We had a lovely meal at this restaurant despite how packed it was and how many screaming kids there were. It is kid friendly 100%. Matsutini was delish, cold sake was the best sake we have ever drank. The somm was wonderful, so smart, made a great recommendation for us. Their wine list is impeccable. Food was fantastic. I would say the black cod lettuce cups were our least favorite. Shishito peppers were so good. The salmon "new style" was maybe our favorite. Beef skewers were delicious. Matsuhisa is a Nobu restaurant located in Vail. The restaurant itself is located right down the stairs as you enter the lobby. The ceilings are high and open making it feel extremely spacious. There are some private rooms as well. Right before ski season opens, they have incredible deals. They have specials that make the meal extremely affordable, especially in comparison to your typical Nobu prices. We walked away from our meal with a party of four for less than $150. Amazing. I ordered the chirashi. I will say that it was unique and not what I expected. It came with rice with tsukemono mixed in. Rather than pieces of sashimi on the top, the fish was cut into small chunks almost like poke. It wasn't traditional chirashi like I had hoped but it was still okay. They had a great bento box option that came with the crispy shrimp with spicy mayo. Yum yum! That's my favorite! My mom ordered the omakase special and it looked wonderful! The meal was nice and well worth it for the discounted prices. Service was a little slow so be prepared for a leisurely experience. read more

Highly recommend trying to get a reservation at Matsuhisa while you are in Vail. We tried the black cod lettuce wraps, shashimi "New Style" and a few rolls they had on special... It was all amazing. We ordered more food as well, and really enjoyed navigating the menu. The service team was great and spot on with their suggestions. Matsuhisa was such a fun and amazing food experience! Three of us took the risk of showing up on Friday at 7PM and we were SO lucky to get seated immediately at the sushi chef's bar area. I had Matsuhisa on my list and was definitely pleased with the experience. Our server was very friendly and knowledgeable throughout the night. We ordered in "stages" since we shared all plates and were excited with so many great menu options; and every still flowed nicely & timely onto our table. The Gardener cocktail was so good, so fresh! Matter of fact, everything we tried tasted so fresh and coastal- like a zing to taste buds. For food we had the shishito peppers, rock shrimp (end up getting a 2nd order!), tiradito and a couple sushi rolls of the day. This place is officially marked as a favorite in my books! read more

Went with another couple last week who raved about the quality and taste of dishes. Coming from NYC, I suppose my husband and I have high standards, especially for these prices. Never been so disappointed in such a highly rated restaurant. Generously sliced black truffles laid upon the sea bass was barely aromatic. This is most obviously the fake stuff- not from France or Italy. The fish was also slightly overdone. Lobster ceviche in lettuce cups was a joke. $52 for the 4 lettuce cups would have been acceptable had the lobster meat been better presented and prepared or was of decent quantity. The quality of the lobster seemed fine, but not enough to justify this price. This dish is something that I have served my family for a regular summer meal. Not at all special as the price would suggest. The jalapeño yellowtail pieces despite being sliced very thin were actually sinewy. This is an amateur mistake and the quality controller should take note. $27 for this sashimi dish was insulting because even the presentation was what you can expect from the all you can eat sushi places in Manhattan. This may have been Nobu Matsuhisa's creation, but it is a ubiquitous dish now found even in the lowliest sushi joints. Time to innovate. Cubes of crispy rice with a mound of spicy tuna for you to dollop on the cube was another recommendation from our friends. The crispy rice cube reminded me of the bags of fried mochi from Trader Joe's my kids like. Except with a less favorable texture because it wasn't as light and was more chewy. The spicy tuna was neither spicy nor flavorful. The scallops foie gras lettuce cups was the only interesting and tasty dish. Again though, presentation here fell flat. It is lazy to jumble everything together in the little leaves of lettuce. Our friends ordered some sushi rolls. These too were conventional in their ingredient pairings, quality and presentation. The dessert bento box had a typical looking and tasting chocolate lava cake. Nothing outstanding. Cocktails ranged from bad to good. The Gardener stood out. Some were too monotone in their sweetness or tartness. Well crafted cocktails should have some complexity or drama. There is an extensive wine and sake menu. From what I could overhear, the sommelier was very knowledgeable and courteous. The saving grace was the service. Our server was knowledgeable and clearly enjoyed what he did. He was attentive without being obtrusive, efficient but relaxed. The other waitstaff were efficient and cordial, and the stream of dishes were timed perfectly, never crowding the table, never making us feel rushed. Pretty much anywhere you are seated you will appreciate the gorgeous grand views of the Rockies. Decor was pleasant and boring. Like a hotel. Varied patrons and attire. From cowboy hats to cocktail dresses, hiking pants to hiked minis. Plenty of kids that were thankfully well behaved. Noise level is moderate to high. Folks, our bill was over $800 for dinner for four and we didn't even have sake or wine. For that price and Nobu's reputation I was expecting the highest quality of food and presentation, something unique and memorable. Granted we probably would not have ordered many of the dishes our guests did, but I'd expect this celebrated establishment to elevate any conventional items on their menu. We would have had more respect for this place if some dishes fell flat because they were too innovative or risk taking. Conventionality at this price means dishes need to be of true value, which was not present. You are paying for the privilege of eating fresh seafood in a landlocked state over a thousand miles from the seas, views of the mountain ranges that I will never tire of, the lovely service and bragging rights of having dined at a Nobu Matsuhisa restaurant. Why not a lower rating? Because in the end we all had a great time. I'm going to credit Matsuhisa for some of that despite the disappointments. If we ever return, it will be just for the drinks and the views. read more

Very high quality sushi. For high end sushi in Vail it was considerable prices. The edamame were good but I would recommend asking for them lightly salted. The Dragon and house special were so good. Sashimi were really small cuts in comparison to most places I've been but weren't fishy at all. Spicy tuna was good but I wasn't used to it being just seaweed on the outside instead of rice covering it so the seaweed taste was fairly strong but my husband loved that. Soft shell crab roll was also great! We didn't order drinks so it may have made our meal faster but it felt pretty in and out. One of those spots that they fill up your water after every sip haha. It will be an expensive meal but I'm my opinion it is most definitely worth it! Make sure to order the rock shrimp, black cod and wild yellowtail sashimi! First time here and in Vail, and this restaurant was on our list to try. We missed our early 5:00 reservation but took our chances anyways. We put our name down for the sushi bar, was told 45 minutes wait. Went to check the bar area and a couple was leaving and offered their seat to us but we were told those seats were spoken for (first time I've heard of that but next day found out it's the norm here in Vail). The hostesses and possibly manager we're not friendly nor inviting. Gave the place a cold vibe to start. However, Michael and Colleen the bartenders made up for it. It was a long wait, so asked hostess how much longer. She couldn't give an estimate and said firmly that there's a couple people ahead of us. A good host tries to calm people and make them feel accommodated...not here folks. Also, definitely who you know. We started to feel like we were being dismissed and possibly discriminated against for being Asians in a predominated white place. Entitlement isn't us but I had to share how I was feeling with our bartender. After that, we were next to be seated at the bar and was finally able to partake. We started with miso soup and salad with seaweed. Soup good with big tofu but salad was just ok. Then came tuna, salmon and octopus sashimi (4 pieces of each)...very good! After that waited forever for the rest of our food. Inquired about where the rest of our order was to make the ball wasn't dropped..was told it was coming and that it's busy in an annoyed way..how dare we ask. I let it go cuz they were very busy. Spicy tuna and eel roll finally came! Four drinks and our bill totaled $200. I personally feel that this place is over/rated cuz of "Nobu". Absolutely the best restaurant in Vail. Writing that comes easy for so many reasons. First of all, people know that this brand is truly outstanding, due to the incredibly high quality food and the exceptional culinary artistry. Any foodie already knows this. Secondly, what makes this one of the best restaurants in Vail is the fact that the wonderful staff genuinely enjoys working together, collaboratively, and all authentically are supremely into the food, drinks, and the experience they create for their guests. General manager Jordan, restaurant manager Max, and servers Aubry and Cornelius are my favorite people here. They present themselves as tour guides who lead the restaurant guests on a delightfully delectable journey. And, thirdly, the ambience, decor, and location of the restaurant are ideal. This is the place to go if you are in Vail. The place is absolutely gorgeous and very intimate. My husband and I came here for dinner for his birthday and we loved it. We are from Florida and love sushi and this place was just amazing. The keep the place very clean and are following COVID rules when it comes to sanitizing. As soon as we sat down our server came over and recommended some drinks for us and we started off the edamame and miso soup. The edamame was perfect. Perfectly flavored with salt and just warm enough. The miso soup was also delicious. It was about 20 degrees or so when we came to dinner, so the miso soup hit the spot for sure. For our entrees we ordered the seared scallops with the jalapeño salsa and it was delicious not spicy at all and just the right amount. We also ordered the California roll and shrimp tempura roll. Both were cooked to perfection and just tasted amazing. We had to try the dessert options they have, so we went with the bento box which had chocolate lava cake, green tea ice cream and mixed berries. This plate did not disappoint. If you are in the area, this is the place to go. I recommend reservations because they get filled up fast. read more

This restaurant is a MUST GO when you go to ski at Vail, Copper, Breck, Keystone or any ski mountain near Vail. It's the best sushi restaurant in Colorado. We make it a tradition to eat here every year on our annual ski trip. The boys love their chocolate lava cake dessert. My husband and I love everything about this place especially their lettuce cod specialty. You won't find this plate anywhere else and as delicious as here. We always end up ordering it twice! While the sushi was decent, the whole experience felt really rushed, like they were trying to free up our table for the next group. Before I knew it the check was on the table; I think that we were there for less than an hour total. Overall a huge letdown. I've been dying to eat at a Mastuhisa or Nobu. I was thrilled to see Vail had one. I was able to get a reservation during COVID mania and ended up getting the best seat in the house. The view is spectacular. I had such incredibly high hopes and deprived myself of sushi for months just for this moment. I tried the eight-course omakase (tasting menu). It was nice to eat things outside of what I typically would order like a fish dish, salad and soup. When I go for sushi, I typically eat a dozen pieces of nigiri and am satisfied. I didn't care for the lamb chop lollipop or the salad dish. I had to order six more pieces of nigiri to compliment the eight-course dinner. Like a few other reviewers have said, the food is pretty forgettable. I had great service and my water or Tito's was never untended to. I would go back for sure to order regular nigiri or some rolls. This is definitely a place to go with friends and enjoy a decent (and expensive) meal. It's a social gathering during a time of social distancing (gross). We were able to get their before it opened at 4:45pm and grabbed a table before a reservation or you can grab a chair at the bar. The menu has no descriptions for the sushi rolls so you have to ask the server for details. Our server did an excellent job explaining all the rolls in detail and we just took his recommendation. Ordered smoke salmon, tiradito roll, shrimp tempura roll, and soft shell crab roll. All excellent. The tiradito was spicy and something I have never had before and really enjoyed it. The kids had dinner filet which was perfect. The view from this location overlooks vail mountain and the ice skating rink. I would highly recommend this stop for sushi. read more

We walked into Matsuhisa, thinking that we wouldn't be able to get seated, but sure enough, ten minutes later, we were sitting at the sushi bar, which was an awesome experience. Our waiter was extremely attentive and the food was solid. We got the deconstructed crispy rice with spicy tuna (the same dish that's served at Nobu), some sushi, some rolls and the peanut butter shaved ice dessert. I really think that the dessert was the star of this meal. It was huge (too big for even two people to share) and extremely decadent. My friends who went there before me were not very impressed so I decided to build my own 8 course meal and try to come close to the $125 price tag. I think I did really well and the dishes were super tasty and filling. Services were wonderful too. Not disappointed at all. 1. 3 pairs of king crab, lobster and ground beef tacos 2. Tiradito style scallops 3. New style salmon sashimi 4. King crab tempura 5. Grilled mushroom and field greens 6. A plate of aburi nigiri - toro, salmon, red snapper, tuna and tamago 10 pieces total 7. 2 lamb chop lollipop 8. 2 Miso soup to finish off as every omakase did. We were so full we couldn't do dessert. Service was great, out server Barron have us great suggestions on drinks and meal options. There is little ambiance and you cannot hear the person you are sitting across from. The place is really loud. The food is OK but not 4 or 5 star. The scallops on brussel sprouts were undercooked and the whole thing was dripping in salted butter, including the sprouts, which is a cheap way to cover up lack of flavor. It appears they attempted to carmelize one side of the scallops without success. The sushi was no better than other, far lesser priced sushi in the valley. The shrimp tempura was tasteless. This is really a place for tourists who don't know there are other, better options around. Dinner for two people with one drink was $200. read more

We were staying inside Vail last November-early December, and this Nobu restaurant was located right down the stairs from where we resided. When we first arrived, it was bustling. A few things we had on the menu - we had a party of 7-8 adults and 2 toddlers: Seared Tuna Tetaki Salad - soft and fresh, ginger sesame sauce on the bottom Spinach, grilled Shrimp, dry miso and parmesan Salad - salty, crunchy with spinach; smells so good Rock Shrimp with Creamy Spicy - lightly fried, creamily covered, slightly citrusy. Miso Sea Bass - top was full of flavor, sea bass itself was soft and complemented the other. Filet mignon - delicious with the reddish dark sauce which turned out to be teriyaki sauce. It was more tangy and sweeter than the miso. Vegetables were covered in a creamy buttery sauce. Mushrooms absorbed the most flavor and most of our group liked it the most. Sushi - we ordered a bunch; Teratito Special Roll was the one I remember due to it's spicy, salty, quite a interesting taste. The other sushi weren't too interesting. My hubby hunted down this Chef Nobu gem for us to try on our trip to Colorado. The drive to Vail from Boulder was beautiful and we took our time getting to Vail as Matsuhisa doesn't open until 5pm. We decided on the tasting menu as it was a great way for us to try many different items but not get overly full. We started with shishito peppers and we loved the sea salt on them for texture and flavor. We had sushi, pork belly, scallops, and added a set of lamb chops to help round out our bellies. We finished our meal with mochi in a variety of flavors. Everything we tried had thought and art put into it, along with complex flavors. What really blew us away was the staff. They knew the menu inside and out- not like it was memorized but that they could speak freely about anything they brought to the table rather than repeating like a robot. Derek was stellar. The entire experience was smooth from beginning to end, no detail left undone. While we were enjoying our meal we watched the bartender scrutinize every glass before he made a cocktail to ensure it was perfectly clean. The rest of the waitstaff supported each other, always magically appearing to wisk away a finished plate or to refill a water, but the dining experience was also incredibly intimate. read more
