These 3 stars are based on my first impression of visiting this spot. As soon as walked in the door. ALL but 4 tables had previous customers plates/bowls and other dishes on them. Tables had not been cleaned. Was very dim inside. There were however about 4 other tables in use enjoying their plates. I can say that even though myself and daughter only ordered small plates of shrimp/pork and vegetarian spring rolls. They were very filling portions. Arrived with my mom and sister with an empty stomach and high expectations, mostly because I studied the menu overnight. Upon entering, there were few tables in the dimly-lit restaurant. Despite the dim lighting, the gentleman brightly greeted us and immediately directed us to sit at a table near to the register since it was cold and windy outside. When seated, we were asked what we wanted to drink, and I got the passion fruit tea and water. When I received the tea, I drank and immediately felt eyes on me. Little did I know, it was the mother, who was also waiting on the tables...and asked me whether I liked it or not. I said that it was a bit too sweet, but she assured me to simply mix the ice in with the rest of the drink. Despite me personally not drinking sweet things, my drink was very tasty, and it got even better once the ice melted down. I later found out that the reason why she asked was because the drink is fairly new and she just learned how to make it from a recent trip to Vietnam. I ordered the eggrolls and a large bun bo hue, having read the raving reviews on Yelp. I was partially indecisive because my eyes was wandering and I saw the rice plates that looked so good...but the server (with it being a family-owned restaurant, I believe he may be the owner or the son of the owner) told me about how far people travel to get this soup, along with how his mother makes her own shrimp cakes for the soup, that she also learned from visiting Vietnam. Bun bo hue it is! I ordered it without the pork blood. I received my eggrolls first, which were 5 pork and shrimp eggrolls with a fish sauce dip with a light amount of chilis in the small bowl. The eggrolls were hot, very fresh and delicious! The light crisp of the wrapper leads you to a pretty generous meat filling that is very satisfying to eat along with the not too salty dip. About 2-3 minutes later, I received my soup, which was what dreams are made of. It wasn't overly spicy, had a generous portion of meat in it, and the addition of the cabbage was great as well. The shrimp cakes were bouncy and full of flavor. I felt those eyes again. I'm asked if the soup was good. I tell her it's amazing... Here the mother comes to show me how to properly eat the soup. Apparently I didn't add enough cabbage to it. She adds the extra cabbage that I didn't yet add into the soup, mixes it in for me, and tells me that the combination of the cold cabbage and hot broth is what makes it better...and of course she was right! I have to mention here that I'm nearly 7 1/2 months pregnant, so I'm positive that her intentions are 100% pure to help a pregnant woman eat this food correctly lol...so everything I am mentioning about her is coming from a good place. After eating as much as my body can allow me to with a growing baby limiting how much I can eat, I got the rest of my soup to-go. The son told me that this soup will taste even better when I reheat it. When I tried it several hours later, the broth is way more complex with a slight sweetness once reheated, and the round l noodles maintained their structure, compared to regular pho noodles that would typically break apart once in the broth for too long. I was throughly satisfied with my order and overall experience here. Everything was fresh and came out quickly. The customer service that I received was amazing, and those trips that the mother made to Vietnam expertly influenced the true flavors of Vietnam in what my family and I had ordered. They also enjoyed their meals, but it was not their first time here. I'm the food critic of the family, so it was their mission to show me this place and asked me to compare to the other pho restaurants that we have visited in the past. I will of course be back to get this bun bo hue again, and maybe try those pork and shrimp spring rolls that my mom was absolutely raving about! read more

Solid 4/5 star Vietnamese establishment. Called ahead and ordered takeout today for dinner an hour before close. Ordered an XL BBH (Bun Bo Hue) and Pad Thai (extra spicy). BBH- LOVE the broth- my favorite BBH broth in all of Stockton. I love my food extremely spicy so I added my own home grown Thai chilis when reheating the broth on my stove when I got home. I also love the shrimp paste(?) dumplings they come with. I haven't found a Vietnamese restaurant that offers these so that's definitely a main reason why Pho Binh Minh is such a gem. I wish the meat toppings were slightly better- I am a fan of thick slices of tendon. But all in all and everything considered, Pho Binh Minh is my favorite BBH spot in Stockton. Pad Thai- Wanted variation for dinner and left overs for work lunches for the week, so I took Yelp reviewers' advise and ordered the pad Thai. Pad Thai had a surprising yet pleasant grilled tasting flavor that came from the shrimp. I asked for extra spicy and they delivered slightly- but then again I have a high spice tolerance and 'spicy' is subjective. I personally love a stronger tamarind flavor in my pad Thai, but that stems from personal preference. I am not a fan of chicken in my pad Thai and they don't offer the option to choose your protein, so when I order again I will ask for tofu instead of chicken and extra chili oil on the side. Sooo bomb! I had the 26A seafood with glass noodles bowl size small So much food Most pho places give you so much broth and not enough ingredients, not here! I was stuffed after my small both of pho My brat had shrimp and bbq pork spring rolls and they were fire. Family owned and ran which is perfect. The son is so friendly and loud and helpful and funny. This has always been my favorite pho spot in Stockton. We unfortunately don't come here often because there are closer places to where we live and where we frequently shop. My family finally went back today and I was surprised to see a younger face working along with the "mom and pop" of the place. We never had a problem with the service there and food was great as it always has been. It seems cleaner than I remember it too. Or they had just cleaned all the condiments before we got there lol. You don't go to a true Vietnamese restaurant for good customer service or cleanliness, you go for the food and this place is delicious. Our Vietnamese family has eaten here and ordered to-go very often for the past several years and everything taste amazing. The pho (beef not chicken) is the best pho I've had in Stockton and we've tried a lot. It doesn't taste like it's over loaded with MSG or sugar like many other Vietnamese restaurants, instead it taste fresh and homemade but never watered down. We moved from the Bay Area and I'd say the taste quality of pho here compares to the good spots in San Jose (large Vietnamese population). I see some bad reviews about the chicken pho here but I wonder if the reviewers have ever had chicken pho before. It is never that flavorful compared to beef pho... The Bun Bo Hue isn't too spicy and has great flavor. I'd say their version is a bit milder than some other restaurants but in a good way making it easy to eat without tasting watered down. Portions are good for the prices. I agree with the negative reviews about cleanliness for American standards but it feels like you're travelling and eating in Vietnam so take it as it is :) read more

Worst pho I've ever had. Ordered a chicken pho #1 & no flavor at all in the broth I thought they were joking with me tasted like noodles and straight up water even adding sriracha didn't help. Ordered a Pepsi - it was flat/old. Ordered a taro smoothie - never got it. My usual spot was closed & the reviews were good at this spot which is shocking but the food was horrible. Walked in and was stared at not greeted whatsoever. We were the only 2 people in there and the owners and cooks were just at the counter talking forever, menus came so late. Forgot an item I ordered and tried to add it on as I'm paying. Big no. Didn't eat the food I just paid & left. The chicken grossed me out it was rubbery and undercooked, appetite is ruined :/ Better off going to mama pho's or Saigon restaurant if you want some good broth. Very disappointed. read more

Our first time at Pho Binh Minh medium sized restaurant. The seating not too crowded. My lunch buddy had Shrimp Fried Rice. I had BBQ Chicken with White rice. The portions are very generous here! I am taking away one star because I ordered a coconut juice with my meal which was never delivered to me nor was I charged for it though. Because I never got my coconut juice I only drink the glass of water that they brought me which was never refilled and I did drink the entire cup. The food itself was good! Again the portions were huge! The rice was done to perfection! The chicken was juicy it was not dry it did have a sweet barbecue sauce flavor to it not the typical grilled chicken and fish sauce that I'm used to at Vietnamese restaurants but it was tasty however I was desiring more of that fish sauce flavor and there was no fish sauce even on my table. What I believe is probably the owner was a gentleman and he came and checked on me to make sure that my food tasted good he also took took my order. He was very friendly he was also the cashier whenever I checked out. I would go here again because the food was good enough and to their defense every single table was taken in the place the entire 45 minutes that I was eating my meal. Some of the best Pho I have ever had in my life. It's perfectly balanced, sweet and yet deeply savory, very authentic. And the meat that came with it was delightful, all perfectly cooked and sliced and portioned on generously to make a wonderfully delectable bowl. The Pho isn't the only good delicacy here, the Bún bò Huế is excellent, with all the right flavors and depth topped generously in all the meats that it deserves. And the pork chops were a masterpiece, a Monet on a plate. Perfectly cooked and glazed with an excellent sweet sauce, everything I want in a vietnamese pork chop. The service too was top notch. I came by rather late, near closing, but he was so friendly despite the time. His charm paired with the atmosphere of the restaurant was perfect, just what I am looking for in a Vietnamese restaurant. Great broth is the foundation of great Pho and Pho Binh Minh's broth was delicious. The ingredients were plentiful and fresh. Noodles were PERFECT. There were multiple people there for pick up and door dash as well. When I returned home there was a mix up with one item. The to go box was mis marked. We walked in on a Saturday evening and two things struck us... - musty smell (from maybe the front carpet needed to be cleaned?) - dark inside (some lights on, but some off to conserve energy?) Then we sit down and looking out the door you can see it needs a nice cleaning. Can't the owners see that? I wonder what the kitchen looks like. Oh no, getting concerned. Ordered the XL #3...lots of soup but expected more pho in that big XL bowl. Singapore style rice noodles only had 2 shrimp in it. Chow fun was over fried. So maybe I should have stuck with the pho since this is a Vietnamese pho place. I did like the broth. Overall, stick to the pho and hopefully they do some cleaning in there. read more

My new favorite soup from here is the Bun Bo Hue. It is spicy and the flavors are so much more complex than Pho. I order it more than Pho now. I've had it at many other places in Stockton but this one is still hands down the best Bun Bo Hue in town IMHO. I especially like the shrimp cakes in it. I prefer the Pho noodles over vermicelli noodles in my soup. read more
