Inside, the dark chocolate was rich and evenly distributed, adding just the right amount of sweetness without overpowering the buttery pastry. It's an excellent example of a classic done well, with careful attention to both texture and balance. The classic croissant was equally impressive. It had a rich buttery aroma the moment I opened the bag, with a crisp, golden shell that gave way to a soft, pull-apart interior. The pastry felt light despite its richness, striking the balance that makes a truly great croissant. Every layer was distinct, and it never felt greasy or overly heavy. Since everything is baked fresh in relatively small batches, timing your visit makes a difference. Many of the most popular pastries sell out well before noon, so arriving earlier gives you the best selection. Even during the morning rush, the staff kept the line moving efficiently, making it easy to grab a box of pastries without a long wait. Nouvé Bakery is a fantastic addition to Lexington's bakery scene. The quality of the lamination, the careful execution of the classics, and the fresh-baked experience make it well worth the trip. The pastry was perfectly flaky and was filled with a generous amount of pistachio filling. If you are looking for good bread, this is definitely your spot, but if you're trying to find anything else, I wouldn't necessarily recommend this **Replying to the owner** I seriously don't understand owners and employees on yelp who play victim when it comes to negative reviews. The customer had a negative experience, they describe it truthfully on yelp. Yes, the 3 star review negatively impacts the business, but ultimately, that's how reviews work, and you should take negative reviews as constructive criticism, and reply apologetically and constructively instead of being rude and defensive. As they say, customer is king. To your point that I didn't review your main menu focus sandwiches, despite your fact that a large portion of your building is dedicated to making bread, and no real area for putting together sandwiches. Either way, it wouldn't matter, the cookie I had was not great, and I reviewed accordingly. Responding to negative reviews in a defensive and rude way steers customers away from your establishment almost as much as a negative review does, if not more.

At approximately 1:00 p.m., I was outside waiting for my friend while she finished making her purchases. As she walked out of the store, she tripped over a bike rack positioned along the walkway. She fell hard, injuring and bloodying her knee and scraping her hands. She was visibly shaken, and the pie she had just purchased was destroyed in the fall. I went inside to tell an employee what had happened and to ask whether the pie could be replaced. While I was speaking with the employee, my friend came inside, limping. My friend asked whether the employee had heard what had happened. Rather than expressing concern or asking whether she was okay, the employee's reaction struck both of us as surprisingly dismissive. My friend then asked whether she could have some ice for her injured knee. The employee said no and walked away. Because I was surprised by that response, I asked another employee who was stocking muffins whether he could get some ice for my friend because, I explained, she had just fallen and injured herself. He also indicated that he could not. The first employee later returned and explained that there were no more pies available, and my friend was refunded for the pie. What happened next was the strangest part of the experience. As we were leaving, the employee came after us and quietly told my friend that she would get her some ice if she promised not to tell anyone. My friend accepted the ice. I cannot explain why providing ice to an injured customer apparently needed to be done discreetly. What bothered me most was not simply that my friend fell. Accidents happen. It was the response afterward. A customer was bleeding, shaken, and asking for something as basic as ice. I would have expected someone to ask whether she was all right and to offer reasonable assistance. Instead, the response we experienced initially felt defensive and indifferent. The pie was refunded, which I appreciate. But the overall interaction left such a negative impression that I do not intend to return.
