**Update** Returned for a second visit and was just as impressed. I ordered the shrimp scampi this time. It features tender, butter-poached jumbo shrimp with a subtle kick from the Calabrian chili, balanced by artichoke and a bright Chablis spritz, all served with toasted focaccia. While it's meant for sharing, I had it as my entrée and it was satisfying and packed with flavor. I paired it with the prickly pear margarita with tequila, which was as beautiful as it was delicious. It's a vibrant pink, lightly sweet, slightly tart, and incredibly refreshing drink. Definitely a standout cocktail! My server was friendly and attentive throughout, which made the experience even better. Parking was easy, and the atmosphere was ideal for an evening out with its dim lighting, candlelit tables, and a cozy, relaxed vibe. Service was fast and friendly, even dining alone, which I appreciated. I ordered the smoked salmon board and a glass of Prosecco. The board included both cold and hot smoked salmon, whipped feta, cucumber, pickled onions, cornichons, crispy capers, a baby Caesar salad, and crostini. Everything was fresh and well prepared. The baby Caesar was beautifully balanced, and the whipped feta was excellent. While the hot smoked salmon wasn't quite my preference (I would've personally enjoyed the board more with just the cold smoked salmon), that's more of a personal taste than a flaw in execution. Overall, it's a great spot for a casual solo dinner or a low-key night out. I'd come back, especially when I'm in the mood for cozy vibes and a relaxed evening. I would say this place is more of a bar that serves some light meals than it is a restaurant with a bar. Very attractive setting with various seating options. Food is of good quality and taste. Postino's is sexy. There, I said it. And while we did stop in for a family evening, I could tell right away that I could see myself in a silk number with a pair of heels. The cool lighting matched with warm accents could make it the perfect date spot or a place to go with friends, and you would be pleasantly satisfied. Postino's is the spot you stop in when you want something light, but more than a salad or a sandwich, OR a more elevated salad or sandwich. Our server was so kind, extremely versed in the menu, and helped us to order a few things customized to our flavor. We ordered the Meatballs and Goat Cheese, OMG Grilled Cheese with a Tomato Soup (I switched for the soup of the moment) Caesar salads, an Italian Beef Dip, and the kiddo got a grilled cheese. Yes - I know going to Postino's and not ordering a board is a crime - we will be back. Caesar Salad (10/10) - the perfect amount of sauce, cheese and fresh and crunchy greens. I was very pleased with my salad and would love to experience more of their salads Meatballs and Goat Cheese (8/10) - Delicious, in every piece of the definition, the only thing I wish it had more of was the goat cheese. I am a huge goat cheese fan, and while I understand it can be overpowering, I think a few more scoops would have done numbers in this dish. Our meatballs were also slightly overcooked, but that was easily fixed with the pomodoro. OMG Cheese and Tomato Bisque Soup (9/10) - I added some chicken to the OMG Grilled Cheese, along with arugula, and it really elevated the flavor. I also loved that I switched the soup that it came with for something a little chunkier to add that contrast when I dipped it. I think if you really enjoy grilled cheese like I do, this stand-alone would do numbers as the selected cheeses on it carry such diverse flavors. I did not try the Italian Beef Dip, but the wife gave it a solid 8/10 for flavor. I have my eyes on quite a few things for when we come back, and I look forward to trying all of the delicious offerings. read more

I've been obsessed with Postino since moving to Colorado and thrilled they continue opening up more locations across the country. You really can't beat their bruschetta boards. Usually I avoid visiting because of the crowds, but my partner and I went to Highlands Ranch on a special occasion, and this one takes reservations. Service was fantastic - our waitress even went out of her way to fix our wobbly table before we could say anything. While I enjoyed a French grenache, my partner and I split a Caprese Panini as well as a Bruschetta Board - Butternut Squash, Pepper Jam, Smoked Salmon, and Mushroom. Always love the salmon and mushroom. The squash was seasonally delicious. Could have done without the pepper jam, not sure how I haven't learned after all this time. The sandwich was phenomenal. There was a 40 minute wait, but we grabbed a seat in the couch waiting area and were called almost immediately to be seated! I frequent this location because I love the patio but I have to say last night I felt it annoying to have the spray water on when it was only 75 degrees. Water was dripping onto tables. Patrons that sat down were looking up at the CLOUDS of humidity in the air as if "WHAT THE HECK!" A girl works hard to do her hair only to have it flop in a cloud of humidity. A Friday night and 2/3 of the patio was empty. I think it's a clue. The $6 wine specials are good. I'm gluten free/grain free and had the bruschetta on gluten free bread and it was awful. You just can't replace bruschetta with gluten free bread. They have grains in all their salads so I can't eat that either. My daughter (lives in EU) ordered a charcuterie and dessert to be delivered via Ubereats for Mother's day. She brought a little taste of Europe to us as we could not be together. It was fabulous. A super fresh Brussels salad was our starter (no bagged salad here) and the dressing was perfect. We ordered a bruschetta board in which you get to pick 4 different bruschettas from their selection. If I remember correctly we got the tomato/arugula/cheese mix, salmon/pesto, spicy jam one, and the apple brie. If I were to rank my favorite from top to bottom, it'd be in that exact order. My husband had their $6 happy hour glass of wine recommended by our waiter (Nolan?), and he really enjoyed it! It's one of their white wines - Alpina from France. This is probably my favorite Postino location as the parking lot is spacious.
