    They specialize in sourdough bread and have many kinds - sliced, whole, thin and thick crust, with olives and other varieties. They also have pizza and pastries that are ok. The prices are on the high end, but the staff is uber friendly and the place gives off a great vibe. They have a turntable and a small collection of vinyl records that you can spin - a self service that is a big draw for me . Indoor and outdoor seating on a nice street overlooking the corner of 3rd Street and Roosevelt.

    I first discovered Proof's Sourdough bread at the Farmers Market and absolutely loved it. So, when I noticed they had opened a location downtown along my commute, I knew I had to stop in. I picked up a variety of items to try: the classic sourdough loaf, olive loaf, lemon curd Danish, rosemary twist, and a 4-pack of English muffins. The place it small but plenty of seating inside and out, very cute. The classic sourdough was just what you'd expect, solid and reliable. The olive loaf was especially delicious when paired with my favorite homemade olive oil dip. The rosemary twist had good flavor and was enjoyable overall. The lemon curd danish was a bit too intense for me. I usually love tart and sour flavors, but this one was overpowering. The pastry itself was great, but I wish the lemon curd had been more evenly distributed rather than just a mound in the center. A touch more sweetness would have balanced it out better. If you love very tart lemon, this might be perfect for you, but it was a bit much for my taste. The standout item for me was definitely the english muffins. They were light, fluffy, and made the best breakfast sandwiches. I ended up eating one every morning, they're hands down the best English muffins I've ever had.

    OMG after watching many! many!! many!!!seasons of Baking shows on TV I have found a Authentic Bakery where all those hard working bakers work. I had a SALTED ROSEMARY TWIST that was bursting with real rosemary and buttery goodness. The staff is beyond friendly and the coffee is amazingly good and reasonably priced. They brew Press Coffee(a local bean roaster). I travel as airline crew and I really appreciate bakeries that put in the work.

    I've loved Proof Bread for years and was so excited that they've opened a location at Roosevelt Row. Great location in the new Eco apartments. Fast casual service where you order at the counter and they call out when your food/drink is ready. A couple of places to sit inside and a decent sized patio outside that will be great in cooler weather. Their pastries are great as always. Such a good addition to the neighborhood.

    Hand down, the best bread and pastries around!! Small location in the Roosevelt district, that has plenty of their specialty breads and pastries!!! The sourdough is my favorite, along with the morning buns. Always the most friendliest staff!!!!!!

    Proof's spot on Roosevelt is utterly fabulous. Stop in for one of their fresh pastries, get a tasty coffee to go with it, and grab a delicious loaf of bread for dinner that night. There is cute indoor seating space and a wide open walk-up window with patio. Plus the people there are always so friendly and willing to answer questions about their bread or just help start your day on a lighter note. They're an amazing addition to this part of Roosevelt and I highly recommend a stop.

    The perfect little bakery!! They serve delicious coffee and the BEST pastries! We have bought several sourdough loafs from them and each one was fantastic. You can't go wrong with anything here. The staff is always super friendly as well! They have seating on the inside and it's placed inside a nice little row of brick buildings off of Roosevelt. I highly recommend this place :) We need more places like these in Phoenix!

    If you are a sourdough lover, get your bread from Proof! Amazing quality bread without the useless ingredients you'd get from a grocery store loaf. The pastry's are also soooo good! They also have coffee! The staff was super friendly and enlightened me with the background of the business and bread! You're not only getting high quality bread, but you're also supporting a small business! I will definitely be back to get my weekly sourdough loafs!

    We've been buying Proof bread at the farmers market for awhile so I visited their bakery. GREAT patio on a quiet street (at least that morning it was). I think their pastries are the best because they're made with sourdough. By far the best bread in the city.
