Cabo has added several new items to their menu, and my new favorite is the Quesa Birria. Quesa Birria combines queso (cheese) and birria (slow-stewed beef) in a crispy, griddled taco served with a flavorful broth (consomé) for dipping. It's rich, savory, and one of the most popular modern Mexican street foods. Their new Tortas (Mexican sandwiches) are fantastic too -- I've tried several and they're all delicious. Highly recommended!
