The reviews about meat quality are accurate. It's phenomenal. The reason for two stars is simple. Steve - the "bark is worse than his bite" manager is a first class a$$whole. We came in on Christmas Eve to pick up a 6 rib prime rib we called in and reserved four days prior. This isn't a tiny order, it's a $700 piece of steak. We added on a few sausages and other items. Enter Steve - "Who did you give your order to?" Us - "A woman on the phone, didn't ask her name." Steve - Rolls his eyes and says "She's meaningless. You'll have to wait, I don't know how long. I have other orders I haven't even prepared." "Can we come back in a few hours?" "I don't know if we will have it then either" Meanwhile, a young man of color working behind the counter and helping us dared to ask Steve a question. "Do we have any more breakfast sausage". Steve immediately told him "that's a dumb question". I had my wife thank the young man for trying and tell him to forget it. My recommendation, avoid this place operating on the entitled attitude of "I'll always be busy in Southampton". Eventually they won't. Try Justin's Chop Shop in Westhampton instead. Some dude overcharged me for old meat that was mostly fat. Crummy service and lousy product. Not the old place I remember. Won't be back. read more

This place has ALL THE SAUSAGES. But we already were having ribs for dinner, so we only bought seven kinds. We got: Bacon bourbon horseradish sausage. Spanish chorizo. Hot Italian sausage. Sweet Italian sausage. Pineapple cherry chive chicken sausage. Buffalo wing bleu cheese chicken sausage. Chicken and waffle sausage. Honestly, I would only recommend... ALL THE SAUSAGES. They were all delicious. Although, it's tough to tell them apart (before you bite into them) after they are cooked. Try and have a system, so you know what you're eating. But you should definitely get together with a bunch of your friends and have yourself a sausage party. I'm pretty sure there are no alternative meanings for that term. read more

If you thought this was the best butcher shop you have ever been to, then get excited because it just got better. As of today they opened up a grill so they are grilling up their delicious burgers. I got the philly burger and my dad got the cowboy. It's not that the burger is topped like a Philly cheesesteak. Rather, the cheese, peppers and onions are mixed into the actual patty. Also-- the cole slaw is fabulous. Your very standard slaw. A++ I'll be sure to take pics next time. And if you don't want to go for the burger, go to pick up the meat. Buy the NY strip steaks, apply a light layer of olive oil then add a thin layer of the dry rub (ask the butcher for a small amount) on each side for a marinade. Let marinade sink in for about 30 minutes. Before you place the steaks on a very hot grill make certain the steaks are at room temp. Grill the steaks until they reach a temperature of 109 degrees ( yes you will Need a meat thermometer). All of your guests will go oohhh, aahhh, yummmm, and then ask "where did you buy this meat." Peconic Prime Meats!!! If you slice it you will not need a whole steak per guest. Sliced steak is very attractive on a large platter especially when it is cooked to perfection. PPM's chicken is very fresh too. Remember vacuum packed Bell and Evans chicken smells like rotten eggs. I just ruined a dinner by using vacuum packed chicken. read more

My family doesn't get to Southampton very often but when we do, I always stop here for sausages. They've got all kinds of top notch meat and poultry both prepared and not. But the stars are the sausages! So creative and interesting. I asked if they had their chicken and waffle sausages when I came in last week and one of the GENIUSES who run the place said he'd made so many over the summer that it was taking away from his time to create new flavors. We got bourbon maple horseradish pork, maple breakfast pork and Piri Piri chicken. Each one so distinct and flavorful. Can't say enough good things about this shop. Was worried when they took over a few years before but they have more than risen up to and exceeded their predecessors in the space.
