Birria Mac n Cheese. 12/10. It's not your traditional creamy velveeta/kraft ooey-gooey mushy type mac, so i can see how it wouldn't be up someone's alley. But if you like "al dente," and a more authentic cheese-taste, you'll probably be obsessed just like i currently am. The birria meat alone was fantastic and very bold in flavor. The staff were incredibly friendly and the restaurant itself looked cleaner than a hospital. It reminded me of the front lobby of a car dealership and I questioned whether they were in business because of just how clean it looked. The second i walked through door i was greeted with a warm introduction, and great hospitality. Would definitely recommend a visit to Mad Mac!

Ok... it's super simple and it's pretty darn tasty! Noodles cooked just right (not soggy at all) hot & creamy cheese... what else do you need with mac n cheese?! Well, in case you want more they have crispy jalepenos, bread crumbs and hotsauces etc. Gluten free noodle option too! For what it is great! I'm a lover of veggies & fresh stuff and don't really find that here ..but if you want hot, melty cheese & stick to your ribs pasta.. this is the place!

Exactly what comfort food should be! Creamy cheesy pasta. I got the Calavera Mac, which is their mac and cheese with chicken thighs (much better than chicken breast!), and pico de gallo. Very fresh and only a hint of spiciness to help cut some of that richness. Simple menu and the listed prices include sales tax. I love nice round amounts when it comes to the bill. Today they had listed two additional specials. And their drink menu looks perfect to try out on a warmer day. Service was friendly and my order came out quick. I got it to go, but will consider eating there the next time I go. And yes, there will be a next time. Love the location and what they've done to the space.The Boise Spectrum needs more places like this.

I think the base mac recipe is pretty good. But odd toppings in certain ways. My friend and I got 2 different choices so that we could try out the different options. What you get is the base mac with the ordered topping plopped on top. Maybe to some people this is fantastic, a mix it yourself kind of deal! To me this was kind of lazy. I want ooy gooy mac with dynamic flavors throughout and now that I know what the toppings are really all about I might just get the mac solo. Not worth what I paid in my opinion.

We came here for lunch today and I thought mad mac was ok. We order the taco mac and it was good not great. The taco mac has mac and cheese topped with carne asada and chimichurri sauce. The mac and cheese is ok but to soupy for my taste. The carne and chimichurri sauce was good but reminded me of Hamburger Helper. Overall, it was good but not great mac and cheese but I personally like a more creamy but firm mac and cheese.

Got pulled pork Mac n Cheese. It was fit to eat. Was impressed with the serving size! I don't think I'd drive across town to get it but was satisfied. Someone else reviewed that the Mac was kinda bland, I have to agree: I expected more flavor... *Lost a star by not being able to provide a physical receipt*

Meh. I had been meaning to try this place for awhile and found myself next to it right after an article about mac and cheese came out in the Statesman. Mad Mac made the cut on their list, so I pulled the trigger. I got one of the specials: Taco Mac -- it had carne and salsa on top. For me, it's just not my style of mac and cheese. I like a baked, firmer mac. This mac was a little thinner and looser than I like. The carne was fine -- average taste, nothing out of this world. It was like mall carne asada. Overall, there was nothing wrong with this place, it just didn't do much for me. I feel like there were some missed opportunities: where was the Chili Mac? The Potato Mac? Their sauce is like a thin au gratin so potatoes would have gone great. They could also be super avant-garde fusion -- where's the Curry Mac? Thai Mac? They could def. play with it and take it up a notch.

Looking through the photos, the burgur and spinach artichoke spoke to me. But what could i do? Get both? Yes. They put both toppings on for me. No regrets. P.s. i couldnt finish it all in one sitting.(Good thing)

While the idea is a good one, who doesn't love Mac n cheese? The execution from my perspective failed. The Mac isn't as tasty as what I would get from a box and the toppings while plentiful, far out weighed the Mac in proportion and taste. Toppings =delicious, Mac = so so. Location is central and if you're out to see a movie it's in a good spot. The Italian soda inspired drinks do sound interesting and I would be willing to give them a try next time I'm at the theater. The seating while spacious is exceptionally cold this time of year. I look forward to seeing if they improve and can maintain the current level of excitement in a few months. I was also disappointed with the poor sustainability of the beverage cups and Chinese food take away containers. While convenient, they seem extremely wasteful. I didn't realize places still served in styrofoam, it makes me sad for our planet.

Ordered the Bacon Cheeseburger Mac and Cheese. 16.50. Price was a bit steep but the portion size is healthy. If you are someone who likes your food with a little extra salt, try your Mac before you walk away and use the provided salt shaker. I wish I had. read more

Finally made it to Mad Mac...can't wait to return to try another flavor! Mac & Cheese is my favorite food so I have been so stoked to try what they're famous for. I came by at the end of the day for some dinner to-go. Got the Southern Comfort for me and Bacon Cheeseburger for my hubby. So delish - and you get a great portion for your money. I only wish they would have given me more corn on mine! They have a great variety of mac & cheeses as well as a huge list of soda creations! I tried a "mad diet coke" which is just diet coke with coconut and fresh lime. It was tasty! I came 20 minutes before closing and was thankful they were still happy to send me with some food and a cheerful demeanor. I will be back soon!! read more

I just finished the Hot Dog Mac n Cheese. I am a fan! The sausage was a great compliment to the cheesey sauce. I will be back to try the other flavors for sure! As far as Mac n Cheese goes this was among the best i've had, which says a lot as i get it everywhere i go. Keep it up Mad Mac! read more

I didn't even know Mad Mac existed until I was also a food (fresh squeezed lemonade) vendor at the Eagle Rodeo earlier this year. They bought our lemonade and we bought their mac and cheese. Its just what vendors should do, in my opinion. We were both very satisfied. Since that time, I've been to their brick and mortar location at least twice and stopped when their truck was at the old Kmart parking lot in Nampa. Every time we've had their food, we have loved it. For that reason, I personally believe the negative reviews I've read here on Yelp are fake. Just my opinion. At this time more than ever before, small businesses need our support. If you get the chance to try them, do it. Don't believe the naysayers that I firmly believe have a hidden agenda. read more

Meh... for a place that only does Mac n Cheese, I was super excited. Unfortunately it fell short in a big way! I have tried this place more than once with the same experience repeated. It tastes almost grainy like they are using processed or maybe shredded cheese...it also was oddly runny instead of creamy. The noodles were cooked perfectly, but as we all know the cheese is supposed to steal the show... and it certainly did not! Bummer! read more

Eh! I went there today for the first time with high expectations. I found the flavor to be good to great, but there was a powdery texture that reminded me of boxed Mac. I am nothing short of obsessed with their mac and cheese. I'm a simple kind of girl, I just get some hamburger meat thrown in.. Idk what they put in the meat, but I'm addicted lol. I like the selection of drinks! Giant cookies! OK so now for the real review. They have winter hours (this was back in March). I DIDN'T EVEN KNOW TIL I GOT TO THE DOOR AND IT WAS LITERALLY 5 TIL CLOSE. I sped through town to get there at a decent time. I walk in, I said. Oh. My. Gosh. Do yall have any left overs I can buy?? If it's too late, I am so out of here! I figured I'd just see if they had any laying out, but again, it's basically closed so I wouldn't have even been the slightest upset. They were so super nice to me and asked me exactly which bowl I wanted and they whipped it up for me. I literally almost cried, I was so thankful. read more

Don't know how it tastes personally because I never made it past the price on their food truck. $10.50 for a cup of mac and cheese topped with various toppings was to much for me but I understand they have to make $$$ so hade to raise the cost and pass it along. Fellow co-workers seemed to like it but I'm all about getting a bit more than that for my dollars spent. read more

The server was nice however the food doesn't make up for the hospitality. I can't understand how so many people can say they like the food?! It's really bland!!!! We couldn't even finish our food. Just tye regular mac and cheese was just that, regular with no flavor. The cheeseburger mac was just ground beef and pieses of bacon. Again no flavor! What a waste! read more

So the wife and I decided to go here one Saturday as she has heard about the place. Overall it wasn't a bad experience. When I say that I mean that it was neither bad nor amazing. The atmosphere and cleanliness of the restaurant was well above far, but when it came time for the Mac I was sorely disappointed. I got the Calavera Mac which consisted of a jalapeño cheese, pico and fajita mix and felt that it was actually quite bland. The wife had the Skully's Pulled Pork Mac and I will say that was a slightly better experience. The pork ended up giving more flavor to the dish and I wished I had gotten here instead. In general it was a horrible time, but not sure if I would go back. read more

It's alright, I thought it would be super good considering that's all they are serving but I was wrong. It tasted like they used shredded cheese prepackaged and if anyone that knows how to make it from scratch knows it will give it a grainy weird taste vs shredding it from blocks yourself. It also tasted like they were trying to get a creamy flavor and just simply added water to it vs using milk. read more

This was our very first time in Boise! We were only there for a short time. I found this place on yelp and decided to give it try for dinner. Customer device was spot on. Nice young lady who helped us was so welcoming and friendly. Place was very clean. As for the food, it was just okay. We could tase flour in the mac which it made it hard to eat. The Mac and cheese itself was also very bland. I got the Philly cheesesteak Mac. The steak tasted rubbery. Again, hard to eat. The 3 stars I gave was just for customer service. Unfortunately, we wouldn't eat here again. However, A+ for service! read more

The Mac and cheese was busted and runny and my chicken was grey. The lady at the front was also not very friendly, but that's besides the point. The chicken was literally boiled with no seasoning, it looked like brains at the top of my Mac. read more

overpriced, subpar mac & cheese. Skully's sweet pork Mac is blasé, The only thing in the dish that has flavor is the red onions, without them it would be hard to choke it down! Employees behind the counter call your name, set food down and walk away without even looking at you. Wish I could have my 11 bucks back! read more

My macaroni tasted like franks hot sauce soup, it looked like they poured half the bottle of hot sauce on top. Boyfriend thought that his macaroni was good. read more

Me and my boyfriend went there and let's start off when we walk in there's barely any decorations. It's a mac & cheese place and they only got like 10 items of mac & cheese and most of them do not sound appealing. When me and my boyfriend received our mac & cheese they both look so disgusting and so awful we did not want to eat it but we were very both hungry so we took both one bite out of our mac & cheese and they were both disgusting and way overpriced. Great place to stop in before a movie or if you're just in the mood for some crazy good comfort food. I had the Southern Comfort complete with creamy, melty cheese, yellow corn, and crisp bacon. I was surprised at how many toppings were included. I had a bacon/corn combo in every bite! They have some interesting soda fountain creations, as well. read more

Very good find thanks to other reviews. We tried 4 different kinds and all were very good! It's a fairly limited menu so we got a fair idea what's offered. We did stay away from the specialty drinks but the portion sizes for the Mac were good and most of us were filled about halfway through. The only reason for the 4 stars was the wait to get the food ordered and the minimal effort at customer service. That said, definitely a place for repeat business. read more

Mac and cheese was tasty! Portion was large-easily shared with my two young but ravenous kids. Space was clean and service very friendly. Nice outdoor seating options on a nice day. Just wish there were size options! My little kids love Mac and cheese but could never finish a bowl there. This means we need to share, thus I couldn't order the toppings that were exciting to me. We ended up topping with hot dogs which were actually tasty-crisped up a bit and flavorful. read more

If you haven't been to Edwards cinemas off of Overland, now you have a reason. Mad Mac is a cool hangout that offers comfort food with a twist. I ordered a couple different Mac dishes and I can tell you they were all pretty good. The one that stood out to me was the southern comfort mac. This one had a great blend of cheeses that was nice and creamy. Loved the corn mixed in with the crispy bacon. The bacon cheeseburger mac was good also but the saltiness of the bacon overwhelm me and kind of took the flavors away. The calavera was ok, not big on the pico flavors. The chicken in it was very tender I have to admit. I even brought it up another notch by mixing the bacon cheeseburger with the southern comfort! Now that was awesome! The one thing I'm not to big on is that you get it in a Chinese style box with the ingredients on top, and not mixed together. I'd prefer it was mixed in together so the cheese would be on the ingredients too. I think the reason may be that they don't want the ingredients to be soggy but that's just my guess. Nice location and food was pretty good! In town and haven't been to the Spectrum since they started building in it, so the restaurant had a cute industrial vibe to it. Simple menu of only Mac and cheese. I got the one with hamburger and bacon and added corn to it and was very good. Customer service was sweet and attentive. read more

If you love Mac and cheese, this place is your heaven. The Mac is supreme. It's a very, very simple restaurant; just macaroni and cheese with different meats or toppings mixed in. But hey, in a complicated world, I see nothing wrong with simple. It's not cheap - it will cost you about $8-12 per Mac meal - but it's not overpriced either. I'll definitely come back. read more

Being half Thai, I knew this would have high hopes for great food. Service from the 2 women crew was spot on. The food truck gives you street food vibes you would find in Bangkok. They make every dish to order so it does take a little longer for your food, but it's truly worth it. They even have a couple of awards in 2025 to prove it. I did find out that the 2 ladies would be closing up shop until April as the will go back home for vacation and to visit family. Now for the food...I ordered an array of items to see how the dishes stacked up. Everything was spot on with a bit of a remix. Ordered the larb with pork, pad Thai with shrimp, green curry with pork, pad kra pow w/ pork, pad see ew w/ shrimp, tom yum w/ shrimp, and a Thai fried rice w/ shrimp. My family and friends of 6 basically crushed everything with very minimal leftovers. The portions are generous and pricing is very reasonable. I'll definitely be back when I'm back in Idaho to do some spring/summer fishing.
