Got three pizzas from this freaky fast pizza maker van. We tried the veggie +pepperoni, the cubano, and the Bob Atillo. Veggie one was meh for me. Veggies were a bit crunchy for my taste but layer heavy so that's a plus. Cubano is also good. Bob Atillo is the best. The pulled pork and green sauce was a great combo. I believe one of the oddest things about food trucks is the ability to make high quality food in such a short amount of space. Especially pizza! My wife and I had downloaded the Truckster app and were on a hunt for some trucks. We ended up stumbling on Rolling Dough and decided to give it a try. We ended up ordering a custom pizza and their fried chicken and waffles pizza. Onto the food! As always, we must first get the bad out of the way. The fried chicken and waffles pizza was extremely sweet. The chicken was well done, but it did not pair well with the overall dish. I believe it really had to do with how sweet the pizza was. A good change might be adding the syrup on the side so the buyer could implement their amount of syrup. Leveling out the sweetness at their choosing. Besides this, the custom pizza I made was amazing! It had an amazing crunch, burnt edges and the toppings were fresh! The cheese had an amazing taste and overall was worth making my own pizza. I have to get the bigger size next time! Overall, Rolling Dough does an amazing job of taking pizza on the go. The service was quick, easy, and clean. My friends had a pizza, but I just went with the garlic sticks. I was not very impressed with them. They had attractive charred bits on the surface of the dough, but also somehow managed to be both under-cooked and over-cooked at the same time. So, it was a combination of both burnt and semi-raw from my flavor and texture perspective. My friends said the sticks tasted garlicky to them, but I was really not picking up on a lot of flavor. The tomato dipping sauce was also rather disappointing. It was ice-cold. Seriously, if you are going to give me a red sauce in which to dip my pizza sticks, then it should at least be warm, if not hot. To me, it seemed almost more like a gazpacho than an actual dipping sauce that would be appropriate for garlic knots and/or sticks. I love onions, but the chunks of chilled onions in the sauce were rather off-putting. The pizza my friend were enjoying (with nice runny egg yolks on top) looked considerably better than my sad garlic sticks. The service was decent, and they were doing a brisk business at Mountain Toad. I could almost go three stars, but I really did not care for what I ate on this visit. read more

The cordon blue pizza was the single best piece of food I've had out of a food truck. The people making the food were incredibly helpful with allergies (I am anaphylactic) and we had no issues on that front. We now try and follow this truck around because we're stoked off it. I've tried Rolling Dough several times now and overall, I really like them. Pretty impressed that they create such delicious wood fired pizza out of a truck! This is the first pizza I've tried in Colorado where I can say that the crust is my favorite part. It's so delicious- perfectly chewy and actually flavorful. Their red sauce isn't bad, but it's not my favorite. The margherita pizza has been my favorite so far but they also offer several unique pies you don't see everywhere- for example, breakfast pizza. There's also the option to build your own. The prices aren't bad either- $5 to 7 for a 6" pie, they offer 12" pizzas too but I'm not sure of the pricing on those. The employees are always friendly, the food comes out quickly, and the portions are perfect- I'm always excited when I see this truck parked outside of Joyride! read more

This was my first time having this place and they warned up about the gluten free option which I didn't understand at the time. After trying it they should have just said it doesn't taste good. Given then we waited in line for over a half hour the let down was pretty significant. To say the least they need to work on their customer communication or at least offer a sample if they "warn" you that it tastes "different". Also both my wife and I normally eat gluten free so we are used to the different tastes of gluten free food and this straight up tasted like week old cardboard with chocolate chunks. read more

I always stop by this truck when it's at Cannonball. Excellent service, lots of choices, all at a great price--and they take cards! Perfect! I usually go for the Cordon Bleu pizza--a very original idea, wonderfully executed, full of flavor and very satisfying. Mushroom gravy on a pizza, who knew? Delicious! I've also done the Build Your Own, I personally recommend the olive and garlic "sauce", with an array of veggies and mozzarella cheese. And of course the specials. That biscuits'n'gravy pizza was insanely good! They hit the Goldilocks zone with all their toppings. As for the garlic sticks review, I've never been disappointed in them. Since they use a real wood fire oven, I'm sure there's bound to be a few mishaps? Give them another chance! They're nice guys, I'm sure they would have happily remade them. Went to this truck with my husband and brother and we got six pizzas to share among us (five 6" and one 12") - planning to take some pizza leftovers home to roommates too. We got the Cuban, the bob-atillo, the margarita, the breakfast pizza, the cordon bleu, and a custom pineapple, pepperoni, and garlic large pizza. They came out of the oven SO fast and were all really great- you could tell the ingredients were super fresh and all the flavors went so well together (remember to squeeze your lemon on the cordon bleu, both because it's Fancy and because it adds SO much flavor)! :) The cordon bleu or the bob-atillo were my favorites. One 6" pizza is the perfect size for one person - and you don't have to feel guilty eating it all, as the crust is fluffy but not so thick to the point where it overpowers the actual pizza flavors. It's hard to find good crust and I really liked this one. Will definitely come back and bring friends. delish! read more

It's a food truck operating in and around Golden, so you have to go to their Facebook page to get their weekly calendar of locations. They are regularly parked at craft breweries. Our group started with traditional margherita pizza -- excellent toppings, well-spiced sauce and perfect crust. Ditto on the veggie pizza. Also sampled two specialty pizzas -- Bob-atillo made with green tomatillo sauce and braised pork and a chicken cordon bleu pizza. Both were stand-outs and addictive. We live closer to The Springs, but we were up north and decided to seek out "Rolling Dough" after a friend recommended it. Our family really enjoyed it, and we would definitely make a point of finding them when we're in the area. Golden is beautiful, and I don't think they could've picked a better location to start up this business. First, wood-fired pizza is just the best. It smells amazing and tastes even better. My daughter told me afterwards, "That pizza was so good! I think I ate more pizza than I ever have in my life." They also use really fresh ingredients, and you can tell. It makes a difference. The Cordon Bleu was unique and delicious. Don't be afraid to try something you hadn't thought of before. They know what they're doing with pizza. Second, the pizza truck is new and and looks great. Can't beat that when you're actually ordering food from a food truck, right? Finally, the girl that took our order was nice and very friendly. The service was great! Recently had this amazing Pizza truck cater an event at my home in the mountains. They drove an hour outside of Denver. Joe, David and Andy were professional and did an awesome job. Everything from the Bruschetta and garlic stick appetizers to the spring mix salad was fresh and plentiful. They showed up on time, set up and were ready to rock and roll as guests arrived. Andy even offered to shuttle guests up and down my driveway so they wouldn't have to walk! AMAZING customer service by all of them. Guests kept eating and eating and eating. The pizza was a totally fun experience with the variety to choose from. Not sure how many pizza's came out of their truck, but after 4 or more hours, everyone was full and happy!
