New Mexico Enchilada
Rachel M.

Armando and his staff run a phenomenal business! Although the location is quite unassuming (next to a gas station on I-25), the interior is beautiful and the culinary options are unbeatable! The food was absolutely delicious, and the menu is quite diverse & extensive. There's a dish for everyone here! I had the New Mexico enchilada - it was aesthetic beautiful, incredibly flavorful, and very filling. I'd easily make the drive from Denver to experience this wonderful Mexican cuisine again.

This place is amazing. Due to the location you wouldn't think of popping in for their delicious food. They start you with Fideo rather than the traditional chips and salsa and it was perfection. I ordered the Mole and was not disappointed. The house margarita with guava was tasty as well. The ambiance is beautiful, with amazing service. I will most certainly be coming back to this amazing restaurant. It gives you the elevated experience in an unexpected location.

Burrito deluxe

What an exceptional culinary gem! We flew into Denver and were headed north to Wyoming, craving some great Mexican food--and wow, did we strike gold. Nestled beside a truck stop just off I-25, this restaurant is a surprising and delightful contrast to its surroundings: modern, upscale, and absolutely outstanding. We started with the tableside guacamole, which was a show in itself--prepared to perfection with creamy, impeccably ripe avocados and just the right balance of lime, salt, and spice. For the main course, we shared the deluxe burrito with pork carnitas , and I don't say this lightly: it was the best burrito I've had in my life. The meat was fall-apart tender and incredibly flavorful, wrapped in a tortilla that held everything together without being too heavy. I wish we'd arrived during happy hour because their margarita menu looked incredible--definitely a reason to plan a return trip. Prices are a bit on the higher side, but the quality more than justifies it. This place isn't just a pit stop--it's a destination. Five stars without hesitation. We'll absolutely be back.

Inside. Totally forgot to get pic of food before eating!

Was not expecting this to be as great as it did! When we drive up we saw a building attached to a gas station. Honestly hesitation set in but we are always up for an adventure. The outside does not do it justice. This place inside and food was on point. We were early and the only ones in the place BUT still highly recommend. First thing my husband and I both noticed was how clean the place was when we walked in. The ambiance is fun, festival, cheerful! The large rope light in the middle is very cool! We ordered the carne asada plate and a chorizo quesadilla. Both were very good. The asada was flavored very well and very juicy. Asked for rear and it was - thankfully!!! My husband doesn't usually like chorizo but he said he loved this one. We had the queso blanco and it was good. Price point was as expected. The ONLY complaint I would say is that they didn't have bottle CokeCola or CokeCola in fountain, at all. Husband is a CokeCola fan so that was the only down side. If you're in the area I HIGHLY recommend giving them a try.

Don't judge this place by the exterior. The interior is very nice and the food is amazing. The service was fast and pleasant too.

The chicken flautas and the sopapillas are delicious! I came to this restaurant with a group of people, and we all voted for those two dishes as our top picks. The least favorite was the scallops, it had too much going on. Everyone gets a free cup of soup before ordering, that is such a nice touch. The Queso Fundido Artesanal is a great appetizer to share, perfect for fans of cheese. We opted for chips instead of corn tortillas. Great service, great food, and lots of parking! Their menu has quite the variety, I'm sure everyone will find something to enjoy.

You'd never know Rumbo 52 was inside/attached to a truck stop if you didn't drive past the pumps to get to the entrance. This elevated Mexican experience is fun, delicious, and easy to get to. I've had the pleasure of dining at Rumbo 52 a couple of times now, and the service was a ten both times. Everyone is friendly, and you can tell they are passionate about serving great food. The atmosphere is also fun, as the decor combines traditional Mexican art and style mixed with a few trees and an upscale bar. I recommend the table-side guacamole to start the meal, as it was a hit with our group. Made to order and to your liking, this will not disappoint. As for drinks, the Margarita flight is a great way to try a little of all the flavors. They have a great selection of tequila and mezcal with a handful of creative cocktails. None of them let us down. Entrees: this is where you'll struggle to make a selection. They have a large menu; honestly, it all sounds great. The few items I have had, which are in the pictures, have been good. I had a few items that could have been better, but overall, I was satisfied. Those items were the scallops; first, they are a little on the small side for a scallop dish; second, one of the four was bad, just tasted really fishy; lastly, it was too busy. There are too many flavors for such a delicate protein. The other dish was the pork belly; it was excellent, but it was not tender. It could have used another hour of braising, but the flavors were off the chart. Overall, Rumbo 52 is a fun place to grab dinner and a drink with friends. The service is excellent, and the menu is exciting. Full disclosure: on both visits, someone in our party reported stomach issues after our visit. I can't say that it was because of our meals here, but it is a little ironic.

Hidden Gem - Undiscovered Gold! Some friends just steered us to Rumbo 52 Cocina & Cantina in the truck stop on the west side of I-25 on Hwy 52 in Frederick. Not to be Snooty or anything, but this is NOT what you expect to find at a Truck stop. (It's actually a good stop, with good gas prices.) I'll say it: This may be the best Mexican restaurant I have ever visited in my life. With a dazzling menu, the food is fantastic, the house margaritas are super, the service is great, and it's gorgeous inside! We'll be back!

Three enchilada plate with refried black beans, rice, and chips & 3 salsas. Delish!

I don't write many reviews on Yelp, but my dining experience at Rumbo 52 was one of the best in a very long time. As soon as I walked into the door, a waitress came right over to me and asked where I would like to sit. I chose a seat at the bar because they were packed. It was Monday night and most of the tables were full. As soon as I sat down the bartender & co-owner immediately greeted me and we talked literally through my entire. He was cranking out margaritas and his house margarita was awesome! I asked him what he recommended, and he suggested the three enchilada meal which was absolutely beautiful when presented and tasted even better. Not too many restaurants place garnishments on top of their main entrees, but Rumba took the extra step to make my meal look like a work of art. I couldn't wait to destroy the beautiful food and that I did! I also noticed waiters and waitresses saying goodbye to customers that they didn't wait on. Not only did I have an awesome experience, I made a new friend! Thank you again!!

Mountain sunset, with traffic lights , car lights

The atmosphere was delightful ! The people are so friendly , even more so with a tasty margarita. Completely fell in love with the chips and a crunchy fluffy chip and three types of salsa. My husband and I found the chili relleno so yummy. His was crispy relleno with medium green chili ( not as hot as he thought it would be but still very tasty) . Mine was a tamale with mild green chili on top, so tasty! Also had a chili relleono stuff with deliciousness. They add tasty side salads and soup. Elegant and satisfying Thank you Rumbo 52 ! Who knew a restaurant tuck away next to a gas station could be such a fanciful dream. We would drop in often except we live in Florida. But will stop on our way to the airport. Gotta try the shrimp. Oh ya baby.

I was skeptical about the location (being next to an old gas station) but the interior was so nice and pretty. I recommend the rellenos!

When looking at the menu, the prices were outrageous, but thought the food must be really good! The restaurant doors were locked when we arrived around 11:30, even though their website said they opened at 10:00. I like to support local restaurants but this one was horribly disappointing! We were the only customers in the restaurant and service was extremely slow. There was only one employee we saw, the one who unlocked the door for us and turned out to be our waitress. She was polite, but very slow in getting our drink order, food order, and ticket. I could have understood understaffing, but as mentioned, we were the only customers in the place. When our food came, I was almost embarrassed for our waitress. The food hardly filled our plates. I ordered a chicken dish where the chicken breast had been split in half. It was tough and hard to cut and and chew. It was maybe the size of a small burger, very small and about 1/4 of an inch thick! According to the menu description, it was supposed to be marinated. It tasted like the "marinade" was ketchup mixed with a little Tabasco. Other plates were very skimpy on food. Burritos and enchiladas were small and almost almost laid flat on the plates. I guess I could deal with it better if the cost was about ¼ of the price we paid. No drinks for 4 totaled, with tip, around $80.00!! Will never go to this place again! I typically don't do reviews but this experience was completely "over the top" bad in all areas. We all left feeling cheated, and hungry! Don't waste your money here!

If I had someone to be my designated driver I would have had the 2 for 1 margaritas which is a Monday special. The restaurant interior was bright and funky! There are tables and booths available. The bar area has an extensive selection of tequila. I've seen bottles that I've never seen before. Our server was so friendly and extremely attentive. Both our drinks and food were served in a timely manner. I ordered the Horchata and it was delicious! I ordered the chicken fajitas for lunch and the portion was huge! I was definitely able to take some home. The food tasted so fresh. In addition to the 2 for margaritas on Monday, I am so impressed by the number of daily specials this restaurant has. Other specials include $3 taco Tuesdays, 2 for 1 Mezcalitos on Wednesdays and 2 for 1 cocktails on Thursdays for the ladies. There is also a Happy Hour which includes discount margaritas and $3 tacos. There is plenty of free parking.

I was in Longmont for the home and garden show and I was hungry so this was my opportunity to give Rosa's Cantina a try. They were very busy but I was greeted and seated promptly. The place is nice and they have a lot of seating and a patio but too cold that day for outdoor dining. I ordered the Burrito Tijuana which looked to be a good choice based on the menu description. The burrito was very good with a generous portion of steak. The chili smothering the buritto was flavorful but not very spicy. I wish they provided a little more pico salsa on the side, there was probably a teaspoon of pico. I enjoyed the buritto, it was sizeable, flavorful but not spicy enough for my taste buds. The server was good, she was attentive and pleasant. The place was clean, prices were reasonable, service was good as well as the food. Would I go back ? I might go back if the planets align but I wouldn't make a special trip. My only real letdowns were the shortage of pico and they don't offer free chips and salsa. I've come to expect and appreciate Mexican restaurants who still offer free chips and salsa.

Everything here is about $3 - $4 more than other Mexican joints in Longmont or Dacono or anywhere really. The ceviche was $19.99 for an average amount of ceviche with 5 slices of avocado and 3 tostadas. Slightly overpriced, but the quality was not good. Chewy fish that was not fresh and lukewarm shrimp. I only ate about half because it was not good. I hope I don't get sick. Wife had the burrito cho cho for $17. She said it was a decent portion but it was too salty. Ours was about 45 minutes. They ended up seating us at a shared high-top table with another couple, which honestly wasn't a big deal. The peppers were fried perfectly with just the right crispiness and a little salt, and that sweet orange sauce paired with them so well. Definitely one of the best things we ordered. My friends also got queso, salsa, and ceviche. The ceviche was fresh and delicious, but the salsa was way too hot for me personally. I took one bite and couldn't handle another. For my entrée, I ordered the carne asada, and unfortunately it just was not what I expected. Instead of the thinner, flavorful steak I'm used to, it was a thick chunk of meat that was really chewy, fatty, and honestly lacked flavor. It just didn't work for me at all. The rice and beans were decent though, so no complaints there. The service was okay, but our server definitely seemed overwhelmed or maybe just uninterested. We often didn't see her for long stretches of time, so when she did come by, we had multiple things to ask for. It kind of felt like we were a burden anytime we needed something, which put a little damper on the experience. Overall, I'd probably give this place a 6/10. There were definitely some highlights, especially the appetizers and the atmosphere, and I'd still be willing to go back and try something different because I don't want one disappointing entrée to completely ruin the place for me.
