    The woman who took care of me, I believe her name was Becky, went above and beyond. I really enjoyed her hospitality. [[HIGHLIGHT]]What drew me in initially, was the look of the place. It had a dark, funky atmosphere that would be fun for hanging out with friends.[[ENDHIGHLIGHT]] I did a solo tasting but would love to come back with friends some time. The wines weren't spectacular but still enjoyable to drink [[HIGHLIGHT]]a great place in the Barlow to relax, hang and be taken care of[[ENDHIGHLIGHT]]

    If you're looking for a quick escape from the city. PAX in Sebastopol is just far enough to feel like a getaway, but close enough for a spontaneous wine day. soulful, add this to your list. [[HIGHLIGHT]]The space. It's not your typical tasting room. Think vintage vinyls, local art, warm lighting, and couches that make you want to stay awhile.[[ENDHIGHLIGHT]] I came with my family and accidentally ordered the whole menu. No regrets. We did three tasting flights. California Roadtrip, Sunset Noir, and Syrah is King. Each pour had a personality, and every sip was worth remembering We paired everything with their cheese and charcuterie board. Brie, sardines, figs, almonds, and crusty bread with whipped butter that we couldn't stop reaching for. Our server was the sweetest, and the whole experience just felt... Just good wine, good people, and a place you'll want to return to.

[[HIGHLIGHT]]From the moment I walked in, the atmosphere felt relaxed, stylish, and welcoming, great music...[[ENDHIGHLIGHT]] A huge shout-out to Ula and Becky, who made the visit unforgettable!!!! Their knowledge and passion for the wines brought every pour to life, what a friendly energy!! I tried a beautiful Syrah and Gamey The wines were beautifully balanced, and truly showcased the character of the region. I loved !! I Highly recommend Pax tasting room while visiting this interesting place called The Barlow in Sebastopol,CA GREAT JOB PAX !!!!

    Good for natural wines (carbonic maceration). I appreciate that PAX is mindful of green growing practices and minimal intervention wines. While I support organic and holistic farming practices, I will preface by saying that I do not enjoy natural wines. I personally prefer traditional fermentation (where the winemaker adds yeast to control the development of the wine) and so, my reviews are specifically regarding those wines that were made using traditional methods, as I did not drink those made with carbonic maceration. In order of personal preference, my favorite wines from the Classics and New California flights are: 2022 Chenin Blanc, Lyman Ranch 2022 Trousseau Gris, Fanucchi-Wood Road 2022 Pinot Blanc, Dutton Ranch 2020 The Vicar, Grenache-Mourvedre 2020 Syrah, Grizzly Peak The tastings were overpriced ($80 for 2 tastings), but the ambience is nice.

    Okay, can I just say- I love this place! This is a nice little tasting room within The Barlow and they have some interesting tasting, and sustainably produced wines. Their wines are produced with minimal processing. We have visited here on a few occasions, the most recent after the sip and stroll event. Dawn was great! She was super friendly and helpful. She's just good people, great conversation and knowledgeable. Aside from what's been stated already, the tasting room itself is such a pleasure to visit. It's very trendy rustic, country classy charm. This is a great spot to grab a glass of wine or two or a flight! I definitely recommend if you're in the Sebastopol area.

    Place Rocks - Love the wines, true creativity with a deft hand. Pax, Joilie-Laide, and the several other co-working wineries are the Very Current Class of Brilliant winemakers experimenting with what I call Outlier grape varietals- less known however you see them on wine lists and most often the best most fascinating wines of any menu. I love a good Cab sure, but a Mourvèdre/ Grenache wine with depth and complexity is wayyyyyyyyyyy more interesting. Tonight I ran across the smiling very knowledgeable service of Julie, Josh, Lance and all the happy customers- truly bizarre to be amongst these people at below 50 F, more than chilly. Brought my stressful week to the perfect end. Slainte!!

    They had a nice outdoor space for the tastings, very chill environment. The tasting wasn't as "information forward" as one would expect but if you asked, the server provided the details. Unfortunately, they messed up our take home order and even forgot the shipment order which was an incredible bummer on both fronts. Disappointing.

    I love the relaxed energy at the winery and wine tasting room that is Pax Wines. One of many wine specific establishments located in the Barlow, which is a shopping, dining and drinking complex located in Sebastopol, California. With roll-up garage doors that immediately greet visitors, indoor seating featuring marble topped counters, bistro tables and chairs, and comfy leather sofas, as well as outdoor seating for those who want a little sun, Pax Wines is welcoming to all who come. I had come to the Barlow complex with a couple friends who wanted to enjoy a weekend of lazily walking around and sitting with a few glasses of wine and Pax Wines was one of the many stops we would make this summer afternoon. After seeing they had their sofa open and available for seating, we were down to peruse their menu and enjoy a few glasses of vino. One of the first things we noticed is that they have plenty of staff at Pax Wines, ready to present us with said menus as we sat, as well as plenty of staff members behind their counter ready to take the orders of anyone who approached. The wine list menu at Pax Wines is filled with wines sourced from vineyards located locally in Sonoma County as well as from nearby Mendocino County, and they are sold by the glass and the bottle, and they have a couple of wines sold on tap as well. When asking our tasting room associate their recommendations, I opted for a six ounce glass pour of their 2020 Syrah from The Bench Vineyard located in Clement Hills, aged in French Oak, with aromas of plums and violet, this medium bodied wine had a subtle peppery kick. My friend opted to order a six ounce glass pour of their 2019 Gamay Noir which is sourced from the Sonoma Coast. My wine cost 10 dollars for a glass, while my friend's wine cost 13 dollars for a glass, and our total bill with tax and tip was a reasonable 28 dollars for two generous pours of wine. We were never rushed as we sipped and chatted for over an hour at Pax Wines. Obviously, a return visit is a must for Pax Wines as the vibe which is enhanced by the vinyl tunes playing on their turntable, this may be the perfect place to spend a lazy afternoon sitting around, napping and then sipping some more. With tasting flights for those who make just one stop at the Barlow or wines by the bottle for couples or wines by the glass for individuals, the wines sold here have a nice balanced finish without overloading your senses. With additional selections of local cheese, charcuterie and even tinned seafood such as sardines and octopus, one would feel that you're enjoying a wine pairing in the narrow streets in Europe, instead you're in a modern warehouse district of Sebastopol, California!

    We visited Pax Winery for a seated tasting. The presentation and preparation was good -- we were all quite pleased. The inside of the tasting room is super cool -- very hip and definitely different than your standard winery. Loved the decor. I wasn't blown away by the wines, but they just were not my style. Nevertheless, if you're interested in a hip place to taste some nice Syrahs, give them a shot.

    What a fun little gem! My friend and I were walking around the Barlow trying to decide what to do with our day. We stopped by this winery and they were able to seat us right away! We were sold. We did the basic tasting (I don't remember what it was called but it's the first one listed). Every wine was amazing! The entire staff was awesome and kept tabs on us the entire time. The only thing that was kind of funny/weird, it comes with a complimentary charcuterie plate. However, it is just one cheese and 2 types of meat. When we first saw it we were like "Oh, they must do like a pairing with each wine". Nope, that's all you get. It was our mistake for not understand and that cheese goes REALLY well with the first wine so I can't complain but others should know! All in all, we had a great time and enjoyed some amazing wines we had never heard of.

    This is my first time at Pax wines and I honestly didn't expect much because we were just strolling around the Barlow and wanted to find a place to sit and maybe some drinks while waiting to get to our dinner reservation later. I was hoping that they would have more food selections but reality check... we are still in the middle of the pandemic and this is already refreshing to be out and about so I can't complain much. My husband ordered us some wine and a small plate item. The chorizo was pretty good + the crackers from Rustic Bakery has always been my fave and they paired well with our Rosé. The outdoor seating was pretty comfortable but it could get a little chilly so we moved to indoor seating area later. The staff members were super nice and attentive. Our waitress was hilarious and patient with us. We had a couple more glasses before heading out to dinner. I'm a foodie but I'm not a wine expert so I let someone else in charge of ordering alcohol for me but all I could say is that everything I had tasted wonderfully awesome and I don't normally say much about drinks ;) Would def come back if we are in the area again! Oh BTW, check out some artworks on the walls and they had some available for sell as well!

    This is a fun place to stop at if you are visiting The Barlow. They have a good variety of wines to chose from. The service was very friendly. Decor and seating area was cozy and gorgeous!

It's inviting vs the stuffy atmosphere some places have. BABAGANOUSH PITA we got it for the kiddo expecting it to be run of the mill stuff you get. But the babaganoush had the extreme rich flavors of smoked eggplant and felt like almost half an eggplant went in there. Not diluted with tahini, garlic, just pure flavors of eggplant with tanginess of sumac. LITTLE GEM SALAD WITH RAINBOW TROUT was hearty, leafy and very refreshing. The pickled celery was the surprise. HAMACHI CRUDO - beautifully assembled with thoughtfulness, light, refreshing. A bunch of flavor bombs in there so each bite is an adventure. Basil making it refreshing, earthy crunch from hazelnut, sharpness from green onion, sweet tart kiwis. I think a bit of citrus would make this a superstar. Mandolin shaved limes perhaps? GRILLED MAITAKE MUSHROOMS - ok I think this was the chefs most technically impressive dish, with an exercise in playing with bitter profiles and turning it into a master piece. Grilled maitake gets the char from the grill is the first flavor layer, it's woken up by the wild thyme from the zatar. Next the Japanese turnips bring the second dimension with earthy beautiful bitter notes on a bed of a creamy tahini based sauce. It's finished with fresh parsley to bring a fresh element to it. Great stuff. Could raddichio be added to make this more challenging? I saw those crunchy POTATOES and I got them even after eating the meal lol. Do yourself a favor and just get them - they're hot, crunchy and perfect to pair with the vegetables. Finally we got their chocolate mousse with bruleéd bananas sorry couldn't take a picture before it was all gone. Great way to wrap. The staff were all super friendly and helped with picking things from the menu! I got the mystery glass of wine and they had made a fun game out of it. The Beaujolais was great too. Overall when you're surrounded by these amazing farms, vineyards and ocean - no better way than to bring them together - kudos to the creators of the Redwood for making this place with intentionality. I wanted to get the squash, duck pâté, spring pea salad, tinned fish items as well, I guess for next time!

Although the flavor profile on the salmon with citrus and saffron was not to my taste it was expertly prepared. All that said we received some of the most neglectful service I have ever had from a very nice server, who for no obvious reason left us alone for most of the meal. It got busier as our time stretched on, but it wasn't slammed and there was plenty of staff. We ordered plenty of food including two bottles of wine. We had to completely finish all of our appetizers before being asked about mains and we sat with empty glasses for ~20 minutes (possibly more) before we flagged someone down to get the second bottle; a bottle we left half drunk because it stretched our evening so long. I might give this place another try but honestly it was one of the most drawn out anticlimactic $400+ birthday celebrations (without desert) I have ever had. We could have done better at home for less.
