    I'm a follower of Chef Shingo Kato since his days at UKA and was eager to try his newly helmed Japanese - Thai - French fine dining restaurant. I booked it for my gf and I's anniversary dinner for a friday night. The entire meal took about 2 1/2 hrs with excellent pacing between dishes and stellar service. Majority of the cooking was done inside their kitchen but final plating was done in front of us at the counter. The food was not only innovative and delicious but also beautiful in presentation. I honestly cannot even pick a favorite dish because they were all incredible and unique in their own way. I'm generally not the biggest fan of many thai spices and taste but this meal was a game changer. A little over half of the dishes were very much thai focused in terms of taste but using japanese high quality ingredients and cooked with french techniques. The best part, I felt full after the last savory course which even had the option of extra somen noodles. Overall, this has probably been the best restaurant based fine dining experience I had. A very unique fusion compared to the typical contemporary or japanese focused fine dining that is all over LA. Chef Kato and Niki's food was certainly a breath of fresh air. I'm definitely recommending my friends to come try this place out and I'm already planning my next visit soon.

As a chef, I appreciate restaurants that focus on executing the classics at the highest level, and Petit Trois does exactly that. My only disappointment was not getting the chance to meet Chef Ludo. The beets and nuts were nice but pretty overwhelmed by the horseradish, even when I tried to avoid getting any of it on my fork. And I'm not a person who hates horseradish, by any means. I would try the Boston lettuce salad next time. Steak frites - the fries were evenly crisp (fried in clarified butter), the herb butter sauce was fresh and light, the steak was a nice medium to medium-rare, even on a piece this small. I would definitely get this again. I'm not sure what the portion difference is between the prix and the regular, but this felt well worth the price we paid as part of the prix fixe. Big Mec Burger - The burger, while cooked nicely medium rare, was a difficult knife and fork burger, due to it sitting in a pool of demi glace. The flavors of the burger were nice, but they might get a little taken over by the sauce. It is an incredibly expensive burger, and I question it's worth. Chocolate mousse - topped with cacao nibs, dark chocolate shavings and hazelnuts. A very rich milk chocolate flavor and a much stretchier almost pudding like texture than I have encountered in a mousse before. Honestly not my favorite dish. I would try the puff pastry option next time! We also got: French onion soup - big pieces of onion in here, that they maybe did not cut the entire bottom of the onion off of. Peppery, but not overly so. It was flavorful with a very satisfying amount of cheese, baked perfectly on the top. Felt like it could have used one more element....salt? Or an herb? It was good but we didn't find it outstanding, especially for the price. Overall, only the prix lunch deal (12-4 M-F) felt worth the price. I'd definitely come back here for that. We were interested in a couple of other menu items that we didn't try, so we'll likely be back someday. I've had better versions of everything we ordered at a better price elsewhere in town, tho. We ate in the bar portion of the restaurant. Service was helpful, friendly and leisurely. Probably a place where you'll have to flag your waiter down, as they're trying to let you enjoy your meal unhurried and uninterrupted. Bathrooms were clean and well appointed. Patio area was closed due to rain when we dined but it looks like a nice space with plenty of shade.

It's just when I dine at expensive restaurants, I usually look at the check, and say "HEY! That meal cost $130 per person?! Where did all the money go?!" Five years ago I took my soon-to-be-wife to this restaurant for her birthday and ordered the set menu and wine paring. The dinner was such a memorable dining experience, that it stood out in our memory as one of our best dates. Five years and two kids later, we decided to go back for my wife's birthday, because it had been a while, and this time there was a slip up with one of our dishes towards the end of the meal. The staff and manager, Megan, did everything in their power to make sure we left the restaurant wanting to come back. I'd never experienced a business so serious about retaining a single customer, in such a deft and personable manner. They were apologetic and kind without being over the top, and I was astounded at how well the business functioned in order to curate the customer experience. The service is unobtrusive but dialed in to the minute detail- every time we got up from our seat, we came back to a folded napkin. The servers were funny and helpful, but never disruptive. When we left the retaurant, the hostess opened the door for us. It's rare for me to talk about service more than the food, although the food was top notch (the lobster pasta and baguette are nearly flawless), but that's the impression Republique has left on me. When I got the check, I looked at it, and said, "Wow, that's a steal." So whether you're into hole-in-the-walls or glory holes, know that when you go to Republique, you may buying more than a dinner, you might walk away with a lifelong memory.

I am definitely coming back to try their other items because this place really blew me away. I understand why there's a long line now.

This high-end hipster restaurant is tucked down a graffiti-covered alleyway downtown, on one of the blocks that somehow doesn't have that many homeless people. The entrance is unassuming and plain, which I guess is cool now? Are we over flashy? I don't know. Walking inside, you feel... nothing. The employees are all dressed in white. The restaurant is all white. It's a little bland. Near the entrance are four white upholstered chairs where you wait while your table is prepared. These chairs have seen better days. The white fabric looks like wet dogs have been sleeping and wrestling on them for years. Dirty, stained, gray. I'll stand, thanks. The prix fixe menu includes a French baguette, French butter, a summer salad, and your steak frites: a hanger steak with tarragon parsley sauce. The highlight of the meal was the bread. Soft center, crispy crust, and the butter was topped with flaky rock salt. Simple and delicious. The salad was light and bright, and by that point I was excited for the steak. I always order my steak medium. Is that right? Is that wrong? I don't know. Blood freaks me out, so I like just a little pink. The steak arrived and the presentation was a 10/10. The fries were great. Hard to mess those up. The parsley tarragon sauce was interesting at first. A flavor profile I don't think I've had before. The first bite was solid. But then came the problem: the hanger steak was tough and blood red. I had to chew it so much that I was completely over the parsley tarragon sauce before I was even halfway through the meal. The sauce also became overpowering and salty fast. The restaurant is dark, which I'm convinced is intentional so you don't notice the "medium" steak you ordered is actually rare because they have a Michelin star and apparently they know better than you. The service was fine, and my server was delightful. The restaurant clearly knows that, because they automatically add a 20% gratuity to the bill. And even with the gratuity already included, the receipt still has suggested tip amounts printed on it just in case you're looking to hit that magical 40% tip threshold. All in all, it was fine. If I had been served this exact steak frites while sitting in first class on a Delta Air Lines flight from LAX to JFK, 10/10. But driving an hour through Los Angeles traffic and Gotham City conditions to be greeted by dirty furniture and an okay steak? 6/10.
