice of words, in retrospect, but I'd been imbibing for a few hours at that point) and the owner looked at me and said "no, this is MY room". The strangers stayed. We promptly packed it in and left. While closing my tab, I mentioned it to the bartender, who had been doing such an amazing job of taking care of our party previously, and he said, "well, it's ten minutes to closing". I just looked at him and shrugged. I wasn't aware that my reservation expired near the end of the night. It's such a shame, because it's an amazing gathering space, no fees, the service was so wonderful yet the owner managed to ruin our experience completely. Instead of asking us if we were enjoying ourselves, or thanking us for our business (twenty people drinking for four hours - $$$) or even asking if we wouldn't mind sharing the room with strangers since the night was winding down, he completely disrespected our reservation and was horrifically rude about it. Two things stand out to me when thinking about Liberty: the crazy selection of spirits (especially centered around whiskey and mescal), and the staff. I'm tempted to come here alone more just so I can chat up the bartenders and waiters[resses]. Totally cool people. See, alcoholism is not the only reason to drink alone!!! Being a fan of smoky spirits, Liberty definitely satisfies my cravings with one of the largest selections of mescal. One full page of their menu is dedicated to this fine Oaxacan spirit, which is considerably larger than other places around Seattle (Canon being the only other place that rivals). Their scotch/whiskey selection is wide, and you'll be able to enjoy value brands like Wild Turkey and Jameson, or finer brands like Laphroaig and Macallan. Their cocktail selections are pretty good here, but I haven't tried many because their pure spirit selection is more than sufficient for me. And what other place can you think of that offers whiskeys from India? I haven't tried any of their sushi selection yet (I think sushi is the only food they offer) but I always see people ordering it, so is that enough of an anecdote to say their sushi is good? You tell me. So come to Liberty for your drinking needs, as their inventory of spirits will almost certainly lead to a good drinking experience for you and your friends. read more

I came here with a friend on Valentine's dinner. We didn't plan anything extravagant so we thought, why not just grab sushi. Nonetheless, I didn't want to spend it at an ordinary sushi belt, so I browsed through my bookmarked places on Yelp and came to this spot. The moment you walk in, there are a few sofas for people to sit; and behind that is the bar with the usual high seated booths. We didn't have reservations so we were asked if we are willing to sit at "the back." We were pretty hungry so we agreed and followed our waitress. In this back room, one will find more couches, and a projector on the ceiling. I honestly love the idea of having couches to sit on while eating and socializing, because it's just so comfortable! The menu of this place is also different; one might find it like a manual, but I love the idea of having a page for the people who worked at the bar or are waitressing. My friend ordered The Point of No Return which involves a Rosemary being lit. Since we weren't seated at the bar, his Rosemary wasn't lit on fire. I didn't get to taste his drink, but I ordered The Eye of Fatima. It tasted like those mini yogurt drinks you get from the sushi belts (not the ones with the marble--the small yellow one with a red tin foil cap)--but with alcohol! Or maybe there's just something wrong with my tastebuds :P We started of with three rolls: Jamjuree Roll, Liberty Roll, and Sonic Boom Scallop Roll. I don't know if my friend realized the Jamjuree Roll was vegetarian, but I didn't like it. I liked the Sonic Boom Scallop Roll because you get that soft scallop and crunchy cucumber at the same time. The Liberty Roll (which I swear is what it's called, but currently not finding it online) was good, it was filled with crab and topped with mint and the small fish eggs. I'm not a fan of mint in my food (unless it's used for taste) but I refuse to eat the leaves, you bet I picked out all the mint leaves off of my roll :P When we were close to finishing our drinks, we saw the waiter bringing in a super delicious looking roll to the table next to us. So we ordered that, Joe's Hanoo Roll! This was definitely the best!!! It was just soft and mushy, but the flavor... Omg.. Full of it!! It took awhile for our drinks and food to get there! One of my favorites in Seattle. The bar features rotating art, dark leather seating, low lighting and a wall of spirits. It's a smaller space so finding a seat can be difficult especially when you are in groups of 3 or more. Now on to the booze......if you are a Whiskey Sour fan you MUST try one here. The perfectly whipped egg whites followed by the chilled mix of the bourbon, lemon & simple syrup is heaven in a cocktail glass. They also have a lofty selection of whiskeys and bourbons of which the bartenders will allow you to sample. On two separate occasions the owner brought bottles to our table to try based on our preferences. The attention to their customers needs is the main reason I continue to revisit this place. We stumbled upon this watering hole on a work trip to Seattle and can I just say, what a find! Inside they have comfy seats, free wifi and some really great booze- topped off with great bartenders making some killer drinks! They also serve sushi here but we didn't get a chance to try. The three of us each indulged in a spirit flight of our choosing (4 spirits per flight) and they were: Japanese whiskey, rum and gin. Add in some pisco sours, their famous super sonic gin and tonics and a few other drinks dotted in and we were more than a little giggly by the time we left! As we were visiting midweek, it wasn't busy at all, so we were lucky enough to have not just one but two bartenders entertain and keep us company! If you get a chance to visit, be sure to leave behind a message or scribble in their menu- these menus are repurposed moleskines filled with their extensive list of available cocktails, spirits, beers and nibbles AND little leave behind messages and illustrations their customers have drawn up. Sushi at a bar? Hmmmm... yes it sounds a little suspect. That being said, what I tried was actually pretty good. I was there with a larger group of friends so I am not exactly sure what I tried. I believe it was a roll with yellowtail in it. Suprisingly decent. Friendly people bellying up at the bar made for some lively conversation for the evening. I don't normally due raw fish but I was on brace and listen to my waitress! To drink, I got a drink in the menu but they switched it up with a little mezcal as that is my favorite! I was skeptical, as it seemed like your standard hipster bar with ~exotic~ bar food and cocktails. Inside it looked like an attempt at being grungey, but ultimately clean. I'll admit, I was won over by cheap omakase. The $20 omakase and a specialty roll was perfect for two of us. Their cocktails were surprisingly good, and strong enough that I had to stop after one because it was only 1 pm. I would be tempted to hang out here again for the flights and if they had happy hour. Awesome place to chill and drink some great cocktails. Bartenders are all friendly and know what they're doing with their drinks. Tried a home-made-from-scratch habanero drink here that literally kicked my butt and set my mouth on fire. And they make a great Old Fashioned. Which is a huge plus, especially here in Seattle. I got to try the sushi only once, but it was SO yummy. The chef is from Indonesia, and after learning that I, too, am a fellow countryman, he made me an Indonesian-tasting sushi, with Kecap Manis (sweet soy sauce) and peanut sauce. I'm not sure if this is on the menu, I forgot to ask, but it really should be. The salmon on the sushi was seared, which gives it a little burn-y flavor, so it tasted so much like Indonesian satay (kabobs/skewers) with the sauces. Atmosphere is chill: small and intimate, dim lighting. Big mirrors is always a good thing to have, cause you can check yourself at all times without having to go to the bathroom. My only complain about this place is...the location. I'm just never in that area at night. I know it's not even that far from "The Hill" but it just seems out of the way cause you can't really bar-hop anywhere else (not really a big fan of any of the other bars around there). Being a current member of the service industry, I immediately felt a genuine desire from our host and servers to be nothing short of helpful and ready to answer any question my party of 4 had. My drink was thoughtfully crafted, and every part of our sushi was fresh and clear. I sincerely wish I had more time in Seattle to really go to town on the menu as a whole. What I enjoyed the most was the energy of the employees. They were very welcoming, inviting, cool, and after some friendly banter, one was kind enough to replace an entire roll after we had dropped just a single piece. It felt like they truly enjoyed working there, a clear sign that they are appreciated by both their employer, their neighborhood, and the people they serve. A friend took me here because I inquired about a place with good cocktails. Their drinks menu is literally a book. It's been well-loved by all the trendy Capitol Hill folks that love drinks and sushi (you wouldn't think a name like "Liberty" sells sushi, right?). What really impressed me was that despite the fact Liberty was packed, when we asked about whiskey, the server grabbed the bottles, sat down on the couch (yes, there are copious couches) beside us and explained each option and gave us a nice tasting. This is a bar that specializes in whiskeys and other hard alcohol, with the focus of food on sushi rolls. It had a nice vibe, with lots of animated conversation, a friendly staff, a pleasant decor - sort of rugged modern with a hint of the mountain states - in short, a very pleasant place to have a drink. We had five drinks between us - the straight-up Ron Zacapa 23 was good, the martini only so-so, but the craft drinks were interesting - The Democrat and the Little Houdini were both good, the Hop Charlotte OK. But the list of cocktails and spirits at liberty goes on for pages ... The sushi was a set of home-grown northwest inspired rolls, and a few classic nigiri and sashimi. The saba nigiri was good, the maguro nigiri we ordered was misordered as hamachi nigiri by the server, but was also good. The Wax On roll (their take on a California roll using snow crab) was bland and tasted mostly of the mayo - that was a mistake, I would not order that roll again. The futomaki was excellent. The Fishface roll (hamachi, shrimp, jalapeño, mango and cabbage) was good if non-traditional. The Emerald City roll was delicious with occasionally surprising bursts of lemon in one, mandarin orange in the next (tuna and avocado plus something spicy sweet and crunchy - roasted coconut?). The Liberty roll was tasty but a bit odd - it had a "Japanese mint relative" on the outside which tasted like a fragrant if somewhat bitter basil - we liked it, but it wasn't for everyone. This is a place I'd go back to again. You need to read carefully or inquire about the content of the various rolls to make sure that you're getting something you'll want to eat, but the drinks are good, and the atmosphere is wonderful. read more

Great place for a unique drink & some delicious sushi. Extremely friendly/knowledgeable staff. The couches are great for relaxing with friends. Must try the point of no return. Absolutely amazing drink and extremely unique. Be sure to watch them make it! I can spend hours here with friends sipping drinks, having some sushi and he music is great. read more
