(therefore, be patient and assume there will be await, but in my opinion the wait was worth it) I love noddle soup with ajitama eggs (ramen eggs) the texture and flavor of the ajitama egg was DELICIOUS (I wish it had more of those yummy ramen eggs in the Miso broth) NOW the ramen! OMG soooooo good! Perfect texture, cooked to precision! The Honey Lemon Ice Tea was refreshing perfect for the summer! Can I just tell you that their staff is AMAZING?! I cannot remember the last time I went out to eat and everyone was so attentive and kind. Kuddos to the team! And then there was the food...DELICIOUS. How do you not try the beef noodle soup, especially when it's their signature dish. It did not disappoint. The only thing that inched out for my favorite was the beef roll pancake. Which if you eat over your soup pieces will end up in your soup or if you dip it in the soup. I opted for knife cut noodles and it has to be my fav-- irregular strands of thick, chewy, and bouncy noodles -- so heavenly ! This place never disappoints. I got the spicy beef soup while my friends ordered the Dan Dan noodles and original beef soup. The depth of soup was very nice as well as the texture of the noodles. They have 4 different types of noodles depending on preference but I got the knife cut since I like chewy noodles. The beef rolls were good too since it was a scallion pancake rolled between beef and cilantro. It was so tasty and juicy with a lot of flavor. We had been looking for a place that makes fresh noodles and came across this location. It sits inside a small shopping center that you can see from the street. It's pretty cool, you walk in and you can see the kitchen through a large window so that you can watch them making the noodles. They give you 4 different opening on the kind of noodles you can choose from which is pretty amazing. The service was quick and friendly. Delivers an authentic experience that apparently is very popular and growing outside of the Chinese / Asian audience. The beef noodle soup meets my standard for being good, was actually a tad spicy as I drank a lot of water but I'm perfectly fine with that. I'm personally a fan of Szechuan version of beef noodle soup, richer broth but this was flavorful in a more mild way that is still good. The meat pieces and everything is as you see pictured... Some girls at our table thought it was quite spicy so beware. Although Noodle St is a chain, their food is consistently delicious and fresh. The Fullerton location fills up very quickly during lunchtime, especially on Fridays, so I recommend ordering pickup or having someone go ahead of the rest of your party to get on the waitlist (I think this location is a little bit smaller than others). The staff here are super nice and quick with service. For the starters, I absolutely love their cucumber salad. I feel like it's underrated, because the garlic and sesame oil levels are so well balanced, and also just packs a punch of flavor that makes you almost want to have the whole dish to yourself. Their spicy chicken wontons are also well-seasoned and delicious. I think I have always ordered their signature beef noodle soup, and there is no secret as to why it's the only soup I'll order. This may not be a completely fair review as I'm eating mostly vegetarian now but in order to fully review a place like Noodle St., a diet was broken. Or to some, a way of life. Unfortunately it wasn't as satisfying as one would think from trying their spicy beef noodle. It had good flavor but not nearly deep enough. The meat was also too chewy, not cooked enough to make sure they truly melt with one chew. The beef rolls, which are a big signature dish for all introductions to Taiwanese food-- were ok. Not terrible and not great. It's a great beginner step into what the best beef rolls are supposed to be. That sweet hoisin like sauce was balanced well but not enough beef slices for the proportion. But still good. The noodles were done well. You get your choice on wide, skinny or shredded cut. Stay away from the vegetable noodle. It's so bland even the monks may sprinkle some salt and soy sauce in it. Nothing about it tells me there's any care into the broth. Granted it's not all easy to make a vegetarian broth bomb but... they could try? That cucumber salad though was done pretty proper. It's got chunks of garlic and tons of cilantro. Love! If they added some sliced ginger and hot sauce it would be perfect!! Bottom line-- eh. I'll be on the search for a better Taiwanese noodle place. read more

I love their serving sizes - they pack the bowl so that there's enough noodles, soup, and chicken for every bite. If you're getting this for the first time, know that they add lots of kale and that the pieces of chicken are pretty big haha! We came here with my mom for a mid week lunch and it was every bit as fabulous as we had hoped it would be - starting with warm and helpful customer service! The crowd drives us to get delivery from here a majority of the time, and we've tried nearly the entire menu over the last couple years. But if you do opt to dine in, you'll see the kitchen through large glass windows, where you can watch them make their noodles (and everything else) by hand. Service is fast, no-nonsense, but still polite. The food always slaps if you know what to get. My Taiwanese partner's all-time favorite dish is beef noodles, and we travel far and wide to find bowls that suit his tastes and Noodle St. is it. The spicy beef noodles with knife cut noodles and cucumber salad are musts. The broth is DEEEEEP with flavor, and the beef is melt-in-your-mouth tender. There was probably like two tables available in the whole restaurant yet as soon as we got there, they saw us no wait time. The server who took our order actually acknowledged the miscommunication, apologized, and even offered to cover the mistake -- which was appreciated. That's where the professionalism ended. Enter the manager -- who wasted no time mentioning her six years of experience, as if that excused what came next. She aggressively reached across the table toward my toddler's bowl and barked, "YOU DON'T WANT THE SOUP, OK?!" -- as if bullying a child is some sort of customer service strategy. It was uncomfortable, unnecessary, and beyond inappropriate. To top it off, she loudly hollered about the cost -- first shouting it's "$4," then correcting herself mid-rant to "$8." The whole thing felt like we were being shaken down in a place that's supposed to offer hospitality. I'm a local restaurant owner myself, and I can confidently say this manager has completely lost touch with how to handle customers, complaints, or even basic decency. Pasadena's location will be my go-to from now on -- at least they know how to treat people. (Take the big if the nice waiter offers it, LOL, you might need it) and the chicken wontons. HOLY SHIZNIT those wontons are amazing, I would make a trip back to Irvine just for those. Love the ambiance, decor and layout of tables. Love that you can see the chefs making the noodles, 5 people back there just the entire time. You can tell the food tastes like care was put into it but when you go, you'll actually see it for yourselves. Noodle St. is my go-to noodle spot. I come here all the time. I usually get the Braised Chicken Noodle with Knife Cut Noodles or the Spicy Beef Noodle. Both are seriously so good, easily the best things on the menu in my opinion. One time we decided to try something different and ordered the Egg with Tomato Over Knife Cut Noodles.
