An unforgettable visit to Palmaz Vineyards, and a huge thank you to Blake for delivering an experience that was as impressive as it was immersive. This is not your typical Napa tasting. It leans technical in the best possible way, and I was all in. There is so much to geek out on here, from the engineering to the data-driven winemaking approach. The winery itself is built into Mount George and descends roughly 20 stories into the mountain, which is just wild when you see it firsthand. It feels part Bond villain lair, part innovation lab, and entirely unforgettable. Blake guided the experience flawlessly. Deep knowledge, great energy, and the ability to translate complex concepts into something engaging without ever losing the sophistication. You can tell he knows his craft and genuinely enjoys sharing it. The on-premise chef was exceptional. The bites were not an afterthought. They were thoughtfully executed and elevated the wines even further. This was a true pairing experience, not just a tasting. I also loved the story behind the owners and what they have built here. It adds another layer of appreciation to an already standout visit. On a lighter note, I have it on good authority (not from Blake!) there may be karaoke here from time to time. If that is true, I am absolutely ready for my invite. "Don't Cry for Me Argentina" might be ambitious, but I will gladly step up for a strong "Bésame Mucho." One of the goals of this trip was to identify a standout winery with Latino roots to recommend to a VC investing group. This is unequivocally the spot. What a BEAUTIFUL and unique experience. You can't get this wine outside of the vineyard as its small batch. They give full creative authority to the wine maker and every year is a new mouth experience! If you're into science, I don't want to give it away but do the tour and enjoy COMPLETELY nerding out each piece of the vineyard is strategically planted and blind tasted - very cool and amazing varietals. Our VIP experience with Jordan was nothing short of incredible. He greeted us at the door and we started on the top floor and had a breathtaking view with our first tasting. He shared with us so many memorable stories and history about the family and how they've progressed over the years. The tour itself was amazing as we went through different floors; cleanliness, organization and operations were so cool to see and walk through. The technology they had was unmatched and so impressive. Lastly we were brought to a beautiful room with our food and wine pairing. Each bite perfectly paired with their selections of wine. Every bite was delicious and I wish I could eat more of their A5 Wagyu beef! This was definitely worth the trip and I would highly recommend it! WOW. I wish I could correctly articulate how fantastic Palmaz was. You are warmly welcomed as soon as you arrive and there is a spacious waiting area. If you are a technology geek and wine lover, this will be heaven for you. I understand the expensive price tag, but what is $150/pp feels like $500 with beautiful and tasty accoutrements. This was winery 4/4 for us on our trip. Cannot recommend Jordan enough. He knows his stuff, doesn't come off as "too cool for school" and knew the answer to every question. There may be too many wonderful wineries in the Napa Valley to enjoy in a single lifetime. Thankfully, the wife and I received an amazingly sage recommendation to do a tour and tasting at Palmaz Vineyards. It easily became our favorite experience during the wife's and my all-too-brief time in Napa. Where do I start? We reserved the Private Tour and Portfolio Tasting ($150/person) and were expertly guided on our visit by Teresa who welcomed us like family and provided wonderful insight and hospitality throughout. I loved the intriguing origin story of Palmaz Vineyards founded by the inventor of the balloon stent and operated by the entire family. I loved the breathtakingly beautiful views of the valley from the property. I loved the high-tech winery operation using gravity-flow winemaking processes in its 18-story cave complex built into the side of Mt. George. The cave complex reminded me more than a little of a Bond villain, secret, underground, missile base with its sheer size and prevalent use of technology. Finally, I loved Palmaz's beautiful wines. Our tour culminated in a killer tasting of some of their current releases of reds and whites thoughtfully paired with delicious bites some of which were made with domestic grass-fed Wagyu beef from the Palmaz Family's cattle ranch. Palmaz Vineyards offered a very unique, if not singular, overall experience. Impressive is the word that best describes it. As it was done for us, I'll pay it forward by giving Palmaz Vineyards my strongest recommendation as a must visit for anyone passionate about food and wine. read more

I visited this winery after being encouraged to stop by by the winemaker's daughter. Unfortunately, when I arrived and rang the bell, I was not welcomed in and was refused entry by another woman working there. The interaction felt dismissive and uncomfortable, especially after being invited to visit. As a customer, I expected a more professional and courteous experience. We had a very disappointing experience with this winery. We drove nearly 50 minutes to visit, and tried calling them five times beforehand. We even left a voicemail, but no one returned our calls. When we finally arrived, the property gate was locked. We used the intercom, and the person who answered was extremely rude. I explained that we had tried multiple times to reach them and had made a long drive, but he simply stated that an appointment was required. I politely asked if we could at least take a quick look at the property, but he refused in a very dismissive manner. There was no understanding or courtesy shown, despite the effort we made to visit. With the tour you learn about how the Palmaz family went from the development of a heart stent to owning a winery and producing wines using both science and art. Learn how this winery tries to use gravity as much as possible through the winemaking process and how they ferment the wines tracking data on each batch and how they age them in different barrels stored with in the mountain. Splurge for a tasting pared with bit sized seasonally influenced snacks that really accentuate the beauty of the wine. These wines can definitely been cellared for some time to really let them blossom. Driving up to the winery through the vineyards is part of the experience in itself. The views are breathtaking as you drive through the property to reach the winery. Throughout the tour you learn so much about the family, and you can really see their love for wine and great care for the winemaking process. This family and winery is spearheading a lot of innovation in the industry and it's incredible to see. The tour and tasting was very intimate - we were completely alone walking throughout the whole winery and the tasting was conducted with solely our host in a private tasting room. You are with your host for the entirety of the tour and tasting, so you are able to learn a lot from them. The tasting was phenomenal. The bites paired with the wine really pair nicely and you really take away a new understanding and appreciation for pairings. Wine using modern technology aka how they/them made wine hundreds of years ago using gravity flow downward for racking and eventually storing/ aging the wines at proper temperature. The book's recommend a very low temp. I think too low for most North American consumers. Most are drinking 80 F red wine, a wine at 60-70 brings up the aromas and the wine opens at a steady pace. Tangent alert. That perfect temp is dug down below Palmaz Vineyards, others use caves or cooled walk in cold storage. The wines here are complex flavors from different phenolics created by the grapes and the fermentation. Flavor profiles including blackberry, cassis, blueberry pie filling, old leather, mocha, one had a distinct espresso nuance that was more pronounced mid palate through to the finish. The finish is long and lingering of dark berries, menthol (eucalyptus) love that characteristic in Cabs and Bordeaux style blends. Medium acidity- nicely pair with steak, roasted meats, and hearty pasta / vegetable dishes. Remarkable program - and to walk through the process and see it in action. It's different than the Sterling walk through which is also well done and chill. The Las Brasas was in my mind when I wrote those tasting notes above. Awesome wines - not everyone is familiar with- if you don't mind a splurge these are too quality worth it. read more

WOWWWW. What an amazing tasting experience! Palmaz is definitely one of a kind and best described as a winery if NASA and a winery had a baby! The winery is tucked in the hillside of the Coombsville AVA and has the most stunning views from their guest levels accessible by guests. The entire winery functions are inside the mountain and gravity fed. The founder, Dr. Palmaz, invented the first balloon heart stent, so obviously money was/is not a limitation for the winery and is truly a passion project. Their wine making process includes technology every step of the way, from 3D scans for sorting grapes to live data of fermentation to year over year weather data. Tastings are done by appointment only so all tours and tastings are essentially private and very intimate. Our host was David and he was fabulous!! Super knowledgeable and was able to explain everything in a non-pretentious way. The experience starts off with a glass of wine and a mini hike up to their highest lookout for the spectacular views. Then you work your way down inside and learn about their wine making process. The majority of the tasting itself is seated in a private room and paired with bites of food that compliments the wine. Truly one of the best wine tasting experiences I've done and definitely worth the price! read more

Palmaz Vineyards stood out to me as I was looking for a full winery tour that had a mix of reds and whites with food pairings in their wine tasting menu. For $150 per guest, the tour started with a welcome drink, followed by a tour of the winery and a tasting session consisting 6 glasses of wine. My favorites were their 2017 Riesling for the whites and 2014 Cabernet Sauvignon for the reds. The winery tour was informative - learned about the family who run the winery, the history and their wine making process. It was just me and my partner for the time-slot I booked so the tour felt intimate and personal. As someone visiting from another country, I thought it would be difficult to secure an appointment since I couldn't make a call, but they were very responsive when I contacted them via email. Palma's is a beautiful winery in the Coombsville AVA in Napa. They have an 18 story winery in a cave operation inside a mountain . She presented the history and background of the winery in an engaging manner and her description of their brilliant technology was easy to follow. Lost potential. This winery is incredibly beautiful, the views, the landscape and elevation is amazing. However, we only saw it on the drive up. The tour is cool to learn about the technology Palmaz uses but the inside of the complex felt just that, a complex. It was sterile and the ambiance was a bit lack luster. The wines were just OK. I wish we could have spent more time outside, had the tasting outside instead of being in a conference room looking at slides on a wall. read more

We've just returned from the most amazing whirlwind experience in Napa. On Friday we had a private tour of Palmaz with Diana. Jordan did our tour at Palmaz. We called early on sunday and could secure a tour on the same day. When I was told its $100, I was a little hesitant, but the tour and tasting was completely worth it! When we arrived, we were promptly greeted and the tour started right away. The technology that they have used to redefine wine making process is very impressive and really something unique. Using gravity, projectors, drilling into the ground are all very unique ideas which I have not seen before. We ended the tour in a tasting room with great views and small food pairings. If you're in IT, Ag, mechanical engineering or are just a tech junky this place is pretty impressive from a controls standpoint. If you just like great wine, it's still impressive. The wines in the tasting after tour were great but it was the food pairings that were the big difference maker. They were all excellent but the Ewephoria sheep's milk cheese w/2015 Cab pairing was mind blowing. I thought $100 for a tour/tasting and it being the only option to visit may be a bit much but couldn't resist my curiosity with this winery concept and I thoroughly enjoyed the whole experience from the dry Riesling aperitif they welcome you with to the tour to the wine tasting and presentation. Bottles are expensive but worth getting one to keep for a while and enjoy on a special occasion. read more
