They are taking precautions for COVID, which is greatly appreciated! My fiancée got the Pho, and I chose the Shrimp Pad Thai. We also got a side of Roti! My fiancée's Pho was fantastic, full of flavor and fresh garnishes on the side. My Pad Thai (and this is coming from a guy who A. Loves Pad Thai, and B. Used to work at a Thai restaurant) was off the charts! It was bursting with flavor in every bite. The shrimp were cooked just right. I would rank it right alongside the Pad Thai I used to eat at my old workplace! It's that good. Can't forget about the Roti! This place far exceeded my expectations with their delicious recipes. It's local, family owned by the sweetest Vietnamese couple. They had retired from the restaurant business only to come out of retirement and open up this unique location on Chickasaw. A long overdue addition to the east side of town. Pho Bo is where it's at. Flavorful, rich, and savory beef broth, al dente rice noodles, veggies, and the sauces all come together to create a symphony of wonderful flavors. OH, the beef brisket and bo vien (meatballs) are super tasty! Their Vietnamese coffee is also super yummy. During their soft opening weeks, I came at least 7 times for dinner to try something new. Nothing on the menu will disappoint. Considering everything on the menu is under $10?? I THINK YAS!!! TIPS: Parking is free but can be a nightmare when the Karate school is in operation. Everything was good , but the quantity doesn't line up with the quality. Menu is a bit confusing on the left you choose a broth flavor on the right you choose a protein. The list of four proteins does not come default it is an extra $2.50 to include the proteins another $2.50 for extra large size. Total about $15 for a bowl of pho . Ordering pho should be made easier for customers, instead of limited options and then up charging for additions. Options at most other Vietnamese restaurants are pre-ordered selections (example combination pho, or beef and meatball only pho ) and then you can remove protein as needed. Even after all the upgrades , we realized it was to include more meat options but still limited in quantity . A bit comical however the broth was very flavorful and clean tasting not too oily. Since the restaurant just opened there was not much selection but enough to satisfy your craving. Pho was fantastic which is the signature dish. Viet ice. Coffee was nice and strong but wish their was more in a cup. There was more ice than coffee and just suggestion to use more crush ice since it is hard with the straw. I can't believe this is what they serve here. Dried out rubbery plain chicken on a bed of plain rice with sauce on the side that was suppose to be fish sauce but had a tiny bit of flavor. A side salad with nothing on it. Here are some pictures. One is what I thought I was getting when reading reviews. The other is what I received. Wow. I have worked in the restaurant business for many years and can't believe they served this food like this. It was horrible. It is going in the trash because this is not edible. Such a waste of money. The special chicken spring rolls with peanut sauce were quite tasty as my appetizer. I enjoyed the beef pho with veggies, rice noodles and beef-ball. The broth was flavorful however the beef ball was a little rubbery. I would try again with a different type of beef. If a different type of meat is tender then I will update my review.
