The daikon adds some acidity and the avocado provides the needed smoothness and creaminess to the roll. The umami is insane with this roll, this is the work of a skilled sushi chef. For us, Joju, a small chain from Elmhurst, Queens that set the standard for fusion banh mi sandwiches in the 2010's, is the closest benchmark to Mr. Banh Mi. The sandwiches from Mr. Banh Mi are better. The bread is baked in-house, and is soft and airy with a slightly crisp crust. For the bulgogi beef sandwich, Mr. Banh Mi uses beef pieces instead of a salty greasy mince used by Joju. Kudos for the "Rocket Rolls", too. Although these are "just" appetizers, every element in these fried shrimp rolls, including the jumbo shrimp, thin and crisp shell, dipping sauce, seem well-considered and somehow combine to make these rolls a cut above the competition.
