I got two chorizo gorditas, though I thought I ordered one of them marinated pork but it didn't matter to me because they were very good. If one was pork it was very close to chorizo in color, texture, and taste..haha. I also got a chicken quesadilla. The gordita shells were crispy in the outside and held together very well while eating. I really liked them. There were two sauces in the box. The red sauce was ok. Not my favorite I ever had but had good taste and ate all of it on the gorditas. It was kinda spicy, but not too spicy for me. My wife would find it hot. The yellow colored sauce: I didn't know what it was. I thought it was butter because of the color, but was not. It had some sweet notes to it and some bites were kinda spicy...or that was leftover heat from the red? I don't know but I ate it on my chicken quesadilla. I worried there may be a language barrier (since I am not fluent in Spanish) or I would have to translate menu on phone, but the menu had both and the girl up front spoke English. They offer animal slaughter and preparation of the resulting products. There are truly "country" items here that you can't find at the grocery store. Real lard. Rendered fat that hasn't been processed, cleaned, homogenized or whatever other processes store bought lard goes through. Certain days, and while supplies last, pork rinds (cracklin', skins, chicharrones). Locally harvested honey. They don't offer a large selection of beef steak, but what they do offer has always been high quality. I wish they offered New York Strip. I get bacon ends and pieces, by the pound, to use for various things in the kitchen. Wonderful for rendering in an iron skillet and cooking onions in it, before adding to pinto beans or other dishes. Running it through a meat grinder to add to raw cat food. (They were able to procure a couple beef hearts for me to use in cat food making). I can usually walk in and get a variety of meats, cut my way, and then go to a grocery store for miscellaneous items needed to turn it all into wonderful meals. Unfortunately, this most recent purchase was a major disappointment. The ground beef is significantly overworked, with a texture more like paste than proper ground beef. It has an unusually soft, almost mushy consistency, and the meat-to-fat ratio also seems off. While cooking, I have had to drain excessive amounts of grease. The flavor is acceptable, but the texture is often mealy and unpleasant. I contacted the butcher to provide feedback. I was not seeking a replacement for the roughly 120 pounds of ground beef I received. I simply wanted acknowledgment of the issue and reassurance that steps would be taken to prevent it from happening again. Instead, I was told the texture was the result of the cow's genetics. I found that explanation difficult to accept, as texture issues of this nature are typically associated with processing and preparation. Rather than addressing the concern, the response appeared to shift responsibility away from the butcher and onto the rancher. What disappointed me most was not the product itself, but the handling of the concern. A sincere acknowledgment and a willingness to discuss the issue would have gone a long way. Unfortunately, based on both the product quality and the customer service response, I will not be making future purchases from Rickman's.
