Expected to order lunch, but 90% of the menu is geared towards breakfast, so I had the fried chicken over French toast bites. Wasn't sure what a French toast bite was. Come to find out, it's a 1-2" chunks of French toast deep fried. Though it was good, I enjoy standard French toast more. The chicken was very nicely done, hot as heck (temperature) and just moderately spiced with a drizzle of honey. A few strawberry pieces were tossed in, though it could have used twice as many. My family was visiting for Easter weekend and haven't been to Knoxville in awhile. My sister and I wanted to take them to brunch so we decided to try Ruby Sunshine. We looked up their Yelp page to see if they needed reservations since I had heard that their Saturday brunch time is very crowded. It had a link to their reservation page so we decided to be safe than sorry and put one in. There were going to be 9 people in our party and the reservation app stated that parties larger than 8 may be seated at separate tables and separate times. We really didn't want to have to do that, so we called first thing in the morning and spoke to someone at the restaurant. The man my sister spoke to was happy to accommodate us by putting in our reservation and said we would be able to be seated at the same time and at the same table, which was fantastic! When we arrived around 11, there was already a bit of a crowd waiting to be seated. We only had to wait about 10-15 minutes before we were taken upstairs to our table. Our waitress was very friendly and attentive to everything we needed. She also happily provided me with a menu that lists all their items and dietary/allergy labels. I have a gluten allergy so the gluten-free portion of the menu was such a big help! We began with drinks and some beignets. Three of us shared the mimosa flight which we all enjoyed the various flavor juices it came with. It was the perfect amounts to share between 2-3 people. While I couldn't eat the beignets, everyone else said they were very good! Once we ordered our entrees, they came out in decent timing and cooked how we ordered. Our waitress was very good especially since my order was a bit more complicated due to my food allergies and I needed to make several substitutions (egg whites instead of regular eggs and tomatoes instead of mushrooms). The waitress also asked if I wanted to keep the GF toast or trade it out for the potatoes or grits. I don't care for GF breads so I went with her suggestion of the potatoes and I'm glad I did--they were very good! We all had a wonderful meal and enjoyed our time at Ruby Sunshine. Everybody mentioned how delicious their food was. The prices aren't bad either for the amounts you get. Since our party was larger than 8, our gratuity was included in our bill so make sure to keep that in mind if you also come here with a larger group. The food at Ruby Sunshine is average. I ordered the Breakfast Sandwich and it was good but not great. However, I did appreciate that my egg was cooked over medium as requested. The host and waiter were also very friendly. My biggest concern was their restroom situation. My group and I were seated upstairs and the back of the restaurant had two doors with restroom signs on them. Once I actually got to the back, the area looked like it was part of the kitchen and there was an Employees Only sign. I was informed the bathrooms are actually downstairs. There were three people ahead of me and we were cramped in a tight hallway with servers traveling back and forth with trays of hot food and dirty dishes. Not an ideal restroom location. People who sat down after us got their food before us. We had to ask for refills (which weren't given to us and then we had to remind him again after he gave refills to a different table) and weren't checked on at all. If you want beignets similar to those you get in New Orleans, don't get them here. They were pretty thin and not super flavorful. The omelet barely had any filling in it. I paid for ham and got two pieces. The biscuit was terrible and we love all biscuits so that says a lot. The Migas was good at least, good flavor and the chorizo has good flavor. The Spanish omelet was good and so was the southern breakfast. I would do a hard pass on their beignets. First, their beignets were incredibly hard as though it had been over fried. Second these are not the typical beignets that are square like, light and fluffy. They were round and cake like almost like a fried donut ball. You can give the host your cell number and they text you when your table is ready, which would be helpful with longer wait times. The outside patio is nice and cool in the shade. Our server was friendly and fast, especially for a busy weekend morning. The Farmer's Market was happening so there was constant foot traffic but we did not feel crowded or too close to the sidewalk. On a road trip back to Chicago, Knoxville was on the way. After a good ol Yelp search, Ruby Sunshine seemed like a cute spot for us to stop at. He would remember the little things (in terms of preferences, like lemons, even in my to go water) & was very adamant about us getting what we wanted. I didn't feel anxious when ordering w him & asking questions, which is a big win for me. Now, the food. After picking the avocado toast (which still sounds so good & i'll have to be back for) I found out they have a whole gluten-free friendly menu. I should've asked in the beginning but seeing the french toast was definitely a game changer for me. I'm not sure how many years it's been since I was able to have french toast but this gluten free one was to die for. The butter, the texture, the perfect amount of cooked, not soggy, not crumby, absolutely yum. I also tried the Ruby Margarita which was good. Im a pretty big fan of pomegranate & feel a bit more of it would spice it up (& have it live up to its name.) The overall experience was great. No red flags, nothing negative to even say, because even the bathrooms were clean, lol. Each employee we encountered was kind & didn't seem too stressed. Five star breakfast this morning with my wife. We got on line in with the Yelp app so when we arrived, we had absolutely no wait for our table. It was awesome. Walk in and we were immediately brought to a lovely table upstairs by the window. Service from our waitress was great, too. Lots of coffee, lots of smiles, lots of attention when needed. My wife chose the French toast with strawberries and they remembered not to dust it with powdered sugar. There were enough strawberries and the French toast was perfect. I was allowed to have a small corner. For my breakfast, I had the smoked salmon omelet. Very nicely loaded with salmon and cream cheese, topped with a few chopped red onions and capers.
