I'm a New Yorker and, I daresay, a pizza maven. I can state without qualification that Pizza Centro in El Dorado is the proverbial Real Deal for anyone craving authentic NY pizza. Centro's new Design Center location is still working out the kinks, but it has all the ingredients to catch up eventually with its sister establishment. There are two types of true New York pizza: the high-temperature coal-fired oven variety made legendary by Patsy's, of which there are precious few remaining purveyors because of EPA restrictions (although there are now high-tech ovens capable of reaching 800-1000 degrees, such as the one in use at ABQ's Farina Pizzeria--see my Yelp* review); and the standard pizza oven version exemplified by the nonpareil Joe's Pizza in the West Village. Most pizza offered in the US is based in some fashion on the latter version, and most of it is simply awful--including, sad to say, in New York and New Jersey, where thirty years ago it was possible to find Neapolitan and Sicilian immigrant cooks making top-notch pizza at virtually any strip mall one stumbled upon. Alas, with changing immigration patterns, those days are long gone, and now finding good, much less great pizza in the NY-NJ metro area requires something of a quest. Thus it's especially notable that Pizza Centro makes an absolutely spot-on standard oven New York pizza. This is no accident, as Centro's owner, a chap named Nathan, apprenticed himself at several Long Island pizzerias in order to learn his trade. I know this because, well, I interrogated him on his pizza-making background when I visited the El Dorado locale on a tip from a fellow New York expat who sang the pizzeria's praises. My long-suffering wife cringed as, skeptic that I am, I peppered Nathan with questions about his oven temperature, choice of mozzarella, spices and the like. I heard all the right responses, including an unprompted recognition of the peculiar challenges to proper dough preparation posed by Santa Fe's 7000-foot altitude. Better yet, I discovered that Nathan had read coal-oven guru Jeff Varasano's 25,000-word manifesto, even though he was making the other kind of NY pizza. (For hard-core pizzaholics, check out Varasano's Website, which aside from terrifyingly detailed instructions on how to make a Patsy's-style pie, offers unparalleled pizza-porn pics that will have you taking bites out of your monitor: http://www.varasanos.com/PizzaRecipe.htm) But theory will take you only so far--the bottom line is the pizza itself. At its best, Centro will--no kidding--withstand comparison to Joe's. The unadorned regular pizza is a paragon of balance and preparation. The mozzarella is high-quality and flavorful, and there's not too much of it--although even so I always ask for about 20 percent less than usually goes on, as Nathan and crew are trimming their sails a bit to accommodate local (read, unversed) tastes that consider less than a surfeit of cheese evidence of stinginess. The sauce is light and subtly spiced. The crust is thin, with a slice performing the requisite task of standing straight out but folding length-wise; it is airy but not excessively so and has a nice hint of tang. There was some fine char on the bottom, and a bit of bubbling at the crust rim. The ultimate compliment to the crust is that I don't leave any of it over. My advice to Centro diners is to keep it simple to keep it brilliant: the pizza is about perfect in its basic form. I generally only add a bit of fresh basil. In fact, when extra ingredients go on, the balance is often regrettably sent out of whack, with extra cheese added to hold everything in place, and the otherwise exemplary crust rendered a bit limp. This is part of why this review has four rather than five stars, but hey, I'm a purist, in case you haven't figured it out already. On other fronts, the salads are fresh and crisp, the garlic twists suitably garlicky. A nice touch for homesick New Yorkers is the availability of Dr. Brown's sodas, especially Cel-Ray (celery soda, for the uninitiated). As noted at the outset, the new Design Center location is a work in progress, although it's still the best best choice for pizza in Santa Fe short of shlepping over to The Agora. I showed up on the first day of operation and had a Joe's-worthy slice; but when I ordered a full pie one evening, the crust was a bit underdone and the cheese overly abundant, even after I'd specified my usual less-is-more on the formaggio. Notably, Centro owner Nathan was not on-site, and it's clearly going to take some additional training to get his Design Center pizza makers up to his learned level. But minor cavils aside, Pizza Centro offers the best pie in the area. If you're an NY-NJer, you'll be eating a taste of the Old Country. For everyone else, you'll get an education in authentic NY pizza, and hopefully you'll never help award venues like Backroad and Upper Crust with misplaced "Best Pizza in Santa Fe" accolades! read more

I ordered a large pizza from Pizza Centro a couple days ago just before leaving the office to head home. What I loved was the 20 minute wait time- by the time I packed up my things, left the office, and arrived to PC, my pizza was ready. It was tasty, but a little heavy on the toppings. The crust is relatively thin, so if you order a pizza with more than 2 toppings, it feels like the pizza falls apart a little and the crust isn't sturdy enough to hold up. I do like PC for one or two topping options (we ordered half pep, half bacon and mushroom), but the bacon/mushroom side was too heavily loaded with toppings, making the pizza a bit too salty. Still, the convenience of location and quick pizza turnaround makes this a location I'll revisit. read more

Ooeeyy yummy goodness in my mouth! I ordered the Alphabet City with pesto instead of marinara & cut the mozzarella... I would keep it if my stomach could handle it! No dairy for this lady! Also added meatballs to the top! This pizza is on point! I usually don't get too much pizza in my life mainly because I forget that I can do a pesto sauce instead of marinara or dairy. This place uses dairy in their marinara sauce. Great place, pizza was quick. Here on a thursday night, lots of people picking up Togo orders! The only suggestion I would have to make this place over the top is add food allergies to menu and coke on the soda.. also make the counter guy more welcoming :) read more

I am now HAPPY. Ive been living in Santa Fe for 10 years and always felt pizza wasn't up to par in Santa Fe. Sure, Il Vicino and Pizzeria Espiritu have good pizzas, but they're not pizzas I would want to eat every week. Every city should have a good go-to pizza for those Monday evenings (heck, any evening of the week) when one just doesn't want to cook. Homerun Pizza, while not terrible, just wasn't cutting it. I've been going to Giovanni's in ABQ for my pizza fix when I could, and now Pizza Centro has swiftly become the new go-to pizza place for me. The New York style pizza served here is fantastic. Sauce- great. Cheese- great. Pepperoni- great. Crust- good (a bit hard for my liking, but the taste is fine). We also tried their Chelsea pizza (sausage, bacon, onions, etc) and it was good. I felt the sausage was lacking in spice but overall it was good. I would want to try the other specialty pies such as Central Park, Hell's Kitchen, etc. Give it a try! Cons of this place: they didnt have a debit/CC machine when we were there but we were told they would have one by next week. Another con- they NEED a website! Don't get me wrong, we love Santa Fe and the food here. After 6 years in town, though, these Connecticut transplants have been yearning for some east coast pizza - New York style. Pizza Centro has satisfied that yearning. We had the 12" Chelsea and the spinach salad, because healthful, right? Anyway, consider us happy and sated. I haven't tried the pizza yet, but I'm going to rave about this place based on one single product: the meatball sandwich. I've had it twice now, once in a delicious baked bread that clearly came from some surrounding (and quite impressive) bakery and a second time with just the meatballs and no bread because I'm doing the Atkin's diet in solidarity with my wife (run ya mouf, but you single, haters). These meatballs are off the hook...and yes I know how open that comment leads me to all types of jokes from the immature types. But seriously, I could come in here everyday. The meatball are robust in flavor, with a heavy presence of basil and oregano and a delicious sauce that is thick and tangy and all blended into a concoction that will blow folks away. Add to this some generous servings of mozzarella carefully melted atop everything and this could become the new crack hitting your local hood destroying families and all that. Eating this meatball sandwich immediately caused me to compare it to The Meatball Shop in LES, NYC (that official crack until I found this dealer) and Pizza Centro can compete. I'll have to come back soon (once this ridiculous diet shet is over) and try the pizza, but if the meatball sandwich is any indication, I won't be disappointed. I must say, this is quite close to the Capitol, yet doesn't get flooded with all the folks there, which is good for us customers but certainly the business's lament. Oh, and did I mention CHEAP? That meatball sub with a great green salad complete with arugula costs only $9 and will either make two meals or leave one stuffed. read more

(this review appears in an edited form in Santa Fe Reporter's 2012-2013 Restaurant Guide) We have a respectable amount of pizza options in this town, but it is surprisingly difficult to find a truly great slice. Enter Pizza Centro, one of the newer competitors in the convoluted and often-disappointing Santa Fe pizza game. Their stripped-down décor and laid-back slacker/hipster style (seriously, where else are you going to hear 90's-era Moby in a restaurant?) makes them feel like they fell through some sort of dimensional vortex in New York City and rematerialized in the Design Center. Their dough is pliant and flavorful, their sauce is just the right balance of acid and sweet, and their toppings are unmatched in freshness. They also have a strikingly large amount of signature pies that can satisfy your more adventurous pizza cravings. While it isn't particularly pretty to look at, the Chelsea ($21, for a large) is a glorious combination of sausage, homemade meatballs, bacon (always good), onion, and green pepper. The whole package tends to cause a chronic case of topping slide-off, but even in a weird little pile of gooey cheese and hot toppings (which you either have to eat with a fork--a concession--or mound back on top of the now-naked slice), Pizza Centro is unreasonably delicious. read more

Pizza Centro - downtown location I've been coming to this location for a few years now, and the pizza quality has steadily deteriorated. Here's my story: one day in 2016, I was here with family and ordered a Brooklyn pizza. One of the owners (it might have been Jason, not sure) happened to walk by our table and check on us just as the server gave us our pizza. To my surprise, he immediately apologized for the quality of the pizza and took it away. The family & I didn't see anything wrong with our order until he returned 10-15 minutes later with the most beautiful, most delicious pepperoni Brooklyn-style pizza we had ever had in our lives. No joke. We never knew pizza could be so good. I literally never forgot that experience or the quality of that mouth-watering pizza. Hoping to repeat this experience, we have come in again and again only to be disappointed. The pizzas we routinely get are about on par with Papa John's pizzas but cost more. In our opinion, the best pizzas in town are the fresh ones that Papa Murphy's creates for you to take home and bake. One day we picked up our order at this location at the drive-through window. I paid with my debit card. The guy took an unusually long time to bring me my order and return my card. Two days later, a fraudulent charge appeared on my debit card. My bank had to close it and send me a new one. That had never happened to me before. I did not use my card anywhere else, but I couldn't prove anything, and any attempts I made to reach the owners of this restaurant were unsuccessful. I left them private messages on Facebook and called the restaurant and left messages with the main guy who takes our orders. Nothing. Not sure if I trust this place. I wouldn't really recommend Pizza Centro, and I happen to think it no longer deserves its reputation as a great place for pizza. Visiting family in Sante Fe during the Thanksgiving holiday, I found myself jonesing for a good pie. Did the usual research, asked a few local peeps, and finally decided on Pizza Centro(believe it or not, the pic here on Yelp did help). In a word, it was awesome. Service was quick and friendly, and my stomach will be forever thankful. Even my Father snaked a piece and commented on how tasty it was. It's taken me years to find really good pizza joints in Miami(Fratelli La Bufala, Spris), so I was really happy I nailed this one on the first go round. I ordered pepperoni which was cooked to perfect crispy perfection. Great tasting sauce and I really liked the crust, which may have been wheat. All in all it was exactly what the doctor ordered, with no disappointments. The girl at the counter was even nice enough to write me out a map because I told her my phone was about to die. As a Jersey native, I am pretty critical of pizza claiming to be NY style. So I stopped in for a slice (cheese). Cheese was delish, sauce was good, crust was a little crispy n yummy. Pretty much on point. The only thing is...it needs to be a little thicker. The slice pretty much fell apart as I tried to fold it and eat it. I gave him my order and he looks at me and says "the camera wants to see your ID" and he points to the surveillance camera on the wall. "What?" He repeats it again and I walked out. Tasteless cheese and sauce on crispy dough. Very disappointing. Eh, I've had better pizza, that's for sure. First I had to hear how all the "specialty pizzas" (which all seemed to have roasted eggplant, oddly enough) can't be made into 1/2 pizzas because of their cooking times. That seemed odd, especially since the tiny asian woman was a little snide about it. But she was pregnant, so I let it go. The pizza itself was OK, but nothing remarkable. The crust is pretty tasty, but I can think of three other pizza places in town that come out with better results than this place. I suppose it might be better for a quick lunch than a dinner. My wife ordered a caesar's salad. portion was good. We ordered a large with artichoke hearts and bacon. "premium" toppings on a large are $2.75, so a large with two toppings was 19.50. Pizza was good, but nothing special. My wife commented positively on the tomato sauce, and her palate is way more refined than mine. I added some garlic power (they had a shaker) and parmesan cheese and I was happy. It's a small place and there is limited seating. That said, we were the only ones there on a Sunday night, so it was private dining for us! For counter service pizza and a salad, this place is a little pricey, but the food is good. We ate at a bunch of different -- and expensive -- places in Santa Fe this week, and by far the best was the pizza we got from Pizza Centro (mushroom and black olive). Everything in Santa Fe seems to have some kind of spicy pepper added. This is bad not only because some people (like us) don't like jalapeño and other spicy foods, but because it seems that the spiciness is there to cover the fact that the food just isn't that good. OK, sorry about the rant. The point is that the pizza from Pizza Centro was just good pizza. It seemed to have some "extra" olive flavoring, which was simply marvelous. If you just want unpretentious food in Santa Fe at a decent price, try Pizza Centro. read more
