I used to really love this place, which makes it even more disappointing to say the quality seems to have fallen off. Pho Bac Sup Shop in Seattle's Little Saigon was our first visit and it definitely made an impression. A quick heads-up: parking is limited, and be cautious of the homelessness in the surrounding area. Once inside though, the experience is a total contrast. The space is very hipster-forward, both in décor and concept--you can get your pho fix with a cocktail, and there's even a giant tree in the middle of the dining room. Such a cool, unexpected vibe. We ordered the rib pho, which was a must. The broth, oh my... the broth was hearty, deeply beefy, and so good we drank every last drop. We also tried the pho trộn (dry turmeric noodles) out of curiosity. I worried the turmeric might taste medicinal, but it was the opposite--well balanced, flavorful, and hitting all the flavor buds. Portions are very generous; honestly, one order of either dish could easily be shared. If we had more stomach space, we absolutely would've tried their bún bò Huế--next time for sure. I was craving pho with short ribs so I wanted to give this place a try again! Previously, my experience wasn't great, however, I very much enjoyed my dish this time! The short rib was very tender and easy to eat this time and the meat came off the ribs easily! It was delicious and full of flavor. This is me and my boyfriend's go to spot for pho. Service is fast, it's usually consistent, but the parking situation is a nightmare. We always each get a large pho dac biec because we like taking a little home, even though most people don't like leftover pho. I've gotten the bun bo hue for takeout before, I would skip the bun bo hue and opt for the pho at this place. I also recommend this location over the SLU/downtown one because you can choose between two sizes whereas the SLU location is one size only. There's also a difference in pricing on the menu, cheaper if you pay in cash. We haven't came in here in a few months but this time around, we noticed that something about the broth tasted different, and not in a good way. I thought it was oiler than normal but my boyfriend thought it was something else, though he couldn't pinpoint what exactly tasted different. The portion size of the pho noodle soup was pretty generous, it was only a $1 more for the large size. However, it was lacking flavor. I wish I liked it more because of all the good reviews I saw. The dry pho was more enjoyable than the pho noodle soup. It had more flavor which was surprising because I thought the soup would've been the same for both. The pho fries were interesting, I didn't like it at first but it kept growing on me. It had a weird aftertaste that was off putting at first but then became enjoyable. Our go to pho stop in Sea-Town is Pho Bac Sup Shop! You can't go wrong with any of their pho soups and it's a matter of choice what to include as the umami broth comes out piping hot. One of our faves is the rib pho that comes with multiple beefy ribs and my top choice is the pho tron with pork belly that has the turmeric noodles and a side of broth to dip or simply drench it in the bowl and mix well. Sure wish they'd bring back the smoked brisket beef slices. The service is good and there's ample seating. The ambiance is lively and no need to whisper here. This place has one of the best pho i've had in Seattle! It doesn't compare to pho places i've been to in other cities like LA but it's a great for Seattle/Washington. The broth was on the sweeter side but so flavorful! It doesn't taste full of msg like some other places do. They don't give as much meat but otherwise the regular was a nice, filling size. The vietnamese coffee was also amazing, though pretty strong! Parking here is rough. There aren't many spots in the lot, and it's shared with The Boat restaurant across from it. Came at around 4pm on a Monday and it was actually a lot busier than I expected. We caught the late lunch people, but most of them were gone by the time we finished our meal. Parking wasn't great since it was a bit busy. Idk what you're supposed to do when the lot fills up, but luckily we were able to find a spot. Service was straight up bad. Even for a pho place. I don't expect great service, but the girl who seated us was clearly in a really bad mood. The energy was, "you're bothering me by being here." It didn't help that we asked to sit at a larger table when she tried to seat our party of 5 at a table for 4 by pulling up a 5th chair. There definitely wouldn't have been space at the table for all of us. Why not just seat us at the open table for 6 to begin with..? The bad service didn't stop there. We waited way too long for our orders to be taken when the girl who seated us was just standing around doing nothing. Another table actually got up and left because nobody ever came back to take their orders lol thankfully, the food was better than the service. The sizes were much bigger than expected. The regular felt like a large and the large felt like an XL. BEEF BELLY PHO (Pho Ba Chi Bo): This only came in the regular size, thank goodness. I definitely wouldn't have been able to finish the large. I do wish I got extra noodles though. I didn't feel like there was even close to enough. I had way more meat and soup than noodles. The meat was good though. Tender and suuuuper fatty. Mostly fat lol so if you're not into that kind of thing, steer clear of this dish. Honestly, I'd imagine most people would think it was too much fat. But I like that kind of thing. Also, there was a lot of fatty broth (nuoc beo) on the top layer of the soup. Again, I like that kind of thing, but usually you get the choice to add however much you want yourself, rather than them serving it to you like that. You can probably see the difference between my bowl and my partner's if you're looking for the fatty layer on top. RARE STEAK PHO (Pho Tai): The rare steak was clearly frozen when put into the bowl. It was still a little frozen and stuck in a block-like shape. I assume it's so it doesn't over cook when the boiling soup is poured over it, but in this case, the meat didn't fully thaw and stayed a little frozen. My bf had to swish it around in the warm soup to get it to cook and loosen up from the frozen block. It was tender and not tough like normal eye of round beef, but he didn't like that it was frozen and not fresh. EXTRA MEAT SIDE: I got a side bowl of every cut of meat except the brisket cuts, so that's the rare steak, tendon, tripe, and meatballs. It cost around $4, which wasn't bad since I wanted to try those cuts, along with the beef belly. They gave a good amount. I felt like it was worth it for the price, especially since most pho places only give options to get sides of single cuts of meat. So getting a mix of meats here was a pleasant surprise. All of the cuts were good imo, but the rare steak was very tender, while also being a little chewy. A little unusual, but good enough. VIETNAMESE ICED COFFEE (Ca Phe Sua Da): It was very strong. You could taste the condensed milk at first, so I thought it'd be sweet for a second, but then the bitter coffee flavor quickly overpowered it. FRENCH FRIES W/ LEMONGRASS MAYO: I read that the fries tasted frozen, so I resisted ordering the pho fries. But a friend ordered these, so I got to try it. They are, indeed, clearly frozen fries. And not very good ones, if I might add. I recommend skipping any of their fry dishes. Not satisfying at all. read more

My dad was visiting from out of town and wanted pho so we took him here. It was busy when we came but we didn't have to wait long, only like 5 minutes. The service was fast and we got our food 5 minutes after ordering as well. I got the pho tai and thought the broth was a little salty at first but got used to it as I kept eating. I ordered the large dac biet and added a beef short rib and the Chinese donut. The good - the soup is very clean and tastes great. All of the meat (except the beef rib - we'll get to that) are incredibly tender and delicious as well. The ok - my soup was oddly ...not the same temps? One side was definitely piping hot while the other side was warm. This led to noodles not tasting fully cooked for a bit (I just stirred them around and eventually it was fine). But then the noodles ended up soaking all the delicious broth which leads to... The things that make you go hmm - the Chinese donuts were dry. Like really really dry. So dry that even dipping them in the broth made them just a little bit better. But then since the noodles had soaked up so much there wasn't any to dip. But the thing that makes me give this a 3 star instead of higher? The "beef short ribs". Take a look at the picture you can see the bone from the top easily. The best way I can describe it is when you have beef short ribs and you've cut the meat off and there's like still some scraps on that you end up either giving to the dogs or using it to make broth - not charge $8.25 for. There also was a really strong funky smell when I first came in and not like fish sauce but more like cleaning agent mixed with fish sauce mixed with durian. It did eventually disappear. Overall I would still come back but this time I would just get the pho (maybe a large and ask for just the extra broth instead of adding more noodles) and maybe try one of the apps read more

It's a big portion and delicious - though your hands might get a little messy, as the best way to eat it is with your hands. I also like their dry pho and regular beef pho. The beef broth is very flavorful, though slightly too salty for my preference. Most of their dishes are in the $15-20 range, and I am always so full from my meal here. This might be my favorite veggie pho that I've ever had! I ordered a regular sized veggie pho with no cabbage or carrot. It seemed like they added enough broccoli and tofu to make up for the omitted toppings, which I was very happy about. The veggie broth was SO flavorful and not too salty. It had garlic pieces inside as well! The pho was also served at a perfect temperature to start eating immediately without burning your mouth. Of course, they provide a tray of toppings on the side. To note, they actually have LIMES, since some pho places I've been to have been providing LEMONS. There is a parking lot but this definitely can get packed during peak hours. Just wanna say that this place is super awesome! I tried the pho here and it was really really good -- the broth hits just right and the flavors are rich and comforting. It's one of the best bowls of pho I've had in Seattle and totally worth trying if you're craving something warm and filling.
