    Food and service were superb! But very noisy. Difficult to carry on a conversation. Maybe add some panels in the ceiling to quiet the noise.

The fried cheese is very different from your other standard cheeses or mozzarella sticks. The cheese is much more firm with a light fry. The cup of bacon is fatty, salty, with a tiny bit of sweetness. The ricotta gnocchi bolognese has some amazing fresh gnocchi. The bolognese sauce was okay so it's a fine dish but I probably wouldn't get it again. The duck poutine has delicious fresh fries that end up crisp topped with tons of cheese and gravy. Not a lot of duck, but a great poutine overall. Every item is always a treat and unique and makes me want to try the whole menu.

The food was very inventive; not your typical fare even for a bistro. I started with the lobster tater tots that were served with ranch. He had the perfect amount of seafood flavor and a super crispy outer; I would recommend. Next, I had the ginger pork and crispy rice dish. This had a large helping of pork that did well with the Asian flavors and that crispy rice for texture; I would recommend. My final was the miso butterscotch tart. You can't go wrong with a dessert that has butterscotch, Biscoff, marshmallow and miso. The only criticism I could make was that the tart was pretty loose, but that did not take away from the flavor. To drink this place has lots of beer taps, a good selection of wine and plenty of interesting cocktails. I chose to have a couple beers and they were both very tasty. I would like to come back with additional people so that we could try more of the menu items. Unfortunately, it is an hour away from where I live, but the next time I find myself down in the springs, I will return.

Steak bites, truffle fries, brownie skillet... I want to come back just to try more food alone. This was insane and the pricing was good, the value was good, and I even ordered truffle fries to go because I loved it so much! What is super fun is that they now have wine tastings on Tuesdays and it is a great deal. $12 for four wines. At 9 pm (note they close at 10 pm), they turned on the lights, began sweeping, closed the kitchen, and even at one point blasted music. We asked the waitress when they closed the wine bar. 10 pm. But what frustrated me the most is that the manager (I assume) came over and was acting extremely condescending. "I know you girls are having such a good time!!" And was trying to usher us out. Girl. You don't close until 10 pm. It's 9:45. If you didn't want us to stay, then maybe change the hours. I don't care if we are the only ones there. It was extremely rude and the way she said it felt, as I said, condescending. Like we were young and dumb or something. As a diner, I expect great service. Which we got for the most part. But to kick us out before it closes is unprofessional and frustrating. Of course we left, but god forbid a girl get excited about her wedding and wants to share all about it. This left a sour taste in my mouth and again, if you wanted to close early, maybe don't tell patrons the actual time you close: 10 pm. We bought a lot and a bottle of wine. Let us finish our glasses and I promise we will leave before close. I would still come back, but maybe I'll go to Vine and Wheel or another wine bar first.
