There are five cuts of beef - brisket, tendon, tripe, small intestine, and heart. If you love different textures in your food, then this bowl runs the gamut of chew levels. We're talking about melt in your mouth to firm bites with chew. For me, it's a party in my mouth. Btw, the flavors are spot on and very traditional to what it should be. Their menu allows you to order all beef, small or large. You can also order the version with veggies, which is stewed daikon radish. The portions are substantial, with the large size being plenty enough for two. I ordered a large Selected Beef Offal ($18.99) and watched as the server cut up meat for three minutes.
