    3 knives Gyotu, Usuba and Sabaki

    Read some of the reviews but was not deterred, came by and had these folks sharpen some of my new knives purchased in Japan, 3 knives, a Gyotu (Chefs knife), a Usuba (vegetable knife) and a Sabaki (pairing/petty knife), the person in front was very knowledgeable and helpful, dropped em off at 10am picked them up around 3pm same day. They do have their own sets of knives you can choose from as well as accessories to go with all these knives, casings, holders, shields pretty much everything you need whether your a professional chef or home chef. Their knowledge though was through the roof, they offer you the best advice and options in regards to all cutlery. All knives I got back I tested with the paper test and all passed with flying colors, they did state before use to wash them due to the compound they use to sharpen them, wash in warm water and hand dry if you can for longevity of knives. Happy I came by and I will be back to sharpen some of my older knives that I use around the house for daily use knives ***** several options to choose from price $ for sharpening if your buying knives $$ depending on what your looking for service ***** very helpful ambiance ***** knives upon knives and even more knives

    Summary: Avoid if you actually care about your knives and basic customer service. This review is for the service I received at the Campbell farmer's market from Perfect Edge; I cannot speak to the in-store experience. Perhaps most of the positive reviews on their page are for in-store services, hence different from my experience. I used Perfect Edge's service twice at the same farmer's market, and both times the service was sloppy. Perhaps they think the average Joe at fairs does not care about their knives or the service, but if that were the case, we would buy kitchen-grade knife sharpeners and not take the time to bring our knives to Perfect Edge. The first time, they plain forgot about me. They told me to come back in 20 minutes. I came back in 20 minutes and asked about my knife. The lady told me it should be ready in a few minutes if I had given it to them 20 minutes ago. So I waited right in front of their truck. After 15 minutes, I asked again, and she checked with the guy. They had forgotten about me. I waited some more time and finally got my knife with a "sorry about that." No gesture on the price or for the time I wasted there. Sure. Today, giving them another go, things like that can happen, whatever. I handed over 4 knives. Upon getting back home, I washed them and noticed 3 of them were just butchered. In order of increasing concern: 1. Inconsistent blade grind thickness/height (visible in picture 1, a little bit hidden behind the red box). Note that there are other reviews on the page complaining about this. 2. Scratches on the blade choil (visible in picture 1). The knife clearly touched the grinding wheel there, but they shrugged it off. 3. Blade profile changed on the paring knife (visible in picture 1). My blade is now straight-ish instead of having the original curve. Note that there are other reviews on the page complaining about this. 4. They ground the blade guard for no reason on the two other knives (visible in picture 2). Perhaps it was just easier to act like it wasn't there to grind the blade. I now have a sharp blade guard--great. The profile of the new blade guard is not even symmetric (visible in picture 3). One side has a long edge; the other is short. Anyway, as the foreword suggests, at the farmer's market, at least, I don't think clients are taken seriously. The job is sloppy; the price isn't. I do not recommend their mobile service. Note that I've tried to resolve the issue with the owner over text. This review comes after 9 days of being left on read while the owner stalled the discussion, repeatedly asking, "How are the knives working?" instead of acknowledging any of my remarks. Some remarks were answered with excuses related to the way their tools work, for example, the scratches in picture 1. Note that this is the second time the knife went through them, and it was not an issue the first time. The business tends to avoid accountability for errors and does not take necessary steps to rectify them. Hope this helps.

    Do you currently have same day sharpening on Saturdays?

    No, same day sharpening is M/W/F 10:00am-4:00pm. If you are able to go to the PaloAlto Farmer’s Market or the Temescal Farmer’s Market your knives can also be done the same day.

    Is there still a storefront on South Boulevard? I drove by a few months ago and it looked like everything was shut down ... and now I need a saucepan!

I had to approach the cashier for assistance, three times. One of the older ladies would follow me to the shelf I had been standing at for quite some time. Provide me some insight, but would express relief to return to the cashier after answering some of my basic questions about recommendations for 1.5 or 2 quart saucepan. Each of the two cashier's I'd talk to would either reply with "I'm not sure" or "this is a good one, which is something I already have at home". Or "we never have sales and never have online discounts, I've never seen this coupon before." (As I look away at the red markdowns on the list) Workers here are unenthused about the product or working in a small and unorganized showroom. Or felt like they didn't want to assist me being the only millennial in the store that night, I couldn't help but come up with assumptions as to why I wasn't approachable. I walked away with relief I had not invested on a product at this store as I had experienced a big difference at the W&S store at Valley Fair the next day. Take notes Hillsdale.

She was beyond patient with us and always made us feel welcomed, dropped what she was doing as though we were her only clients - even before we decided to go with Gilman's for our needs. She never once made us feel we were interrupting her when on occasion, we'd show up unexpectedly. Cheri always provided exceptional customer service in every way that was beyond compare.
