Someone in that truck has lost sleep over dough hydration and fermentation times, and you can taste every obsessive hour. The complex, yeasty chew doesn't lie. That leopard-spotted char happens in all the right places, and the bubble structure? You don't get that from quick-rise dough some guy mixed three hours ago. The sauce has this vinegary kick that'll probably make a Neapolitan purist clutch their pearls. But honestly? Sometimes tradition needs a little deviation to keep things interesting. It cuts through the richness and wakes up your palate instead of just sitting there like most tomato sauces. Inside Bravo, it's relaxed without being boring. Lively without trying too hard. It was so very good, buttery, and fresh. For ice cream, I had their pistachio nut. I really enjoyed that the ice cream had pistachios in it.
