I didn't know what to expect walking in, but the lighting was dark and warm, and I couldn't be more thrilled to see all of the skulls lining one of the walls! Walk into the back through the secret door into NE where the space is much more intimate and dim lit. I've been coming here for a while and tonight I encounter a new server who's name is Kayla. Let me just tell you she was so rude. I'm not sure if noble experiment us trying to give out that service but it was not ok. She was snapping her finger to my friend and letting us know in the rudest way that she did not have a menu. This is something we've known for a while but she not need to be this rude about it. The bartenders are super talented, drinks were great, the atmosphere was pleasant, and the decoration was cool. There is no menu at all. We were staying in SD for a couple of days and found this speakeasy on yelp so we decided to check it out. First of all, the line was super long to get in and we were going to head somewhere else until a couple way up in front of the line asked us to go in with them. Guess they couldn't go in until they had two more people with them so we got lucky. Once inside, I noticed the place looked bigger in pictures than in reality. The walls reminded me of the brutal Khnmer Rouge regime in the 70s where they massacred millions of their own countrymen and stacked the skulls on top of each other. Perhaps the interior designers of Noble Experiment were going for the look of the catacombs underneath Paris and not Pol Pot but eerily similar. The drinks were pretty soild, I had some type of thai tea inspired cocktail which woke me up a little from the trance of the golden skulls staring right at you as you sip away into the night. We had to sit with the couple that got us in because we were the "same" party but we weren't complaining since we got our own table and got to make new friends for the night. read more

One of the most popular speakeasies in SD making it super difficult to get a seat. The first time we tried, the waitlist never moved. Lucky for me, I now live super close to this amazing bar and can pop in randomly. Our first actual visit was on a Thursday. We came right as they opened so it was easy to get in without a reservation (though I'd still highly recommend it). Our bartender for the night was Danny who consistently made amazing drinks. On subsequent visits, we also met Tony who was just as good. Everything on the menu is top notch, though I was most surprised by their martini (Dirty Program). I've never liked martinis, but this one was well-balanced and extra dirty with a delicious assortment of olives. You also can't go wrong with Dealer's Choice where it's all up to your imagination. Came here on a Sunday night after reading reviews, my group of three were lucky enough to be able to put our names on the waitlist that was about 45 minutes. I say lucky because usually this place is hard to get into without reservations if you don't come right when they open (we didn't), and I saw others get turned away. My experience at Nobel Experiment was amazing the drinks that were personality crafted per persons liking, were wonderful and one friend was licking the cup clean because he couldn't get enough. My friend and I came by on a Wednesday night with a reservation. We waited about 10 minutes and were seated at a corner table. The drinks were good, especially our second round, but overall the service brought the experience down to a 3. We had to wait a long time between our first and second round of drinks. Our empty glasses sat on the edge of the table for about 15 minutes before our bartender came back to us asking if we wanted another round. After our second round we never saw our bartender again. Another server came and asked if we wanted another around, which we replied yes, and she said she would grab our bartender. He never came. Texted the place (per instructions), got an immediate response. Had a spot for us if we could be there in five minutes. Fortunately we had just finished grabbing a bite to eat a few blocks away. Arrived, headed to the "secret door" in the back. We were seated right away at the bar. A little cramped overall in the space, but not overwhelmingly so. Small tight cocktail list. Huge selection of spirits on the wall. We ordered from the end, an Old Fashioned and a French 75, both their classic versions. Old Fashioned (the mixologist, given the choice on bourbon went with cask strength) was boozy and delicious, French 75 had a terrific grapefruit flavor to it. Yes, drinks were pricy ($16 & $17), but really well made with high-end ingredients. Couple next to us ordered "the dealer's choice" and it was fun and interesting to hear the banter between the mixologist and the customers to get to drinks they loved. I am not from San Diego and have been here three times (different occasions conference, vacation). Each time was a consistently great experience which I as a german like =) I won't tell you exactly how to get in (it's probably described here anyway ) since it's part of the experience... I was surprised by the style and the professionalism of the bartender(s). Will say great cocktails were prepared. I would recommend this as a small group experience (2, max 3 peeps). I've been to "The Neighborhood" before, but I never went towards the back where Noble Experiment is hidden, until I dropped by last night. It is tucked in behind a hidden door and the hostess said there was a little wait, but she offered us a menu and we could stand in the bar. Shortly after got seats at the bar and instantly all the smiley bartenders were very *welcoming and friendly*. I opted for the "Dealer's Choice", which is a customized drink creation.. and I told them I wanted some Gin and I wanted it to be refreshing. The whole experience here is unique and this place is DEFINITELY worth a visit. Go once to decide for yourself if this will be a unique one time stop or a bar you'll visit regularly. The entry experience is very cool and once inside the hostess is friendly to accommodate you based on availability. Since it is a small bar, use the reservation text system they have in place (DETAILS @ END OF THIS REVIEW) but don't expect to walk right inside unless you're a single. I had 4 drinks. To be honest, none of them blew me away. I kept trying to refine my descriptions to get something different. In the end, it didn't matter. Both bartenders were very interested in finding something to suit my tastes in a rum drink and I did have four drinks that I've never had before. I saw many cocktails I've never heard of and noticed most of the folks around me amazed with their creations. There are also several locals who come back which is a good sign as they have their choice of bars to visit. While I have only been once, I will always request a bar seat. It was almost 11PM on a Sunday night but it was still packed. We got on the waiting list and were called in about 20-30 minutes afterwards. The ambiance is seductive, mysterious, classy - it's like a mash of French catacombs and classical paintings (you'll know what I mean when you go there). The drinks are listed in pairs - one is the classic and the other is NE's twist on it. The drinks we tried were: Bolero Verde (mezcal, celery, ginger, amontillado, soda water, green chartreuse) - I somehow missed the "soda water" part and ordered this even though I hate carbonated drinks. Not my cup of tea obviously so I had to switch with my partner's drink but I thought the flavors were still interesting. Refreshing, light, slight zing. Experiment #2 (???) - To be honest I don't remember what was in this. They have 3 drinks called 'experiments' that seem to rotate regularly, apart from their regular menu. It was creamy, slightly sweet, and coconut-y. Old Timber (bourbon, falernum, averna amaro, orange bitters) - This is their spin on the old-fashioned.
