I went to school in Texas in the early 80s and when I moved back to the Lou I had forgotten tamales. We had grown up with some pretty shabby tamales, wrapped in paper, but good tamales were no where to be found. Now we have an abundance of Quality Mexican but I started making my own tamales 12 years ago. Very popular but a load of work to make 40-50 at a time and my unit cost exclusive of labor was about 2 bucks a Tamale. I tell you that so you know I take my tamales seriously. These frozen tamales are better than my fresh, home made tamales. Creamy masa and the the pork and chicken are really flavorful with or without any additional salsa. This 7 oz burger patty is blended with bacon, pork, beef, and chorizo. Then they add a runny egg, fries, sriracha aioli, and pepper Jack cheese.
