That shell served as the perfect canvas for the melted chocolate, and the chocolate ganache inside the eclair was rich, creamy, and decadent. The eclair was probably double the size of a standard eclair, and I was thoroughly impressed by how well it had come together -- eclairs are hard enough to make when you're using normal flour, but this was super impressive and didn't taste like it was gluten-free at all.
