I was born and raised in Sichuan, and have eaten in many Sichuan restaurants all over the U.S. and highly recommend this one. I found this restaurant through Yelp and gave it a try last year and began to love it. Today I came here with another guy from sichuan, we ordered two Yibin burning noodles and the spicy bean jelly noodle with extra spice for lunch. All dishes were excellent. Frankly speaking, the Yibin noodle should be the No. 1 in the U.S. in terms of price, quality and quantity. Hard to beat it for sure. For example; You can only get half the noodle while paying much more in Silicon Valley. The flavor is perfect. We finished everything. Tried this place out with a few friends and the taste was on point. My fave of the night was the Dan Dan noodles. I just can't resist that "numb tung" sauce. Umami laden spicy noodles in the mouth...what's not to like? Their green scallion pancake came with no sauce. We asked. "No sauce" necessary she said. We doubted, we ate, we became believers. Noodlehead is a new-ish restaurant, only open under a year, and gaining lots of popularity through social media! I found them while looking for a fresh hand made noodle restaurant and they definitely didn't disappoint. They have lots of items to choose from on their menu from their noodle soups, to their dry noodles and the hot and cold appetizers. I came in with my husband and my son on a busy Sunday evening. The restaurant was pretty full but thankfully we were able to snag a table. The servers were very sweet and did a great job helping us out a bit with the menu, as we aren't familiar with some of the more regional items. You can tell they are very passionate about what they sell! They explained to us that the noodles are hand made in store, fresh every day, and that their soups boil for over 24 hours to achieve maximum flavor. We were a little intimidated by the spice levels of some of the menu items, but thankfully we had the option to make them mild if needed. We ordered some of their most popular appetizers: the potstickers, popcorn chicken, and the spicy wontons. For our entrees we got the Yibin Burning Noodles and the Szechuan Beef Brisket soup. While we were there, there was a big party as well (at least 10 people), and even then, the kitchen did a great job getting food out to us in a timely manner, we were really impressed! Our appetizers came first. The potstickers were nice and crispy and had a great chicken filling and we loved the sauce that it came with. The spicy wontons were delicious! They are sitting in chili oil that adds lots of flavor and a good spice. The bowl is small but it's still a good portion! The popcorn chicken appetizer was definitely my favorite. Small pieces of chicken fried to perfection with the most amazing seasoning on it. The seasoning made all the difference, it adds a good kick without being too spicy. The flavor was super addicting. Almost got another order all for myself!! I got the Yibin burning noodles. It was super aromatic and had a chili oil base with peanuts and pickled vegetables. I loved it! Definitely worth trying if you're looking for something new. My husband got the Szechuan beef brisket soup. It was a huge portion!! We ordered the soup mild and it came out perfect. The broth had so much flavor and the noodles had a great "chew" to them, you can tell that their noodles are hand made!! Overall, we loved our experience at Noodlehead. The "tapas" are fantastic. The noodles are good, but the soups can't compare to Shang Artisan Noodle. At least for our table of white people, the one-chili dishes were actually one chili; just a pleasant heat that even the non-spicy diners enjoyed. Fave tapas included the cucumber and black fungus salad, chicken in chili oil, fish balls in satay sauce, and stuffed fried tofu. I would eat a cardboard box with that satay sauce. Came in for a quick bite after landing into town. The interior is welcoming with a good amount of seating. We snagged the last table available as they were busy with a lunch rush. A pleasant young lady gave us a rundown of the popular dishes and stated that they make their noodles fresh daily. We ordered the Dan Dan noodles, Yibin Burning noodles, and beef brisket noodle soup. We also ordered spicy pork wontons as an appetizer which I found just ok. My Dan Dan noodle dish however was delicious. The noodles were bouncy and tender and the sauce was full of flavor and coated the noodles well. I got a taste of the Yibin burning noodles and whoa did that pack a spicy kick. A HOLE IN THE WALL HIDDEN GEM. I called in to ask for a wait time for 7 people, and the lady on the phone told me to come and that she would set up the table for me right away. When we got there, we already had a table set for us, which was so sweet of her. The beef noodle soup - 10/10, the star of the show. It was so so so good, perfectly seasoned, such a great recovery meal. The beef was tender and melted in your mouth. You aren't able to adjust spice on this, so if you wanted spicy, you'd have to get the Schezwan Beef Noodle Soup, which is pretty freaking spicy, so definitely not for someone who can't handle spice. The Dan Dan noodles were also really good, 8/10, not too peanut-y which is my personal preference. I really enjoyed it! The calamari - 10/10, you must get this. My friends and I finished this within a few minutes because it tasted so fresh, the batter was so light, and the addition of the spring onions and chili on top was chef's kiss. The spicy wontons were also pretty good, 7/10. Not my favorite, but I'd eat it again. The scallion pancakes, 8.5/10. I really liked it, wasn't too oily and had good flavor and texture. The beef rolls, 6.5/10, not bad, but I think because I was too busy eating the beef noodle soup, by the time I got to this, it was already cold and just whatevers. Be warned! You may become a noodlehead after one visit. I was a little skeptical about its 5 stars rating based fewer than 100 reviews but the other place we tried has a 2 hours wait time so Noodlehead we came. Located in the same shopping mall as 168 Market, it is practically at the corner of Spring Mountain Road and S. Jones Blvd, so don't let its Jones address throw you off. We ordered both spicy and non-spicy beef shank noodles and we liked both. Beef was cooked well and the broth was rich, full of flavor. The beef roll was pretty good too. Not sure if we were just lucky today that we were seated right away. 2 large parties came in after us but we still got our food quickly. They have 2 round tables for large parties but they were already reserved for today. Since there are plenty parkings, comfortable seating, quality food, and above average service, my new question is why isn't this place packed with customers? The owner's mother was helping out her daughter by working as a server/expeditor that day. The friendly & charming Chinese lady tried to warn me about the extreme spiciness of the entree. I politely thanked her & explained that my paternal grandmother was Szechuan, and famous for her homemade numbing-spicy chili oil. Hence, I am accustomed to super spicy foods. The braised noodle soup was one of the spiciest soup I've ever encountered in the U.S., but the flavor, tender pieces of beef, and fresh al dente noodle were delicious. Located in the 168 Market strip mall, this tiny noodle shop is exactly what Vegas has been needing all these years. With a plethora of Chinese and Taiwanese restaurants old and new, there's a new kid on the block serving up hot bowls of noodle soup and apps. You go to a Chinese restaurant in Chinatown or anywhere in Vegas and you get handed a book for a menu with hundreds of dishes, desserts, and drinks that could overwhelm you. You order your go-to items and get a good meal and you're satisfied. At Noodlehead, the menu is simple: appetizers, noodle dishes, rice dishes, and a few dessert items. Two-sided page menu...done! Restaurants with a small menu like this excites me. It typically means they specialize in those very specific items and they're amazing. I was not disappointed by Noodlehead. Onion Pancake : Green onion/ scallion pancake that are thin, crisp on the outside but slightly chewy - the proper green onion pancake. I was perturbed at first when we didn't get a dipping sauce for it but on my first bite, I realized it wasn't necessary. All the flavor you need are in the pancake. I really wanted to get another order but I was sleepy 5/5 Beef Brisket Noodle: A super hot bowl of beef noodle soup (I kinda burnt my tongue and my mind exploded because I couldn't wait to slurp it up). The broth was fantastic. If beef noodle soup, pho, and another mysterious soup had a baby - it would be this beautiful bowl of soup. In typical beef noodle soup fashion, the beef chunks are fatty and tender. I wish there was more noodles in my bowl as this was the tastiest bowl of beef noodle soup I've had in this town. The portion size would be of a snack by American standards but a full meal by Asian standards. 5/5 for the flavor but 4/5 for being 1 noodle strand short. Szechuan Beef Brisket Noodle: Spice level is very subjective. If you've had Szechuan food, you know they mean business when it comes to spiciness. The kind of heat that burns your soul. The server said "it's not super spicy." Let's put it this way, if you eat habañeros as a snack, this is nothing. If you sweat and cry eating jalapeño poppers like I do, this is not your fun bowl of soup. My rookie mistake that made me lose sleep was that I didn't trust my gut and order more appetizers. Came here on what is apparently their Grand opening after 2 days of soft opening over the weekend. Noodlehead is the newest addition to the 168 Market plaza, next door to Kushi. Apparently the previous owner of the spot, Chef Ching, retired so a new occupant took over the spot ! Quite a bit renovated, brightly lit compared to previous We tried a few things on the menu SZECHUAN CHICKEN IN CHILI OIL - "steamed" (poach like texture) chicken in a special chili oil/sesame sauce topped with sliced green onions on top. Chicken was soft and the sauce was fairly light, sweet, and mildly spicy. It was rated a 1 chili but its very mild. Great dish to share ! (Green) ONION PANCAKE - Weirdly this came last (probably a kitchen mix up.. it was their first official day and all). Little denser than normal and could use a little more green onion and a little salt. Tasted yummy dipping in the above's sauce though Note - all noodle is house made by machine. Thin noodle by standard. There is an option for knife-cut noodle for an extra $1.50. Not a fan of the thin noodles. Always prefer thicker, more al-dente noodles. Thin tends to be too "soft" for my preference. This holds true for the 3 noodles we had ordered. BEEF BRISKET NOODLE - w/ beef brisket, vegetables, green onions and cilantro. Soup base tastes nice, light, and clean. Not as "strong" as other restaurants in town but still pretty decent. No spiciness. There is a "Szechuan Beef Brisket Noodle" where the waitress said it has a little spice and numbing spice to it too if that's more your preference. Tons of green onion and cilantro though ! Waitress states all broths boiled minimum 24 hours. PICKLED VEGETABLE AND FISH NOODLE - w/ fish, pickled vegetables, green onions and cilantro. VERY strong white pepper flavor, reminds me of a peppercorn pig stomach soup. "Building" spice type of spice. Was rated 1 chili but it felt way more than just a 1 at its maximal, if anything, probably a 3. Definitely didn't expect this one to be so spicy, especially in comparison to the "Yibin Burning Noodle" (that one was rated at 3 chili). Wished there was more pickled vegetables as that is our favorite. This would be nice on a COLD day/night. YIBIN BURNING NOODLE - ground pork, pickled vegetables, peanuts and green onions. Rated a 3 chili but felt like a 1 or less. Dry noodle from the chef's hometown of Yibin. Difficult to appreciate the flavoring of the toppings unless you shovel it all into your mouth from the bowl vs picking it up as it falls off. COCONUT JELLY - Very nicely made. 2 layers. Top layer like a coconut pudding, bottom like a coconut jelly. Both very similar in texture. Very smooth and not over gelatinized. Things were a bit unorganized. Service was a bit meh but it was their first official day. Needed to ask for water to be refilled. Chairs quite uncomfortable, felt like sitting on a board. Food was good though overall. Would recommend to try ! We're already noodleheads to begin with so nothing changed there. Thats the reason why we're interested in this place. heh.. This spot used to be Chef Ching's Kitchen but Chef Ching decided to retire and now, it is Noodlehead! We were able to try a few things: Szechuan Chicken in Chili Oil ($7.95) - Steamed chicken with a special chili sauce, peanuts, and sesame sauce. This was delicious and the texture of the chicken was fantastic. Even though it says steamed, the texture reminded me a lot of poached chicken, which was soft and tender. The sauce was sweet and spicy. Would definitely recommend this dish. (Green) Onion Pancake ($5.95) - This dish actually came to the table last, which was a bit odd. I actually was not a huge fan of their version because it was a bit on the drier side and it could use more green onions throughout the pancake. Beef Brisk Noodle ($10.95) - The soup base for this dish was done quite well. It had that lovely beefy flavor to it. It did not have the depth that other places may have, probably because they are still new and the soup hasn't had time to condense down as much. All their broths are cooked for at least 24 hours though. It also doesn't have the blood pressure raising sodium levels in their broth, which I'm quite appreciative of. Very enjoyable and definitely recommend. Pickled Vegetable and Fish Noodle ($10.95) - I love pickled veggies and I love fish! However, if you're not a huge fan of white pepper, I would not recommend this dish. This dish is super heavy on the white pepper and it can get quite spicy. Even though on the menu, they designated this as a 1 out of 3 on the spice level -- it is definitely more than a 1. Regardless, it was still quite enjoyable to me but would have liked another layer of flavor to shine through. Yibin Burning Noodle ($8.95) - This is a dry noodle topped with ground pork, pickled vegetables, peanuts, and green onions. I have never had this dish prior so I have no idea how it is supposed to be. The flavor of the meat was quite tasty but it did not stick to the noodles as much. So when I eat the noodles, there wasn't much flavor to them. I can't say that I enjoyed this dish as much as the others. Additionally, the dish was supposed to be a 3 in the spice level, which is their max but it was not spicy at all to me. Coconut Jelly ($3.95) - This was super delicious. I loved it. It was a jelly/pudding dessert. It isn't too sweet and a great treat at the end of the meal. The prices are very decent! The service was a bit slow because it is their first day and they are still trying to get through the kinks. Despite that, it was very friendly. One of the workers (we never got her name) was super informative about the business and dishes. The food was quite enjoyable and super filling. All are amazing and tasty options. They taste fresh and good. For entrees, the dan dan noodle is my favorite noodle dish. The portioning is great at noodlehead. It is extremely tasty, decently spicy and filling. It is pretty saucy, I will ask for less sauce next time. Also, Dan Dan noodles can be dry at other restaurants, Noodleheads take on the dan dan noodle is soupy but nonetheless yummy. The service is always quick and easy. First time to try this establishment after saw the review by the well known YouTube bolger Michael Chen . The restaurant has been opened for two months and it's located on the other side of 168 Chinese grocery store , which it's easily to be ignored by most shoppers . But I can tell you that their noodle dishes are their specialty. We ordered beef brisket noodle soups and beef shank pancake rolls and they didn't disappoint us ! The noodles are all house hand made that gives you a firm texture , the beef broth was savory and has rich beef flavour , the beef rolls are very tasty that reminds me the famous Taiwanese beef pancake rolls . Overall this establishment is clean , service was attentive , the lady seems to be an owner that welcomed all the guests walked in was very nice and talkative . With the volume of to-go orders from the app , they are seems to be doing well , I truly wish them good luck ! One suggestion is that if they can put up a huge sign outside of the restaurant to make locals aware of the business . That would be nice ! read more

I found this place was browsing around on Yelp. I really wanted to love it but the noodle soup I had was really bland. We decided to do takeout on a cold night, my husband had the chow mein and I had the szechuan beef brisket noodle soup. His was good, a bit salty but overall good flavor. Mine on the other head was super bland. I got a 2 spice level but honestly it tasted like a 0. The soup was really oily and the only part I enjoyed was the tender meat. I had to add a ton of sriracha in just to get to a better spice level. Maybe I'd try the different menu options next time but it's a pass for me on the noodle soups. read more
