Listen up, you beautiful degenerates of Colorado -- if you're anywhere near Castle Rock and you DON'T drop everything to go to The Brinkerhoff, you're actively choosing a life of sadness and regret. This place is perched up there like a goddamn castle overlooking the kingdom, windows so meticulously clean I could see my future in them (and it was eating more ribeye). The views? ABSURD. I'm talking "postcard from heaven" levels of ridiculous. You'll be stuffing your face while staring at scenery that makes you question why you ever lived in a basement apartment. The ambiance inside is straight-up opulent too -- crystal chandeliers dripping like diamonds, stone walls, red leather booths, and that massive framed vintage Beech 18 airplane photo that hits different. Speaking of which... My best friend Rob took one look at that classic twin-prop Beech 18 on the wall and the hairs on his arms stood straight up. Turns out he actually flew one of those exact legends back in the day. There's a killer story behind it -- ask the staff about it, they'll hook you up with the full tale. Goosebumps guaranteed. Brinkerhoff's was such a great find! We also had a great waiter, Larson, who was very attentive and gave great recommendations for both food and drinks. Everything we ordered was absolutely delicious, but the tuna tartare was the standout--fresh, flavorful, and beautifully prepared. The homemade pimento was also a must-try and had that comforting, homemade flavor you hope for. And the salmon was cooked perfectly and just as delicious. You can really tell there's attention to detail in the food here, from the quality of the ingredients to the preparation. Everything felt fresh, flavorful, and thoughtfully done. My husband and I came here for our anniversary and wow the restaurant is so unique! It's absolutely beautiful on the outside and the ambiance is wonderful and perfect for a date night / special celebration. We had a later reservation but the staff were super friendly and attentive. We ordered the pimento cheese dip for an appetizer and definitely recommend getting. It was so good and we asked for more bread because it was just that good. I took my wife to The Brinkerhoff for her birthday, and they made the day truly special. The grilled artichoke heart was perfect, with an excellent hickory smoky flavor. We came here for lunch on a Saturday and we were seated pretty quickly. The staff was super nice and helpful when we had any questions on the menu! There was a slight mix up when we ordered as our waitress thought we only ordered 2 entrees when we ordered 3 to share between the 2 of us but they were super nice and accommodating. We got the grapefruit juice which was $5 for fresh squeezed grapefruit juice and it was refreshing. The hummingbird roll ($28) came out next and this was a good size! It kinda threw me off that there was a chicken salad vibe in the inside of the roll but honestly it made me want to eat more because there was a citrusy taste that balanced everything out well! I got the wagyu short ribs ($54) and subbed the coleslaw with asparagus and this was so good! The ribs were super tender and fall off the bone while the sauce compliments it really well. I'm glad I subbed the coleslaw for asparagus since I'm not a fan of coleslaw. Everything was perfectly balanced which I was a little worried about since their sister restaurant, Sierra, was pretty salty when we tried them. The last entree we got was the lamb ($58) which I'm not a fan of the gamey flavor but I did try a bite and it was super tender and juicy! I do wish this came with a side rather than just the sauce only but you get 2 big pieces of lamb. What a stunning restaurant! The view is gorgeous and they have a beautiful indoor and outdoor patio area that overlooks the western mountain ridge. Inside may not have the same view but it is expertly decorated and has a full open kitchen to watch the edible masterpieces be created. The staff is top notch, attentive and friendly in every interaction. I visited for a private party luncheon and didn't order from the menu but was able to sample some truly divine eats curated especially for this occasion. Have you had sushi freshly prepared from an actual whole fish? Well that was my highlight item of the meal and it was divine! I also had the most refreshing pomegranate aperol spritz. First of all, the view from the restaurant is breathtaking! As soon as you walk into the courtyard, you're greeted with the view and spacious lounge-like areas to relax while you wait. The staff did not skip a beat welcoming my party at the door and the serving staff were attentive to anything we may have needed. One of the first things we noticed was the elegance of the entire restaurant. The food was of great quality, one guest even exclaiming, "This is one of the best steaks I've ever had!" This was the first time visiting this relatively new restaurant in Castle Rock, Colorado. I personally stopped by the week before to make a reservation and tour the restaurant. Stephanie at the front desk was very helpful - listening to my special requests and arranging to make a reservation for four people on May 1. On May 1st we arrived a bit early. The parking lot was full and we had to search for an available spot. You should note that there are three businesses all using the same parking lot so on a Friday or Saturday night you may want to get there a little early. We were promptly seated in the enclosed patio area. The hostess Sally was very customer oriented and did a great job! Our server was Jake and he was excellent! We asked him about the different items on the menu and advised him that this was our first visit to this restaurant. Jake was personable and knowledgeable and made our experience perfect ! We shared a New York strip, Caesar salad, and a loaded baked potato, along with a bottle of Flowers Pinot noir. Our friends had a steak, wedge salad, baked potato. This restaurant has a very nice wine list as well as mixed drinks available. We enjoyed the ambience of the restaurant and the view was outstanding. The sun was setting during our meal and the city lights of Castle Rock were beautiful. We had carrot cake for dessert and it was great! The sushi, salad, and cocktails were excellent. Our server was fantastic. Clearly working hard. Unfortunately, the evening was derailed by a poorly handled dress code policy. I arrived directly from the golf course with a client and was asked to remove my hat. I privately explained the context and requested a one-time exception to avoid disrupting a business dinner. Denied. I complied, only to be seated and immediately notice other patrons wearing hats without issue. Inconsistent policy enforcement ruins the guest experience. It was deeply frustrating and unprofessional, particularly in front of a client. Unfortunate end to what should have been a great meal. I had my eye on the crab cake salad which sounded refreshing and unfortunately they were out of the crab and the menu did say this was limited availability so I was not disheartened, it will just mean that I need to return. The truffle fries were excellent and pimento appetizer was a hearty portion and a fun way to start the meal. My husband and I celebrated our wedding anniversary this past Friday evening with dinner at The Brinkerhoff. We arrived a little early for our reservation, so we stopped next door at Bar Hummingbird for a drink beforehand. From the moment we walked in, we were greeted warmly by the two hostesses, who were friendly, welcoming, and seated us right away. Our server came over shortly after and walked us through the drink menu. I wish I could remember her name because she deserves recognition--she was incredibly knowledgeable, friendly, and knew every detail about the cocktails. We ordered drinks and decided to sit outside. The view is absolutely breathtaking. It feels as though you've left Castle Rock and stepped into a private villa in the French or Italian countryside. Every detail of the property is beautifully designed, and the scenery is stunning. After finishing our drinks, we headed to The Brinkerhoff for dinner and enjoyed some of the best food I've had since moving to Colorado from California. Everything was exceptional. Our server there was also fantastic and extremely knowledgeable about the menu. I'm so glad we followed her recommendations because they truly elevated our dining experience. My only negative feedback would be regarding the hostess at The Brinkerhoff that evening. She seemed annoyed that guests were arriving and came across as unfriendly, which felt out of place for a restaurant of this caliber. It wasn't the warmest first impression. That said, this interaction alone does not warrant a lower rating because once we got past the hostess stand, every other member of the staff was incredible. The atmosphere, food, service, and overall experience are top-tier. Since COVID, it often feels like exceptional customer service has become harder to find, but not here. The staff genuinely makes you feel welcome, the food is outstanding, and the entire experience is absolutely worth the price. Oh wow I really liked this place! I've been wanting to check out The Brinkerhoff since it opened, and it ended up being even better than I expected. The inside is gorgeous and feels really cozy, and the view is honestly one of the best in Castle Rock. It's the kind of place where you walk in and instantly think, okay, this is going to be good. We ordered the truffle fries and they were amazing. Super flavorful and perfectly crispy. The beef sushi rolls were another favorite. The Veggie Avocado Roll tasted like a bite out if a garden. The carrot cake was perfectly moist and rich. 5 stars. Our server humored us and provided exceptional attention to detail, making things right even when the issue was beyond his responsibilities. 5 stars. We have friends who live in Castle Rock so we were excited to give The Brinkerhoff a try for their 20th wedding anniversary while visiting recently. I've eaten at Sierra before so I was expecting another great meal at this sister restaurant and I wasn't let down. The location itself is very nicely done with plenty of seating and windows everywhere to allow patrons to enjoy the gorgeous views. We arrived a bit early for our reservation but were immediately seated on a busy Friday night by the polite hostess. Shortly after being seated, our extremely professional server (Nick) approached our table to take our drink orders and go over a few of the more notable menu items. Our drinks arrived quickly and I was very pleased with my Old Fashioned, made with chocolate bitters. Too often, bars and restaurants will make their Old Fashioneds too sweet but this one was perfect. The menu here is a bit eclectic, serving a variety of items such as chicken, steaks and lamb, but they also offer a few sushi rolls which made me a little apprehensive considering it's a landlocked restaurant. Nick assured us that all of their fish was flown in daily so we decided to start the night by trying two of their rolls before we ordered our entrees, specifically their coconut tuna roll and the spicy hiramasa roll. I asked Nick if they could omit the jalapeños from the coconut tuna roll and he said the chefs were adamant about not making changes to the menu. I was a little surprised by that until the rolls arrived, and after one bite I realized how wrong I had been to doubt him. Both rolls were absolutely delicious and it was very evident that they ensure the quality of the fish. Among the four of us, we ordered the wood-fired salmon with a kale salad, the bone-in ribeye prepared with ginger, soy and wasabi, my wife ordered the chipotle glazed Wagyu short ribs, and I had the lamb chops. Very simply, we were blown away. Everything arrived quickly, perfectly prepared, and so good that we couldn't resist sharing bites. Nick checked in with us periodically to ensure that we were well taken care of despite how busy he was with his other patrons, and even took the time to snap a couple pics for us since we were celebrating. Drove up to Castle Rock from Colorado Springs to meet some friends for dinner. They told us Brinkeroff had recently opened and was good. The restaurant is beautiful with huge windows overlooking the valley. The tables are tiered so everyone has a great view. The setting is clean, crisp and a relaxed setting. We ordered the pimenton cheese spread with honey drizzle over bread points. The cheese was tasty and the thin bread served more like a cracker. The small crab cake salad was very delicious. The flavors were balanced, no filler in the crab and just enough to help fill us up. The other entree was the chipolte glazed short ribs, shoe string fries and slaw. The ribs were Uber tender and flavor packed. The fries were hot, perfectly salted and crisp while the slaw was good. Once we finished we were not rushed to leave but allowed to sit and chat. Finally the table gave in and ordered the "mountain" sized carrot cake. It was enormous, moistt and slightly sweet with pineapple infused. Update: Our first time here was amazing, expensive, but amazing! So I decided to come back for my birthday this past Saturday. We invited another couple to join us based on my raving reviews. For some reason the sushi wasn't nearly as fresh and tasty as it was our first time but was still decent and I ate all of it. I decided to do the lamb chops this time based on a recommendation from another friend. The chops came absolutely charred and over cooked. They no longer come as a dish either, it's just the meat for $58. So I added a side of potatoes which were approx another $15 and were cold and mid at next. When I say the lamb chops came charred, I mean they looked and tasted like someone had dropped them in the charcoal bin, patted them off and then plated them. They were absolutely horrible and rancid. I only ate half of one of the chops and then pushed them aside. Unfortunately, to add insult to injury, I ended up getting severe stomach issues/food poisoning from them as well which crushed the rest of my birthday weekend celebrations including taking Monday off as well. Honestly, the cook, server, person overseeing the kitchen should have caught this, especially for the high caliber and cost of this place. This place is amazing overall but this was meant to be a highlight of kicking off my birthday weekend and it was absolutely crushed by the chops and the ensuing sick weekend that followed. We ended up spending $300 per couple and left there feeling very dissatisfied. Great location with full range Mountain View's, full bar and awesome outdoor seating. Everything is freshly made... Make sure you have your wallet, it's expensive. read more

Y'all! If I could give 10 stars I would! This restaurant has been open about 2 weeks and this was our first time dining here. Party of three plus a 2-year-old. (Next time, littles stay home). Definitely make a resy. The experience starts before you even walk into the restaurant with big beautiful fire sconces at the entrance. You walk into a courtyard that has one of the most beautiful views and chill ambiance. Then when you walk into the restaurant your captivated by the dim lighting and the gorgeous chandeliers throughout the restaurant. So beautiful. Now let's talk about the service, our receptionist was super kind and accommodating and our server, Ian, was so friendly, very prompt and just overall a great service. He took the initiative to recommend a drink pairing. Now let's get into the food because I want that chefs cookbook!!!! My gosh! The short ribs and coleslaw are the most beautiful pairing ever! That meat was melting off of the bone right into your mouth. And that coleslaw was the best coleslaw I've ever had! Another top tier menu item was the Brinkerhoff burger. Cooked to perfection with the best burst of flavors! It came with shoestring truffle fries! To sum it up... You have to go for a date night, for a birthday dinner, for a friend dates, a girl's dinner whatever it is and have the best experience ever. I cannot wait to come again the next time I'm here from Texas! I have so much more to try on the menu! I've also got to try and get the chefs cookbook. read more
