Who wouda thunk? On my cross country road trip I stopped for the night in Midland. I ate out with my buddy every night the week I was in Las Vegas, so I wanted something different to eat. I ordered the beef noodle with veggies. The broth was perfectly clear as it should be, the meat and vegetables were perfectly cooked and Since I ordered a side of dumplings I added them to the broth. Noodle House is a solid choice for some pot stickers and bao. It is always fun to see the cook make noodles from scratch right before they're tossed into the hot water. Ok....better than I think any other chinese place in Midland. Good - The spicy wontons are pretty darn solid, as good as I've had them in the US; they are coated in delectable spicy oils and close-to-addictive! Meh - Youpo noodles didn't live up to the expectations; maybe not enough oils & spices coating the noodle, tasted a lot of the noodles and....not much else. The meat is tender however - the noodle/meat ratio was way off though. Bad - Combination fried rice was horrendously over-rated; the fried rice was swimming in oil, yes it had chicken, pork and shrimp (4 pieces!) but there was no flavor in each bite of the fried rice. The noodles here are amazing! I literally eat here once a week if not more! When I go home during the holidays all I can think about is coming back to midland just to have a bowl of the tonkotsu ramen or the black Garlick ramen. Those are my top favorite choices because the broth is to die for! I recommend eating these with chicken because the beef gives them a really sweet flavor. For an appetizer the chicken bao are dethe best. Update: I found out a couple weeks ago that pork is also a meat option and I'm loving it! WOW!!!! If you like Chinese food... you will LOVE Noodle House.. OMG.. They primarily do Noodles.. and Wontons. They do have a chowmein dish and a fried rice dish. You wont find kung pow or anything. The menu is narrowly focused. Which I prefer because its a specialty house. Fresh made noodles.. like so fresh.. they make them when you order and cook them.. you can see it being done. In general, especially with Asian food, I try not to order food that doesn't come from the chef's culture. In this case, everyone here is some form of chinese or Taiwanese probably. Technically all I know is that no one there was speaking Japanese, and yet I ordered tonkotsu ramen anyways. It just wasn't right. The broth, although it looked correct, was thin and tbh, tasted like it was from a frozen instant packet broth. I wasn't getting any of the fatty texture thats normally present. If it was just watered down I'd expect the color to fade and the fat/oil droplets would be more pronounced I think (basic chemistry yeah?). Anyhow it's just conjecture. The chashu was actually pretty good. The egg was just a plain hard boiled one BUT they didn't claim it to be a marinated ramen egg and the picture doesn't show that either. Still, minus a point cause it's a big deal to me. Last minus point, I did pair my ramen with the steamed beef dumplings. From all the rave reviews the fried version is well liked so I decided to go the other route. Fail. I thought they were gummy and had about half the amount of meat as the pictures showed. Probably needed to be steamed a bit longer or more meat to offset the thickness of the dough... Or just order it fried.. read more

I was looking to try something different and this place hits the mark and then some. I arrived before noon at the very unassuming restaurant and was pleasantly surprised to see the place almost full of customers. I was greated and seated immediately and that level of attentive service was consistent the entire time I was there. I had the chicken chow mein which was great. Not much chicken mind you, but you're coming for the noodles and they don't disappoint. Actually the noodles were so good, and seasoned so perfectly, that when I had a bite that didn't have chicken it didn't matter. Yeah, the noodles are that good. I also tried the pork pot stickers. These are not your grocery store pot stickers, these are better. Packed full with well seasoned pork and crispy yet still soft, they make a great appetizer, for two. They're too much if you're having a plate of something else, unless you don't mind taking some home. I did and they were just as good later that evening. Who knew Midland could produce a place like this, but I and many others (obviously) are glad. I'll definitely be going back and look forward to being a regular. read more

I'll update when a certain second visit happens - my visit was on day two of grand opening. The greatest takeaway was great noodle, quick service, but not the necessarily the deep flavor broth I was hoping for - granite I ordered the spicy beef noodle soup ($8.99). I will be ordering the heavier spicy red broth on next visit. With their homemade noodle and dumpling they definitely bring something that no other Asian restaurant in Midland can offer. They have very small and LIMITED seating. I went with 3 friends so we were fine but we saw a group of 15 get turned away. - (If you're familiar with Pho House in Odessa , then I can compare the size of that restaurant to this one.) - Other than the seating and sizing of the place, the food is great, employees are great and had a great time. Food is pretty good! But I have to give it three stars just for the service, each time me and my partner come into eat we have to deal with the same, very rude and disrespectful, waitress. She rolls her eyes at any request made to her. We received dirty cups and the wrong drinks, we asked her very simply and made sure she knew it wasn't a big deal we just wanted the correct drinks in clean cups. She then proceeds to roll her eyes at us, remove the cups then very angrily bring us the correct things. Mind you this is not the first time we have had rude interactions with this server. It's a constant with this specific person and makes the eating experience very awkward and uncomfortable, for fear of asking for anything, due to inconveniencing her. What a freaking hidden gem in small town Odessa, TX!! I wish they were located in Houston. I come here straight from the airport every time I visit my boyfriend. Their noodles are hand pulled and I think they use the same dough for their dumpling wrappers. There is nothing quite like homemade pasta. The noodles have a bite to them and have great texture but still manage to be soft and tender. I love that they serve SALTED, ROASTED PEANUTS as a complimentary snack/appetizer. I'm normally not a fan of peanuts, but these are so good! The STEAMED PORK DUMPLINGS are my favorite. They're some of the best dumplings I've ever had. The wrapper is thin and it's stuffed with tender, juicy ground pork. If you order a soup, it's an extra $2 for 4 steamed dumplings - highly recommend you take advantage of this offer. Pass on the GREEN ONION PANCAKE. It was greasy, crispy like a cracker, and tasted very flour-y. It's supposed to be flakey, chewy, and tender. The SPICY BEEF definitely has Sichuan peppercorns which provide a numbing effect. Very generous portion size, good flavor, and not overly greasy. My only critique was that the beef was a little tough. I liked the YOUPO NOODLE, which is a dry noodle dish (no soup). This is essentially their spicy beef paired with a thicker noodle all tossed in a chili sauce. Warning, this is pretty spicy!! For something warm and comforting, you have to try the BEEF NOODLE SOUP IN SPICY BROTH. The broth is a little light but you can still taste the spices (star anise, clove, cinnamon). I love, love, love the thinner noodles. This isn't as spicy compared to some of the other dishes. I'm looking forward to the next time I can come eat here! read more

This place is small so either get there early or get ready to stand and watch other eat. Although that's good as you can see what everybody orders. We ordered the pork pan-fried Boa and those things are short of amazing. They were cooked perfectly and had a wonderful taste. We both ordered the beef noodle with clear and a beef noodle in spicy. For sure spicy is the way to go. The original was good but the spicy took it to another level. Noodles were cooked perfectly and the beef was nice and tender.
