Amazing banh mi. The French bread on the banh mi is buttery, flaky and soft. One of the best bread I have eaten. The spring roll is freshly made and I like that there's variety in it with pickle carrots/diakon, herbs, thick vermicelli noodles. Unlike other places that has pre-prepared refrigerated spring rolls with cold rice paper, iceberg lettuce, and bean sprouts as that is just cheaping out on ingredients. I've been seeing so many reviews over the last several weeks since Noble Pho has opened. I had high hopes, but unfortunately, my experience didn't live up to my expectations. I went here with my cousin late afternoon. Full disclosure, we're from Houston so our expectations on Vietnamese food is high. Staff were attentive and friendly, I give them that. Food came out in a timely manner. I liked that they had a call button service on the table, so you're not hollering or trying to wave the staff down when needed. Nor do they constantly have to check up on you when you're mid bite and have a mouth full of food. We ordered several items on the menu including: oxtail pho, brisket pho, shrimp spring rolls, nuoc mam chicken wings, and noble banh mi. The pho/broth was decent. Has flavor and aroma of the spices used to make pho. Definitely better compared to majority of the other restaurants in the Austin area. But was it WOW? No, but I give them credit on having flavor and not being bland. The oxtail and brisket meats in the pho were good and tender. The shrimp spring rolls were fine. They were plump and filled with veggies, can't complain because they're your typical spring rolls. The nuoc mam chicken wings were delicious! Good flavor, a good blend of fish sauce and sweetness, not overpowering of one or the other. And the noble banh mi... ugh the most disappointment I had because I love myself a good banh mi. The bread they use is like a toasted hot dog bun and the amount of Vietnamese ham I was given... I was appalled. ONE VERY thin layer of the Vietnamese ham and ONE VERY thin layer of the head cheese. It was so thin and lacked meat that you couldn't even taste biting into the meat. It was like biting into a hot dog bun with vegetables. Noble Pho is such a special spot for Vietnamese dining! They go with a Northern Vietnamese pho style -- and that means a very clean and "elegant" bowl of broth. You really get the clean beef/bone broth flavors shining through -- and a ton of natural umami and savoriness. The noodles are also subtly firm, with a very nice bounce that makes this bowl that much more unique. It's a special bowl, and with the first spoonful, you'll quickly understand the thoughtfulness of the recipe. We also had the crispy chicken wings -- which came perfectly golden fried and decorated with a nice garlic soy glaze. We couldn't stop coming back to these wings, a must try for sure. If you enjoy spring rolls, these were nice, soft and fluffy! Packed with fresh ingredients and certainly a larger portion than I'm often used to, almost small burrito size and in a good way! The service was an added bonus, with very kind and attentive servers. Noble offers call buttons at their tables so that you can receive service whenever you please. On top of that, the owners are genuinely good people -- and came out frequently to check on us and ensure that we were pleased with our experience. Noble Pho is the type of place that we need more of in Austin and that I will genuinely root for. I can't wait to head back! read more

Was looking for lunch and saw this new place that had opened in the spot previously occupied by Phonatic. It's a nice facelift, very bright and clean. The prices are a little higher than what was there before (if my memory is correct), but they make up for it in quality and service. The broth was very good and the soup came out looking great. Noble Pho on University is absolutely delicious. The variety on the menu is wonderful, and everything I've tried has been fresh and full of flavor. I've had the pho, the wings, the pork lemongrass, and the chicken lemongrass--every dish was spot on. The flavors are vibrant, portions are generous, and the prices are very reasonable for the quality you get. Add in a great atmosphere and friendly service, and this place is a must-visit. Decent overall. I found the bowls to be a bit small - when I saw some other tables with "large" bowls, they seemed to be the size of "small" bowls you see at most places. On the plus side, the egg rolls and coffee were much larger than most places. They only seemed to offer 2 or 3 meat combinations. I wish they had gau (fatty brisket) as one of the choices. I did not see tripe listed, if that happens to be one of your favorites. read more

Since moving to Georgetown, from Orange County, California 12 years ago I had yet to find a Vietnamese restaurant that could fix me a vegan pho with tofu. Many Vietnamese only have beef broth or their veggie broth is tasteless. I stumbled upon Noble Pho today and I have to say that this is, by far, one of the best EVER vegan pho's I have ever tasted. The veggies were bountiful and so very fresh, the tofu cooked to perfection and the broth...wow, oh wow. I only did take-away but the restaurant now looks so inviting, I am planning my next dinner out to be there. Thank you for giving me such a wonderful, surprise experience. read more

Had lunch at Noble Pho the other day for the first time and I cannot wait to go back. The delicous smell that greeted me got my tummy rumbling, and I decided I wasn't in the mood for soup, which might seem like a bad move, but there were so many options! I ordered a pork Bahn Mi, 2 shrimp spring rolls, a plate of chicken wings, and a green jasmine milk tea with real boba. (OMG YUMMMMMMM) The milk tea is my new favorite thing, the wings were so crispy, tender and delicious,(I might dream about them tonight) spring rolls were a thing of joy, and by the time I got to my Bahn Mi sandwich, I had lost track of time, settled in happily, and pondered what rent they might charge me if I just LIVED here now. The staff was super friendly and I think I met the owner- a nice lady name Jenna who checked on me and seemd genuinely pleased that I was enjoying myself.
