Coal Fired: The crust and bake are the most important part of a pizza and they nailed it here on both counts. It had a nice fermented flavor but wasn't tangy or "raw" at all. The bake was perfect. Crispy on the bottom and rim with nice leoparding (spots) but the crust interior was pillowy soft and just chewy enough. The overarching theme is "salty" in the the best way. I love salty foods and they use a lot of low-moisture, aged cheeses that amp that aspect up. Bar Pizza: This was pretty good, but felt like it didn't know if it should be deep dish or tavern? Wasn't quite as thin as a midwest tavern so you didn't get the crispy bottom I love, but wasn't thick enough to give the nice, fluffy focaccia chew. Crispy edges were amazing, though, as you'd expect. The middle got really soupy and if you wanted something topping-heavy like "The Sarge" I can see it turning a coal-fired version into floppy mush. It still hurts my soul paying ~$30 for a pizza, even 16", but this is a place I would go to with friends for a special occasion and split a pie or two.
