We had originally hoped to dine in Pueblo, as we were celebrating our niece's graduation from CSUP, but were unable to find a place that could accommodate a part of ten, even three weeks in advance, so we decided to drive 40m to Phantom Canyon Brewing. Imagine our surprise to find that we were being seated at two (albeit adjacent) bar tables that could not be pushed together bc they are bolted to the ground! When asked why we weren't being seated at one table, we were told first that would should have clarified, when making the reservation, that we wanted to be seated together--as if it's abnormal, when making a reservation, to assume the party will be seated together. When that response failed to satisfy us, we were told that we should have been transparent with regard to wanting to be seated at a regular table, but we live on the other side of the country, had never been to Colorado & had no idea the various types of seating in this establishment. Needless to say, it soured our opinion of PCBC, as we don't get together as a family very often--we live in four different states in two countries--& will likely never return. To be fair, the hosts working that evening did seem genuinely remorseful, but the fact that they began their "apology" to trying to shift the blame to US & made no efforts to actually make amends--a free drink or dessert for the grad would have gone a long way--is inexcusable. read more

We as in a party of about 13, we're in there last Sat 4/12/25, was excited to see this place. We were visiting my son who's stationed there in Co. from SoCal, Tim was at front, very friendly(he said he was kinda new). We were seated and our waiter was Anthony, he seemed nice at first, we broke it down into who would be on each check, he took our drink orders, and then we had a couple come shortly after, when they tried to order food, he replied he was only taking drink orders right then. A couple of the people that were with us stated he was rude. I'm not sure if he was just overwhelmed or what. All in all the food was Fabulous and so were the drinks & Beer. This is my favorite brewery to go to after work with some friends / coworkers! I came here on a Wednesday evening around 6 pm. The place wasn't too pack but definitely had a huge crowd of people. Because this is located in Downtown, parking can be rough so if you're planning on coming, make sure to give yourself a little time for parking! The server was super kind and patient. Our server was very attentive & the food was served hot. They have a few flagship beers and then offer a multitude of seasonal selections on draft. The portions quite large. My husband and I should have split the Reuben sandwich! The meet, cheese, kraut ratio was a bit meat heavy, but the flavor of the sandwich was delicious. I tended a big event hosted at the Phantom Canyon brewery on September 25 and it was perfect. The service was excellent, the food was very very good, served family style, and the ambience was excellent! It's a brewery with many levels and many features so don't assume that you're seeing the whole thing When you just walk in on the ground floor. We were seated fairly quickly & our waitress Elizabeth K. was right there to get the kid's drinks & orders. My husband & I had time to peruse the menu (both good & drink). I chose the Roasted Beet Salad adding chicken & my husband chose the Special- Funly Chicken Sandwich. Both were a great portion, fresh & tasted great! My hubby had the North Star beer and really enjoyed it too. The kids all got sliders with fries & downed their burgers. *if you have a hungry kid or a slightly older kiddo the sliders are on the small side so it may not fill them up. The noise level was perfect for an enjoyable lunch with kids - we didn't have to worry about them being loud or disturbing anyone around us. Elizabeth was amazing.
