The vegan Korean cold noodles are simple but SO refreshing: chewy buckwheat noodles in a slushy vegan broth, topped with pickled radish and cucumber. They give you mustard and vinegar on the side so you can adjust the broth to your liking. And yes, they give you scissors to cut the noodles. They're SO chewy and long that trying to pick them up in one piece would basically be a full-body workout. The scissors are not optional -- they are survival equipment. I also put in the effort to finish the entire bowl of broth... and I honestly can't believe I made it! That icy, tangy broth was so refreshing that my stomach apparently said, "No leftovers today." One little bummer: the vegan meals don't come with side dishes. They do sell vegan kimchi, though, so you can still get your kimchi fix. But honestly... the only Korean restaurant in town with a vegan menu?! Finding vegan Korean food can feel like searching for treasure, so I was VERY happy to find this. This was more than enough food for 2 people (we got leftovers to take home), and I think the perfect amount of food for 3. I appreciate good portion sizes. I recently saw a few foodies post about this spot so I assume they're going to get pretty busy soon. I will try and get a group of friends next time so we can try more things. It is a small restaurant running by a few Korean ladies. Once food is ordered, the chef or kitchen prepares and served the food quickly. I love the efficiency here! We ordered chewy noodles in hot soup with fish cakes, some veggies, and eggs and spicy chewy cold noodles with a lot of veggies. Indeed the portion was quite big but we also ordered kimchi mandu. Each kimchi mandu had a decent size so we were very full. Everything tasted good here. I would recommend this Korean restaurant if you want to try something different from a typical one. The restaurant is in a shopping complex so it's attached to a parking lot. Although the parking lot is busy, it's usually fine to find a parking spot.

The chewy noodles were refreshing, like a salad with noodles, give it a quick mix, and yum!
