Salt was an ultimate letdown. I visited with friends who have been to Salt previously, and we were all horribly disappointed in the poor service and bland food. The three salts presented to us were tasty. I like this idea. Beverage: The Cakebread Cellars chardonnay out of Napa was tasty but not top-notch worthy of $30/glass. The kitchen had a very hard time getting orders out at a reasonable hour. Our reservations were for 8:30 pm, and it took about 3 hours to be served an appetizer, entrée, and dessert--all of which had to be ordered at the start of service according to our server. The restaurant was not even half-full, so the kitchen must be greatly understaffed. Entrée: I ordered the cobia. It was seared but with absolutely no flavor; it was not seared in butter or spices or crusted at all. Just blandly cooked. The fish was presented over a few slices of zucchini and surrounded by a creamy yet flavorless tomato-curry gravy. The basmati rice was good but also super-sweet (coconut? Sugar?) and served on the side and about 10 minutes after the fish for some reason. Service was incredibly slow with our server rarely checking on us. We paid for our bill in cash, yet they do not have change in the restaurant. Our server had to go to the front desk of the hotel in order to get change which took a very long time. My wife treated me to dinner at Salt this week on our trip to Amelia Island (and staying at the Ritz). We eat out a lot, but not often in a five star restaurant. A five star rating doesn't come close to describing the experience, food and service. Everything that we selected was outstanding...my chilled cauliflower soup and lamb loin were spectacular and we had a choice of soufflé's that we made the right decision to select one. A great bottle of cabernet paired perfectly. Beyond the amazing food, the best part was the genuine attentiveness of the wait staff. They, like every restaurant has struggled with staffing during the pandemic, but it was obvious that they do not let that get in the way of providing great service. The brand is so important and they go well beyond great service to protect it. In addition, Okan Kizilbayir the Chef d' Cuisine came out at the end of our meal and spoke with us for about 15 minutes or so and it was a pleasant and interesting surprise. As it turned out, we had dined at Blue (Grand Cayman) several years ago when he was there...so a remarkable coincidence. We discussed the differences of cooking meat versus fish and his background training under Eric Ripert. Even though this review is about Salt, I would be remiss not to mention that every meal we had at the Ritz this past week, was excellent and that commitment to service was not an accident. My husband surprised me for our 20th Anniversary. From valet parking to dinner, customer service is amazing! There's a on site florist so a beautiful bouquet was waiting on our table when we arrived. The staff had special made menus for us with our names that they put into an envelope as a gift for us. Everyone greeted us with "Happy Anniversary " and a smile! They really made us feel special. Our service started with amuse bouche and homemade bread service . Sour dough baguette, black olive baguette and cheese roll were warm and fresh. We ordered the Key West Pink Prawns& goat cheese wrapped in phyllo and fried crispy, on Grits, with green tomatoes marmalade on top. All on balsamic. Lordy! I ordered the filet and lobster tail.Tender and melted like butter in my mouth. We had the trio dessert soufflé: blackberry,chocolate and honey with Anglaise sauce and coffee. The service wrapped up with a gift of smoked salt, homemade salted caramels, chocolate raspberry macaroons and chocolate truffles. Call ahead for special occasions, you won't be sorry! read more

Good meal here. It's doesn't make my "best ever" list, as there were a few minor thing's keeping it from a five star review, but it was mostly pretty good. What falls short could be corralled by an experienced maitre d'. Our table was set improperly; a very minor piece, but for the prices, one expects perfection. Our sever would get an overall "good" rating. He was friendly, but it's the small details at this price that are missing. We had to ask for our table bread to be brought to us, so we missed out of the whole leisurely table salt experience. It was more of a rushed afterthought. All minor issues, which all point to dining room mismanagement. One other point that may be the chef, or it may be the management issue, but there was no aperitif. For a meal at this level, we absolutely expected one, but it was missing. One stand out course was the desserts, which were excellent. So cheers to the pastry chef, but they are always fantastic at the Ritz, so that more than met expectations. Overall, it was a very nice meal, but with small imperfections which can be improved upon by the addition of an experienced maitre d', which frankly they should have already if they are going to bill themselves in the premier dining range. There is no way that I would classify this as a AAA five diamond, given the fact that basic service expectations were not met. If a restaurant doesn't know where to correctly place a fork, service timing is off, crumbs are not cleared without asking, then the ratings scale at AAA has become meaningless. Good but not fantastic. Worth the $500-$700 (for two persons)? It's better than the last meal we had at that price. Might or might not eat here again. Maybe for just drinks and the beautiful ambiance, and an appetizer, but not the whole shebang. read more

I am torn on Salt. We had excellent food. The wine menu is very strong and reasonably priced. The live guitar was exceptional. But I was rather offended that the restaurant would not accommodate members of our party who were pregnant. The tasting menu included raw seafood. We asked if there was an alternative for the pregnant members of our group and we're told no. Ok. But then we were told we couldn't order the tasting menu if everyone at the table didn't order it. So half our party couldn't order what they wanted. For a restaurant charging $250 a person for a meal, this seems inappropriate and kind of ruined what otherwise was an excellent meal. read more

Most fine dining establishments have taken advantage of this thing called Covid to deliver a lower quality of service, but Salt has not. When it comes to fine dining on Amelia Island, this is the place to be! We made reservations for 8:30pm on a weeknight and despite arriving more than 20 minutes early, we were seated right away. The dining room is dimly lit, giving it an incredibly romantic and intimate feel. Our waitress came over to ask if we've been there before and upon learning that we hadn't, let us know more about the menu and their use of salts from around the world. We opted not to have cocktails, but the cocktail menu was definitely impressive. We ordered the tuna tartare, which came on a bed of dry ice and was topped with dragon fruit and pineapple sorbet and accompanied by plantain chips. It was incredible! Fresh is an understatement. I can't recommend it enough! For entrees, we ordered the seafood pasta and the rib eye. The pasta came with tons of lobster, shrimp and scallops and you could instantly tell it was fresh made pasta. So delicious! My boyfriend loved the rib eye and said it was perfectly cooked. For dessert we ordered the blueberry crumble and it wasn't overly sweet at all. To be honest, I could've tolerated more sweetness but wasn't disappointed at all. Even though we were stuffed to the brim, our server brought out complimentary macaroons and truffles. This is the centerpiece restaurant at the Ritz. It's obviously a high-quality enterprise. My quibbles would be that, after sunset, the room was very dark and the view is gone. (So dine early.) Also, my appetizer of Key West prawns with goat cheese was so heavy on the tangy goat cheese that the prawns may as well not have been there. However, my main course of the bison tenderloin was perfect in every way. Their shtick is flavored salts and your waitperson will recommend a few based on what you order. They bring it with the bread and butter course and recommend salting your butter to compliment the food. It's a cool idea and you can buy the flavored salts (there are probably about three dozen) in the resort shop at $10 a pop. They make a nice little gift. I felt just a touch overserved; there were a lot of people who came to the table and I wasn't really sure who to ask for what. But everyone was knowledgeable and focused on presentation. The complete staff was very attentive from seating us quickly to inquiring about drinks to explaining the menu. We had the pleasure of meeting the chef, Johnny Key. It was not an understatement when he said he could recommend all of the dinner options. Our party of 6 chose different options. However, we were all in agreement about how delicious our meals were. My husband brought me here for my birthday while we were staying at the Ritz. We had read all the stellar reviews and were looking forward to this dinner. Our experience eating any any Ritz restaurant in the past has always exceeded out expectations in every way. This was a great dinner, but not the service we are normally accustomed to when at the Ritz. The decor is beautiful- very stately. Simple, yet elegant. We were promptly seated as soon as we arrived. We sat near the window, but didn't quite have a view. We were greeted by our server shortly after we were seated and were given our choice of water. My husband and I ordered a cocktail to enjoy before dinner - a dirty vodka martini with blue cheese stuffed olives, and it took longer than we expected for our server to come back with our drinks. Someone brought out a selection of warm, freshly baked breads with butter. Our server brought out a trio of unique salts and told us about them and explained the name/theme of the restaurant. All of the salts are available for purchase in the hotel's gift shop as well. It was fun and interesting tasting the different salts as they each had their own unique flavor. After we finished our martinis we each ordered a glass of wine to have with dinner. Once again, it took awhile before we received our wines - in fact they didn't arrive to the table until after our entrees. I suppose maybe the bar was running slow that night. Since we didn't have a huge appetite we opted not to order appetizers or salads. Whenever we are by the ocean, we always want seafood and they had a nice selection of seafood options, although their steaks sounded delicious. I went with the Alaskan Halibut with gnocchi and spinach. It was cooked to perfection and tasted amazing. The gnocchi was cooked with a nice crispness, which I'm not used to with gnocchi, but I loved it. My husband ordered the Pappardelle Pasta which was loaded with seafood! It had scallops, shrimp, and lobster and was served with wild mushrooms. My husband let me taste a bite of the lobster and shrimp and it was fun of flavor. It made me wish I had ordered it, but I try to limit how often I eat pasta. If you're a pasta and seafood lover, definitely order this! My husband isn't normally a fan of mushrooms, but he loved the mushrooms in this dish. For dessert, we ordered the the trio of soufflés which came with vanilla anglaise and salted caramel ice cream. Each souffé was delicious, but honestly, I could've just eaten the ice cream! Since it was my birthday, our server brought out a beautiful birthday dessert platter with two macarons, chocolates, caramels and a sample of salt. I was already full, but we made room for the macarons, which were delicious! We took the chocolates and caramels with us to enjoy later. (They were delicious as well.) While the food was delicious and top-notch as usual, the service was not what we are accustomed to receiving when dining at a Ritz restaurant. Nothing specific to complain about our server except that he just didn't seem as attentive to us and didn't check up on us to see how we were doing. To eat here, it's highly encouraged to make a reservation. As part of the Ritz-Carlton, Salt has a unique set-up and not one that is overwhelming good. The ambiance was nice. However, to see the ocean from some tables, you would have to stand up, because foliage is in the way. If you need to use the restroom you have to walk down a long hall, which is outside the restaurant. Not ideal, so prepare yourself for extra time. Upon our entrance, we met the General Manager, Phil who greeted us with a smile. We were walked to our table and promptly greeted by our server with an extensive wine list and a menu. While it was difficult to chose a wine, they had sooo many good reds and whites, we opted for a bottle of The Prisoner Wine Company Blindfold. An excellent choice I must say, as we are fans of them and Orin Swift, as they are a higher caliber of wine. The pallet feel with their wines is unparalleled. Moving on to food, we had some delicious breads paired with their specialty salts, such as herbs, clay, and sriracha. All excellent salts. Next, we had raw oysters from Canada, New Brunswick if we recall. A nice clean taste, not briny. Exactly what we expect from a good oyster. Also, we had the octopus, wow, what a beautiful dish and the cooking time on it was spot on. On the plate was a small mixture of greens. Also mixed up in it was what it looked like a dark small piece of a man's hair. I immediately dropped my fork back onto the plate and looked for our server. While our servers had been extremely attentive from the beginning, it took 20 minutes to get our main server, Chrissy, back to our table to show our disgust. How does this happen in a high-end restaurant?? We've eaten at hundreds of 5 star restaurants all over the world and have never experienced this scenario. Once she came back, I explained that I was disgusted at the hair that was mixed in with the greens. She immediately noticed it and promptly removed the plate and said it was inexcusable and would make it right. Her response was exactly what I would expect. Next, Phil, the GM came to our table. He immediately apologized, said it was not excusable and offered us, free of charge, new oysters and another octopus. We accepted his offer. Because of this, in the hour and a half we were there we had only had oysters and the bread they brought us. We were pretty hungry at this point. Finally, the new orders of oysters and the octopus came out. Again, these were appetizers, not our entrees. Both were delicious, and this time, free of hair. Phil checked back again, and so did our main server. We appreciated that. Since we were still waiting for our main entrees, my fiancé went to the restroom. Upon arrival back to Salt, he stopped to express his concern to Phil, again. We learned that the head chef has only been with them a year and basically has all new staff. We all understand that everyone is experiencing employee retention, this is not an excuse as to why a high caliber restaurant fails to put uncontaminated food on a table. A few minutes later, our entrees arrived. I had a gluten-free pasta dish with scallops and shrimp. My fiancé had the Snapper. The presentation looked great, but the portion sizes were a bit small for the price point. For my dish, the pasta was slightly over cooked, not terrible though, but the scallops and shrimp were prepared excellent, and a decent amount of each too. Lastly, dessert was offered free of charge, so I opted for the Creme Brûlée. My fiancé had a chocolate, which was a mousse. A nice balance of sweet and not overly done. In addition, we were brought some chocolate macaroons, chocolate truffles, and caramels. All of the desserts were great. However, since our white wine wasn't a good pairing with our dessert we ordered two glasses of The Prisoner Red blend, called Saldo. It, too, was excellent. It was more of a full-bodied red with hints of blackberry, chocolate, and an oaky feel. Our check was brought to us and we noticed that both appetizers, all of the desserts, and wines paired with our dessert were all comped. We paid and went to leave, and were approached by Phil again. Again, expressing his concern and asking us to please return for another opportunity to impress upon us. He provided his contact information if we were to be in the area again. It was a little too pickled for my taste because I prefer to taste more of the steak itself. Next, the bread service was very nice. Choose the Asiago roll... it's the best one. The bourbon drink was "meh", but I'm a bourbon snob... so It's really hard to please me there. Everyone built this restaurants food up so much, I thought they knew how to cook seafood. Besides it's Florida, right? My biggest disappointment was the seafood pasta dish. I did not expect the seafood to be overcooked. The scallops and shrimps should be succulent not dry. It's hard to believe it was dry within the sauce. I could not even try to put the special salt on it to cover it up. Eeekkk! Thank goodness I took it home and gave it away. I just don't see how this place has high ratings. The service is hands down excellent. The salts were amazing, especially because I had a chance to use them at home with other meals. This made up for the mediocre food. Overall, I do wish I came out before sunset because it's a beautiful atmosphere and hotel. The only thing that I was truly disappointed with was that the restaurant was closed on Tuesday's, my anniversary day. My concerns quickly subsided when I received a return call with multiple options for Wednesday evening. Upon arriving at The Ritz Carlton Amelia Island, we were greeted by the valet with complimentary parking. Next, we make our way to the Salt restaurant where we are immediately seated by our waitress, Shanna. Shanna then presents our menu's with a sensational personal touch, "Happy 30th Anniversary Mr. and Mrs. West" Shanna commences to give us her dinner recommendations, 4 Course- Signature Tasting by Chef Okan Kizilbayir, which we were eager to try. Absolutely the best dinning experience we have ever had, especially the Grilled Ribeye with Foie Gras Emulsion, simply sensational. Our waitress, Shanna, was overly attentive, in a good way. She went out of way to make sure that our special evening was just that, SPECIAL. I ordered a Smokey Old Fashion, with the smoke of course and my wife consumed a perfectly executed Lemon Drop. The breathtaking view overlooking the Ocean was spectacular, especially as the sun was setting and the torches illuminated the walkway to the beach, just jaw dropping. Culinary perfection. Superb. Every aspect of Salt is top notch from atmosphere, friendly and helpful staff, cocktails, and food. They bring to your table a variety of in house favored, and imported salts. Tonight the variety included a smoky French salt, a citrus infused salt, a garlic infused salt and a Hawaiian salt. The served bread is a choice of olive bread, sour dough or cheese bread - or try all three! Spread these with a touch of butter and sprinkle with a bit of their flavored salt! Yum! I thoroughly enjoyed the delicious, aromatic cocktail, Green with Envy. It was a blend of Angels Envy Bourbon, St. Germaine, a bit of cucumber purée and garnished with cucumber slices. The Tuna Tartare was a light, yummy start to our evening. Tonight hubs devoured the Pappardelle pasta entree of house made pasta with a seafood variety of shrimp, scallops and lobster, and tossed in a sherry cream sauce. My surf and turf entree was perfect! Filet cooked medium, and accompanied with a delicious lobster tail. To cap the meal they bring you a complimentary tasting of homemade caramels, Macarons, and chocolates. Last Wednesday my wife and I enjoyed the Chef's Table at SALT at Ritz Amelia Island. This experience is one of our favorite get always. We brought our own playlist and speaker and the team gave us the space to have 3 hours to personally catch up as well as to walk around the kitchen to interact with the station chefs. We came into the evening with fond memories, which sometimes have a way of exaggerating our expectations. However, Chef de Cuisine Rick Laughlin, who has been there for 17 years, has recruited a team of highly talented chefs to take their cooking virtuosos into an culinary symphony that is worthy of the cost of private dining. Salt isn't a restaurant, it's an experience. Great selection of wine and specialty cocktails to start. To begin your Salt experience, they bring out the baked products and churned cream/butter. The chef will then select certain types of salt to use as an accent. I believe there are 11 to choose from, but the waiter will only bring 3. My favorite was the smoked salt which can go with anything. Our large group started with some appetizers including shrimp & grits. For my main dish, I had the Pappardelle Pasta With Seafood which I highly recommend. A perfect portion with quality chunks of lobster, shrimp and other seafood in a light flavorful sauce. Seasoned perfectly and not salty---- that's something you can add yourself. If you have room for dessert, you might want to try the sorbet. I decided to go for the usual specialty coffee. I was fortunate enough to score reservations here for this past Valentine's Day even though there were fully booked thanks to our concierge at the Ritz. I booked it out of convenience and hadn't research the place much, which is pretty rare for me. Only later did we discover it was a five diamond restaurant. From the presentation to the creative and fantastic tasting menu, we were thoroughly impressed. This has to be THE BEST restaurant we have been to in Florida. I can't believe it's not a Michelin Starred restaurant. We had the Valentine's Day chef's tasting adventure and lived every minute of it. The tuna tartare was unbeatable. The Chilean sea bass was the best I have ever had and I get this a lot, as it is one of my favorites. The passion fruit chocolate dessert was phenomenal. Even the flavored salts and homemade breads were great. I highly recommend this place for date night. Next time we are here we'll be doing a chefs tasting in the kitchen. read more
