I've been checking out a lot of pubs since arriving in Chicago and this one did not disappoint. I had two different kinds of cat beer and both were great. Before coming here I had no idea that this was a great place to come for coffee/pastries too. I visited on a Saturday morning and absolutely loved it. I'm a huge fan of their banana bread and the Parisian rose latte. They also do latte flights which is super cool. I would definitely come back again to check it out in the evening as well. I highly recommend this place. It helps that they have great beer and a great space, but most importantly they are really good people with a customer-focused culture. Without going into details, I visited Pilot Project for the very first time this past weekend, and before I even had a chance to my first sip of beer, there was an unfortunate event with one of my personal items. The team was incredibly responsive and worked with me in a very professional manner over the next few days to fix the situation. We rate places based on their service and product, but often don't have a chance to get much deeper to test how they work through situations. I had that chance with Pilot Project, and they came through with flying colors! Oh, and they also have great beer and a great space! 10 stars! read more

Great place! Came here with a bigger group and they accommodated us and were very welcoming (and COVID-safe). All the beers and kombucha were delicious! The food was really good too- we tried the Carolina BBQ and The Standard sandwiches and loved them. The service was great and the vibe was fun. My only reason for rating it a 4 instead of a 5 is because it is next to a train which is super loud and somewhat alarming the first time you here it. Chill vibes with a strong mix of local incubator breweries, modern ambiance, and unique takes on bar food favorites are what set Pilot Project apart. I was personally happy with the great variety of beers at the time we visited, though I understand there's some fluidity to being an incubator. The pretzel and beer cheese was a standout item - betrer for groups of 3+and the BBQ chicken sandwich was great. We sat indoors - a mix of couches and high tops, though there was semi-permenant facilities outside which were considerably more impressive than the shanties set up by peer restaurants and beers. Came for beers and snacks on a Saturday around 6. It was pretty crowded but the place is big enough it didn't matter. Aside from being huge, the space is also well decorated and cozy. It's what I want my living room to be. Lots of different seating options -- kitchen tables, bar tables, big comfy couches with coffee tables, and plenty of barstools along the walls. There were also some pretty coffee table books to peruse. The outdoor patio is huge but...it's right next to the blue line which gets LOUD, so we stayed inside. We got a cheese plate, which was tasty but could have benefited from more accoutrements and better crackers, or maybe bread. Next time I will get a waffle instead. I had a few beers, which were all pretty different. I wasn't a huge fan of the Brewers Kitchen beers, but the house beers were surprisingly good. Maybe I missed something, but I didn't see or hear anything explaining the concept of the business and brew space. I'd definitely come back in the daytime to get some work done and try some of the coffee drinks. read more

What an amazing space to try some super creative kombuchas, beers, ciders, and even latte flights! Came here with friends and tried almost everything (ok, not really, but most), and everyone found their favorite libation. Also had the charcuterie/cheese board as well as the hummus plate. Both were wonderful, and paired great with our drinks. I really loved their coffee (I had the cortado). In fact, the whole concept of beer/cider/kombucha PLUS great coffee is genius! Want to work here and drink coffee all day and snack? Want to meet up with your friends for drink? Want to come for trivia night? Want to bring your kids for a lovely pastry? Come here for all of these! Also, the space itself is very inviting and bright. Special thanks to the lovely people working here - this could have been a pretentious, snobby bar, but it's not!! cute, with a lot of variety in beer. it's definitely a brewery that just happens to sell some good coffee, rather than a brewery and cafe. i came for the coffee, but missed the cut-off time for espresso (4PM). i was sated by some surprisingly wonderful cold brew, however! my date really loved the beer flight, and we both enjoyed the hard kombucha (the ROVM hibiscus berry, i believe) also, gender neutral bathrooms. hooray! it's a specific vibe, kind of feels like a classed up dive bar (especially with the L running so close). i wouldn't come here if you're looking for an after lunch spot to work, but it's great for a night out if only some of the people in your group drink. i'll be back, before 4PM next time! read more

Prices are astronomical. Then they don't show you an itemized bill at all. Somehow spent $27.36 on a $14 tasting flight and a $7(!!!) half pour. Tip buttons are no tip, 25%, 20%, 15% in that order from left to right. Initially hit 25% bc it was right next to no tip and I was a lil tipsy....then I corrected to 20%.... but regardless I shouldn't have tipped more than 15% max for beer pouring. Beer is terrible. Far too sweet for the IPAs and kombucha. The malt flavor is overwhelming in every beer I tried. And either they don't have the budget for a decent amount of hops or the beers are just old... I had a DDH that neither smelled nor tasted like it had any fresh hops at all. In a fucking DDH. Good location but I doubt they will be around for long. On top of the weak bear and unrealistic pricing there was a "meet the brewer" night that started up around the time we were finishing our last beer. First of all, this put us in an awkward situation because there was like 10 ppl there max, and I didn't give a fuck about what the guy who brewed my beers' last listened to album or what his pets names were. Secondly, it was introduced as a "community" event. For fucking real?? Maybe this dude was from your community... but having him come and speak benefitted NOBODY in the community, especially as the brewer himself sounded like he wished he was literally anywhere else but there at the brewery. And the Pilot Project is in the middle of a gentrifying neighborhood.... don't act like you are benefitting the "community". And at least add a goddamn disclaimer somewhere in the building in large letters, so patrons aren't trapped in a weird space that they didnt sign up for. Last of all, the music was horrendous. Its 2020 guys, and this place is for adults. That is enough angsty music. Who wants to drink a beer and listen to The Cure and Joy Division? Maybe in 2006 in Williamsburg or Silverlake. Not now, not here. Please. This place is honestly a decent idea and is fairly comfortable inside. But other than interior decoration it is the worst executed brewery conceivable. Take everything that is great about a brewery...good beer, a decently welcoming staff, good music and affordable pricing.... and then come here and fucking forget about it. read more

In an era and area where breweries are popping up every 10 feet, it can be exciting......not here. I always wait a few months for new places to open so they can gain traction and work out the kinks. I have heard and confirmed that the original brewers are already gone. You can't get a pint of beer here, but after I saw the prices, I'm glad I didnt. You cannot give your own tip, they have it predetermined for you......not cool, especially for the service, many employees walking around but 1 guy pouring and no one wants to engage or answer questions.from the time I walked in on a Saturday at 530 pm I had my first drink in hand at 608. It is not a comfortable space when both dogs and toddlers are roaming. What if the dog craps inside???? SUPER LOUD MUSIC!!! After 4 hours and 5 beers......yeah I would've had more but there is a lot of time waiting to be served. I left with a huge bill and felt fine not leaving a tip. I'll wait to see who fills the space next in a year or 2. read more

Why 2 stars for a cool neighborhood hangout?! -- because almost every visit is marred by a bad experience that has me wondering why we continue go there (since their opening). The problem is not the beers -- fresh and sometimes innovative. It's not the food, simple but well crafted. It's not the hip decor. It's not the spotless restrooms. It's the fact that almost every visit is marred by a glaring example of bad service where clientele pay the price for staff errors. Yesterday we were enjoying beers and food on the sunny patio as the temps cracked 40deg. Suddenly, a server pleaded that we move to another table -- something lame about a booking error. So without assistance we stopped chewing and picked up our food and beverages to relocate. Then for the next hour, we sat freezing in the shade as our prior table remained sunny and unoccupied! Of course, I wouldn't normally write a two-star review for a place I otherwise like, but I'm getting sick of of these constant slights (last time was sitting on the patio in Jawith temps in the low 30s and failing to secure a beer after 15' due to yet another snafu). read more

We've stopped by their patio twice in September and love it. Loving any type of patio right now (we are not dining inside until COVID is under control). They are taking this very seriously, even inside, and that makes us feel great too. They also are very friendly and allow kids (double plus for us!). They also remembered us the second time we came (I don't know if this is good or bad ... but cool). We've enjoyed many of their on tap selections. They have some really good and interesting beers. The stuff they are doing with sours, fruit and lactose are really cool. Everything we have tried has been great. They have some yummy easy sandwiches on the menu. I've liked the Chicken Salad and our kids love their PB. As long as we can enjoy their patio we'll be back with the kids in tow. read more

Sterile place, with the usual casual-fancy deco. Take a few fermenters, give fancy names to beers, and sell them $8-9 for 12oz. Here you go: the perfect hipster target money making machine. Beer was ok. Like for most of the beers. In summary good (like for most of the bars), but nothing new or groundbreaking. A coffee house vibe atmosphere. A beer that has the scent of a wine but drinks like a good beer. Kombuchas that are tasty and not just sour. Knowledgeable staff that makes on point recommendations. I don't know what you're doing, Pilot Project, but keep doing it! A one hour visit turned into a three hour hang-out just sippin' and talkin' and chillin' before dinner. Went here for dogtooberfest and everybody had a puptastic time! Their covid precautions were solid and reserving was easy. The staff was sod friendly and accommodating. I wish I could give 4.5 instead of 4 but my only criticism is that the menu is a bit limited and their prices are pretty high. Unique concept in a beautiful setting! Pilot Project is absolutely gorgeous. The space is very dramatic and open. Lush plants and beautiful artwork decorate the walls and fill the room. I visited on one of the first days Pilot Project was open, so some of the kinks were still being worked out, but I still had a great experience. It was right around midday on a Friday and the place was buzzing. It was mostly filled with people enjoying coffee and working or collaborating, but I, and a few others, were interested in the beer selection. Can't remember exactly, but want to say there were about 8-10 beers on tap. There are a number of tap handles, but since it just opened, there were not that many beers available. I tried two of the house IPAs and both were very good. In addition to coffee and beer, there are also delicious-looking pastries available at the counter. One thing I didn't particularly care for is that the bar also doubles as the counter for coffee service. I felt like I was in the way of people ordering coffee. I guess thats how it goes when you order beers so early in the day.. I am really looking forward to seeing Pilot Project come alive once some more brewers are up and running, and want to see what the vibe is like in the evenings. I'm assuming it will feel much more like a brewery and less like a coffee shop. Beer was great, but unfortunately i had some issues with the bar itself which is stopping me from giving a solid 4/5. I felt the lights were a bit too bright in the bar, at least for the aesthetic the brewery was going for. And for whatever unknown reason they started blasting some unpleasing emo music which totally killed the vibe and my friends and I promptly left. I would love to give this place a second chance but I am not interested in hearing some terrible music while I am trying to relax and do work. Did put this same review on google not too long ago but felt Yelp was a good place to add some more on there. Had the Spanish Tea IPA and it was fantastic. Would love to come in and try their coffee at some point in the morning if it isn't too busy to get some work done before heading to the office, as my friends have told me the coffee is great. read more

Clean, modern place. I love doing work here in the morning. If you come before 9am, you can get $1 drip everyday. Solid beers all around. The Mexican lager was excellent. The rose cider as a rule is generally overdone these days, but theirs is good. They have a barrel aged cider that is my kind of cider-- a bit funky, not too tart or sweet. The inside looks nice, but it's cavernous and concrete which means it's very, very loud. Not just bar loud. Obnoxious loud. We went out to the patio which was much better. Not sure I'll go back in colder months when the patio is not an option. read more

Hands down the best new breweries in Chicago. First and most important when it comes to beer is the creativity and drinkability of their beer. They hit it out of the ballpark on both fronts offering number of options that are delicious and inventive like their "in house start up company" of Luna Bay's Hard Kombucha. Pilot Project has amazing indoor and outdoor space for large or small groups. I am already a regular and they have only been open for a few weeks. I've been to pick up beer twice in the last 3 weeks not only to support local but also because I wanted to try some of their unique styles. I was not disappointed.
