Their shaking beef was also meh, very thin and overly sweet, probably not their strongest dish. Banh xeo was full of meat and fillings, but not particularly crispy. I was a big fan of this place when it first opened and used to rave about their pho. Unfortunately, my visit on 5/2 was a huge letdown. From the moment I walked in, the service began with a bad start. The staff were chatting and joking behind the counter and too distracted to notice me. I had to grab a menu myself and ask in a loud tone if I could sit anywhere just to get their attention. Once seated, it took nearly 10 minutes for a server to come by. I ordered a boba drink and pho with brisket. The server returned after another 8 minutes to say they were out of both the boba flavor I wanted and the brisket. After I reordered, the replacement boba arrived extremely sweet -- basically tasted like watered-down sugar syrup with almost no tea flavor. The pho was even more disappointing.. the broth was watery and bland, there was very little beef, and the bowl was light on noodles and toppings. It felt like a shadow of what they used to serve. It's sad to see a spot that was once one of the best pho places in Salinas (in my opinion) decline this sharply. The noodles came out a bit clumped together at first, but once broken up the flavor was spot on and every bite was worth it. The real highlight, though, was the chicken bánh mì warm toasted bun, perfectly grilled chicken, crisp veggies, and just the right kick of spice. A must-try! Coming from the Bay with tons of pho choices, this one was a little disappointing. Our party all got pho, the broth was on the sweet side and lack of flavors. Definitely the sweetest broth I've ever had, in a bad way. The beef in the soup was kind of tough and chewy. Service was alright but they brought out all the noodles and never brought the appetizer shrimp spring rolls. I had to go ask them at the counter. Came here for some pho after a long workweek, and the Medium #2 (rare steak pho) totally hit the spot - absolute comfort food! I also tried their "new" garlic pork spring rolls and they were BOMB! Topped it all off with a taro boba shake to satisfy my sweet tooth :) The pho here is so good, a fellow customer approached me at my table asking what I ordered - because it looked delicious - so she could order it too! I didn't even add any condiments; the broth is so flavorful on its own, the rice noodles perfectly al dente, the beef tender and savory, with onions, cilantro, sprouts, basil and jalapeños to round out the dish. I used to order here once a week ever since we moved to Salinas, but we slowed it down due to errors and just QOS. Such as my order will be ready 15-25 mins but done in 45mins. No Jalapenos except 1 but they all have it. No rice & salad on one dish and asked for extra meat (charge more if need to), but come home with rice & salad and small amount of meat. This is on going.
