That was my reaction after dinner at Cibo. I believe it has the potential to become one of the Cape's next great year-round dining destinations. I have known one of the owners, Nate Galvin, for some time. Nate is a Level 3 sommelier, and his knowledge, enthusiasm, and genuine passion for hospitality add a great deal to the experience. I also enjoyed meeting Chef Kolby, originally from Florida, whose talent was evident throughout the meal. Now that summer is nearing its end and the Cape has been returned to its residents, this is exactly the kind of new restaurant we should discover and support.
