We started talking about the Pasta Alla Norcinia and I told him my relatives are from Norcia Umbria and that I've made it several times. I told him I use Italian sausage and the manager said that the chef uses actual wild boar sausage. He said the chef has amazing connections for ingredients like this. They also have a full time pastry chef on staff and all their deserts are home made. I was informed that the chocolate ganache cake has had the longest run on the menu and never seems to come off so I tried that.
