Despite the playful naming conventions of their beer selection and the essence of the Big Bang Theory and scientific minds thoughtfully decorating the interior, unfortunately, this was the most disappointing brewery I've been to -- especially in San Diego. I'm a local, and frequently go to breweries and love to explore new ones that i haven't been to. I made a good dent in my list, but there's so many choices out here. Anyways... The ambiance was standard, not taking away marks here, but it was clear this brewery has become complacent and is fine with the business of their usual customers. I had tasters of all, yes all, of their available beers and seltzer's (seltzer hybrids?), and it was a challenge to get them down. Very creative with the red velvet, but the aftertaste left a medicine and a chemically sweet-like tang in my mouth. Each beer was watery, lacked flavor, and was downright wrong. Even the bartender was low energy and had no enthusiasm around their work-- we asked how the Double IPA was, we got a response "well, it's a double IPA". Nice. If you were to blind taste these beers, you'd get every category wrong. The brew master and owner need to get out and visit some breweries in the local area to understand their competition and the artful craftsmanship that goes into making a top tasting beer (or even a palatable one). It hurts to leave a poor review, especially one that takes aim at the craft brew scene, but it needs to be said. If you're looking to try a new place to check it off your list, be warned what you're heading into -- it'll be one you'll hope to forget. If you're looking for some great beer and to kick back for the evening, look elsewhere. I don't recommend this place, and hope they can figure their sh*t out and turn it around. Cheers, read more

BAZINA Beer!!!! Big Bang Style Brewery Ever since I've seen the sign QUANTUM brewery I've wanted to try this place. My inner science nerd beckoned. As this brewery name suggests its all science here. The moment you walk in one might say your transported to a college friends apartment. Games everywhere, science notes scattered throughout the walls, comfortable seating and a simple bad sitting in the middle of the room. Delicious micro brews. BF and I had a flight and tried the darkest brew available. We sampled the following brews: Yellow Cake = This brew was absolutely true to its name sake. Sweet, smooth & strong. Planck's Peppers = Not as spicy we wanted. 650 Numometers = Red ale, very smooth & tasty. Solar Flare = Full of perfect blood orange flavor. One of my favorites. I have 2 experiences to share with Quantum Brewing. 1. The brewery taproom itself: The taproom is warm and inviting and the bartenders are friendly and knowledgeable. The beers are all science-themed like "Boron Brown", "Solar Flare", "White Dwarf", and this nerd girl loves it. There are hooks under the bar for purses, WINNING! A detail that is NOT unnoticed by those of us with purses. The beer selection isn't too big, so it's not overwhelming, but there's something for everyone to love. Together with my husband, we tried 5 beers, all were excellent. My favorite is the Solar Flare Blood Orange Wheat. Delicious. I'll be returning for beer yoga, which they run every 1st and 3rd Saturday of the month. 2. I went to the taproom because I met some amazing workers at the San Diego Brew Fest. There, I tried the White Dwarf which was easily one of the best at the festival. I went back for seconds and they generously gave me a coupon worth $3.50 off my first pint at their taproom. The guys were humble, knowledgeable, and funny! Overall, my two experiences with Quantum Brewing have been great! Quantum brewing is pretty cute. Small neighborhood brewery, serving physics inspired beers. I like the fact it is a small brewery and the vibe is relaxed and low key. They offered about 8 different beers when I visited. I did a 4 taster flight for $8. Such a good deal. My personal favorite was Solar Flare Blood Orange Wheat, which was smooth with a hint of blood orange flavor in the end. I also like their Project 71 IPA, pretty good IPA. Singularity stout was not as good as I expected. Just not as smooth and flavorful as I like it. Planck's Peppers habanero pale ale was pretty good, not too spicy, just enough kick for the beer. Other than beer, I like the option that you can actually order food at near-by restaurants and enjoy their beer at the same time. I like the vibe of this place, beers are okay, but cool place to hang out after work. read more

Came here on a Sunday. Never been here. Once I walk in I a was great it by the bartender. Didn't know what beer to choose. The bartender ask what beers do you usually like to drink. Unfortunately, I jumped the gun and ended up buying a Groupon for a tasting. Based on my experience here, I have learned to steer clear of any Groupon craft beer tasting deals as I know they are surely a sign of a struggling brewery trying in vain to attract customers into their doors. Quantum greatly misses the mark on a product that should define who they are. Their beer - for lack of better words - was atrocious. It doesn't take an immaculate palette to define what their beer is. Their beer was obviously very soapy and not well carbonated. But, their IPA was the most disturbing with such a prominent and sharp metallic taste. Obviously, something from their equipment is bleeding into their beer. What's even worse is that they are blatantly serving these tainted products to their customers! Any brewer would be able to detect these off flavors and immediately they would dump the product. Such a shame because I love the scientific theme they have going on. But, Quantum's science experiment exploded in their faces! read more

This is one of my favorite breweries in San Diego. There are so many tasty things on tap. I have taken a growler home from this place a couple of times just so I can continue enjoying something in the comforts of home. The place is also super dog friendly. They even have special dog treats made from the leftovers of the brewing process. One of the great things about this brewery is that it is located next to a bunch of really solid restaurants so you can enjoy a great drink and a meal here. Love coming here and will continue to go. Came here after dinner for a few beers. I liked how all the beers are themed after nuclear reactions. I liked the Boron Brown and the Hadron Collider Bavarian Wheat. They were both very smooth and easy drinking, not bitter at all, my kind of beers. $5.50 for pints and $2 for 5 oz taster. They don't have food but you can phone in an order to Anny's fine burger or Filippi's pizza grotto next door and they will deliver. I mean what goes better with beer than pizza or a burger? I did find it strange for a brewery that the brew tanks were not on display. After talking to some people, the reason why you don't see huge tanks like other breweries is that they are a true micro brewery or maybe a nano brewery. They are brewed in small batches, not the huge tanks that you see at other so called micro breweries. No wonder i like this beer so much its still brewed in small batches the same way you'd do yourself at home! read more

3 stars for the beer since it's a new brewery (less than a year with the current owner) and they had many above average beers. We especially liked the chain reaction, Cyrano cream ale, and the area 51. Pales constant has an impressive 7.7% alcohol content, which is quite high for a pale. Planks pepper has a nice burn with 7.2%. Staff is very friendly and thoughtful. Theyno offer a sample of each beer before you add it yo your flight. The science geek in me loves the merch. Alley gives this place an additional star for being very dog friendly. There is a bar dog, Max who enthusiastically greets as we walked in. He is very friendly and cute. He agreed to share his bowl and treats with Alley pup. Get the Groupon, it's a smoking deal. read more

Very mediocre place. Beer was okay, they had a habanero beer I liked. The guy working did not seem like he cared about his job at all (maybe because we came in with a Groupon?) This place felt like they put in the minimum effort in terms for how it looked and felt inside. It was very dead when we came and for how slow it was, the service was not great. We were excited about the board games until we realized pieces were missing so we couldn't play a complete game. Overall, we did not have a good experience and would not recommend this place to others. read more

Given that they have a science theme going on, you'd think you'd see: - Beakers for glasses instead of normal glassware - Test tubes used for tasters - Employees wearing white lab coats - Science lab themed bar (test tubes and beakers full of food coloring) - Retro Star Trek-like flashing lights behind the bar The beer is good here, I just think they need to take it one step further with the theme. read more

The setting: really cool bar - classic, dim feel, neat giant chalkboard, easy parking. The time: came immediately after the day job so was there around 5:45 PM. It wasn't crowded but by 6:30 there was a good crowd. The "who": our bartender, Tray, was immediately attentive and helpful and made decent recommendations. Honored our Groupon no questions asked and wasn't pretentious at all. The why: We bought a groupon for a flight for 2 people and two take home glasses. The how: the execution wasn't really there. I liked 2/4 of my beers, but the wheat had a fairly pungent musty taste to it that I've never tasted in beer before while another one was only slightly less pungent. About 1/3 of their beers were out of stock. I enjoyed the brown a lot - had excellent notes of cappuccino and was very smooth. The nitro stout was a good end as well. This place has potential, but it does have some bad batches of beer. I was hoping for more because this place didn't seem to specialize in IPAs like every other brewery in San Diego and had a wide variety of beers, but when 2/4 are to the point where if I had a full pint I wouldn't have finished them, that's not good. read more

Important note: This brewery was purchased by a new owner/brewer in mid-2016, so reviews/comments from before then aren't relevant. I had the pleasure of being served by Martin, the owner. We connected over the fact that we both love beer and science and we are both Canadians living in So Cal. He has a PhD in bioscience, which comes in handy dealing with the biology and chemistry of brewing! They were pouring 12 beers during my visit. They all have fun science-related names--Fissile Material, Boron Brown^2, Chain Reaction, etc. The Irish Red Ale is called 650 Nanometers, which is the wavelength of red light. Even a typical brewing term like Final Gravity takes on a science-y vibe here. I was in the mood for darker beers on my visit so I didn't try any of the several IPAs available. I was chatting so much I didn't take tasting notes but most everything I tried was good, with Singularity Stout and Project 99 (a brown ale) being my favorites. Solar Flare, a blood orange wheat beer that is a top seller, is also good. The tasting room is small but nicely done. It's in a strip mall, and makes good use of the big glass front wall. Seating is comfortable and the small-ish bar hides the brewing operation in the back. Parking is easy. Martin told me he is much more interested in creating new and innovative beers rather than just replicating traditional styles. That by itself makes Quantum worth visiting for the craft beer lover. I really want to like this place. So much, I have brought groups here a few times, but the result is always the same. Very odd beer. I will chalk it up to them getting their recipes right, as they have not been open long. The orange wheat does not taste like an orange wheat at all. No citrus, too much body, and no refreshing wheat hints. Like it didn't know if it were an IPA or a belgian, or a wit. I love IPAs (yes, I'm a hop-head), so I was so disappointed they were out of ALL of their IPAs except a session ale. A friend really liked their brown ale, but the standout for me was the porter. So creamy, it took 10min for the head to recede enough to drink. That's the winner here for sure. However, I think we will wait a few more months before returning, to let them work out the kinks (and to realize that in SD, IPAs will sell out first!). Oh yeah, and dispite them claiming to be a science themed place, they erased all our chemical and protein structures we (chemistry grad students) drew on the chalkboard so someone could draw a cat and a dodge truck emblem. My BF & I invited my sister and brother-in-law for a beer tasting at Quantum Brewing. I used the Groupon deal for 4 beer flights and 4 take home glasses. We're so engaging in a conversation that I didn't take more than one pic. I only a pic of four samples of beers that I had. I had (1) Planck's Peppers Habanero pale ale, (2) Hadron Wheat Collider Bavarian Wheat, (3) Singularity Stout, and (4) Cappuccino Brown Brown Ale. I particularly like Cappuccino Brown the best. Taste like light coffee beer. It was smooth and a bit creamy. The Planck's Pepper was more drinkable than Ballast Point's Habanero Sculpin. The heat of the habanero wasn't as potent as BP's habanero. Their Stout was somewhat like Guinness but different. I can't describe it except to tell you it was between good and not bad. Hadron is a a light-bodied Bavarian wheat with a bit tartness. It was okay. Quantum Brewing only offer pretzels as a food source. There are restaurants in the same plaza. You can order from Anny's Burgers and Flippi's and have your food delivered there. Or you can bring your own food. I brought lentil chips and Chobani dip. My sis brought fruit and cheese. I have read the reviews in Yelp prior to coming here. It has been a awhile since they had a new review. So I thought to give Quantum brewery a chance. From prospective, I think they had improved. Their beer didn't taste foul or ash-like like some reviewers said. My only complaint is that I wish their beers were served colder. My BF liked their beers. He said it wasn't bad. My sis didn't drink the Stout and her hubby didn't drink that Cappuccino one. So they switched. My sis liked the Cappuccino and her hubby liked the Chain Reaction. My sis took a pic of of a motivational quote that was written on the gigantic chalkboard (Einstein would like this) inside the brewery. "You're living, you occupy space, and you have mass. You know what that means? You matter." I googled on the quote and it seems to me that Einstein wrote that. It was worth sharing the photo in Yelp. 1/23/2019 I'm glad that my BF and I returned to give them another try. I've gone several times after the first reviews. But this time, they have improved a lot. I really enjoyed the flight, 4 tastings, of White Dwarf(Belgium ale) Yellowcake (Imperial IPA) Plancks Pepper (Habanero) and Final Gravity (Russian Imperial Stout). They were served very chilled. White Dwarf had a tasted like as if it is made with white wine and light beer. Like barrel aged or something. Very good! Yellowcake had a sweet taste to it. I liked it. Plancks Pepper was more drinkable that Ballast Point's Habanero beer. It was heavy with Habanero and still gives you the kick and the warm feeling. Final Gravity had a very interesting taste. It was hard for me determined what's in it. I like it very much. Overall, I think they deserve medal or a ribbon for the beers. Especially those four that we had. read more

Absolutely love this place! We came here with a Groupon and were not disappointed. It is a small start up brewery that reminds me of Mother Earth. We got two taster flights and two pints. I am a big fan of stouts and their stout was definitely tasty. The stout has a strong coffee finish, which is what I like about stouts. My husband is a fan of IPAs and he liked Anti-Matter IPA over Chain Reaction IPA. They make it easy to make it a family event with space for children to hang out, color and play. They don't do food, but there are some good choices in the vicinity that deliver. They have information about it on their chalkboard wall. Bonus: IT IS DOG FRIENDLY. They have a bowl for water by the entrance. The bartender was really nice. She was very attentive to all the people there and social. We got to meet and chat with the owner. He was very humble about his business, which was great. We appreciated that he took a moment to stop and chat with his customers. It feels like you're drinking beer in your basement and there's a huge chalk board with pseudo science quantum physics scribbles. Perhaps to make you feel like you're some genius innovator drinking and scheming ideas in your garage a la Steve Jobs or that Facebook guy. The truth is, the ambiance is low low frills and there's only about six beers on tap. No food is served but Fillipi's and Annys burgers deliver for free and you can bring in any eats you like. Good thing maurico's just opened shop next door. Tasters are a deal at 2 bucks a piece and 6.25 for four; you bet I opted for the latter. I enjoyed the wheat beer the best. The others.were not up my alley - including the surprisingly off nitro stout. Nitro stout are among my favorite brews but the one here was hard to finish.
