Okay so I had a hard time wrapping my head around the reviews but I get it now. This place is probably closer to 3.5 than 4, but I round of for family businesses. Also, the pictures are not as good as the food actually looks and I don't know why. We went in at 6:30 on a Friday night. I ordered a quarter pound each of brisket and sausage. I get why people gripe about the prices. They would have been high a year ago, but they're in line with market at the moment. Food stocks, demand, and supply chain issues are all impacts, so I'm giving them a pass. Brisket - incredibly tender, phenomenal flavor. The rub compliments the meat instead of over powering it. Unfortunately, it was also dry. Jalapeño Sausage- incredible flavor, but overcooked and dry. Borracho beans - average. Hate they are served in a boat. Scalloped Potatoes - surprisingly good. Clearly made fresh, can taste a hint of sour cream and chive. Really good. Peach Cobbler - The best I've ever had. I would violate the Geneva convention and stack bodies for this cobbler. Brisket Nachos - really good, wish I had gotten the queso on them though. Rookie move. Overall this place is good, but not quite living up to its full potential. The ingredients are fresh, the prices are reasonable for the quality of the ingredients, but there is just a small something missing in the smoking process that's leading to food being a little on the dry side. The brisket nachos were great, feeds two, however, need to popcorn-e-fi them a little bit more so that all the yummy stuff is all over and not just on top. My husband and I decided to stop by on our way from Dallas to San Antonio - I really wish we hadn't. We love supporting small businesses and usually don't care about the price HOWEVER this place was overpriced for the food and service, in my opinion. We paid almost $80 for what we ordered, but then it got progressively worse! We ordered one of the "Specials" and other things, all were okay, but nothing that was just, wow. Here's where things got annoying: we ordered our food and we had to make some adjustments as they were out of certain things, which is fine, that's usually what happens at BBQ places later in the day-no problem. We paid and had to wait to get some of the items, again, not an issue. Then, one of the ladies let us know they were out of queso, and that we had to choose something else, I provided two options and went back to the car because we had our dogs in there. After about 5 minutes my husband comes back out to let me know that the first option was off the table as they were out and if he chose the second option they would have to charge us $9 more, so I went back in to choose something else. I then proceed to choose for a THIRD time. Guess what, after about 5 minutes they let us know they are also out and cannot make it. So at this point I'm annoyed and I'm pretty sure they can tell, so instead of just apologizing she suggests that I just don't get anything else and she can process a refund. So that's what I did. After saying I was done choosing she went ahead and apologized, process a refund and we were on our way. Overall the service from the blonde girl was eh, the brunette girl - she was amazing from the moment we walked in, and the food was okay. It sounds like some people have had great experiences and that's great, however that was not ours. read more

We went here with low expectations based on a few past experiences and were blown away with the improved menu and overall experience. When you go in it still has the ambience of an old school Texas barbecue joint with an improved Tex Mex themed menu along with traditional al ca Carte BBQ staples. Long gone are the traditional meat plates that we used to order. We were witnesses to improved customer service, menu, and food quality. There were so many mouthwatering items to choose from it was nearly impossible to order. We ordered 2 brisket stuffed queso potatoes. Spicy and delicious we were completely satisfied and stuffed. Our little one ordered a brisket quesadilla from the kids menu. Drinks were refreshing especially the sweet tea and Diet Coke. Dr Pepper was watered down but that's understandable so no stars taken off. They have actually improved to the point that they are better than Millers down the road. I'm not sure if competition is the reason for their improvement but for whatever it is I hope they keep up the great work. It's even better than when I 1st went there back in 1993. This place is definitely a top tier BBQ joint. The brisket was nicely seasoned with a great smoke flavor and super tender. The turkey was some of the best smoked turkey I have had in my life. I'm visiting Texas with family and asked to have some authentic Texas bbq and this place did not disappoint. I'm not a huge bbq fan but likely because I haven't been eating the right stuff! This is a counter service establishment, you walk up to first select your meats, then your sides, drinks, then payment. My plate had the brisket, hot link, Mac n cheese, and potato salad, ordered a margarita to drink. The brisket was INSANE, melted just like butter, full of flavor, just amazing. I got the 1/4 pound, which was enough to share for two. This did not need the bbq sauce, but that took it to the next level. I'm a huge fan of the more acidic rather than sweet bbq, so this really was a treat. The sausage link was also fantastic, had the regular without the stuffing. It was juicy, cooked to perfection and the flavor was off the hook, slight sweetness. The sides itself were so-so. The potato salad was pretty standard, good, added some salt and pepper. The Mac and cheese was also okay, creamy though the flavor wasn't there for me. I honestly are with a little bbq sauce because it was that good. This place is known for their meats and I can see why. I was honestly bummed most of their meats were sold out as I was looking forward to trying the ribs. I took off one star only because my margarita was forgotten and made late. I didn't receive it until I was finished with my meal. I still took my time and enjoyed it. The margarita was made very well, though I wish I had it with my meal. The other reason why is the lack of options for meat due to selling out (probably more of my problem since we may have been at the end of dinner rush). My son will be moving down this direction soon and we were looking for a good BBQ stop. We found it! It's hard to please everyone when it comes to Texas BBQ. It's too moist, too dry, too much seasoning or too little. The sides have too much this or that. NOT HERE! Everything was perfect. The flavor of the brisket which I love the moist brisket was spot on. Enough seasoning to kick it up but not so much that you can no longer taste the meat. I also got jalapeño cheddar sausage. All I can say for that is WOW! A little kick with amazing flavor and not a load of fat. This is high quality sausage. Mac and cheese is solid. However, if your a BBQ joint and your mac and cheese isn't spot on your not a good BBQ joint. If there is a negative it would have to be the cost. But if you hit many places like this, cost is just part of it. This isn't some chain place where everything comes in frozen and everything gets fried. BBQ is an art. Even with each location. I've eaten here for years like when the dad owed it and there was one in Killeen that the misfits burned down and stopped eating here awhile back because of issues (look up prior reviews) My friend asked me to go the other day and I really really was reluctantly but went. The service was excellent. The food was delicious. The Ambiance was outstanding. It was just as I remembered it to be days gone by. It's the best barbecue around and the sides are delicious. I see ratings on other Joints and have eaten at those places because of there ratings in Texas Monthly and Triple D. Out of all of them even with my past ratings Schoepf's is superior, but I don't write for those magazines. If I did they would rate number 1. Don't waste your time at other places spend your money for excellence. Matter of fact I went back with my husband the next day. A-1 service, food off the chain with spices and the atmosphere was welcoming. I'm glad something's have changed and they have kept the taste of the meat the same throughout the ages and added some sides that are mouth watering to the taste and nourishment for the soul. I didn't think I'd ever return to this place but it calls my name because it just that good! Stop in and I hope you find love in the air as well as the food being delicious. I'm still a lover of this joint and will by pass Miller's every time. The price point is higher but the food stands the test of time. So, I'll continue to pay for excellent food, clean and outstanding atmosphere & great service. In the past sometimes the food was off and the service shaky. That seems to be fixed with better service and them making their own sausage. I hope they continue on this path. I'm buying what their selling as long as it comes with a smile. PS I've given a truthful rating each time. Last time I rated I was not pleased. Today I'm pleased and glad I came back, back and back The sausage was juicy not dried out. I like my brisket moist not fatty. It's was moist and not fatty. The baby back ribs were tender, moist and juicy all in the same bite. The original sauce is my favorite. It was so bland and the only thing that made it edible was the fritos. I've had their brisket tacos in the past and they are good. I hear their brisket enchiladas are amazing but....if you are going to pay that much for a very shallow bowl of chili it should taste amazing. I took the chili home (because I only ate the fritos) and spiced it up and mixed in some scrambled eggs and served it over tortillas for breakfast and it was much better. Their peach cobbler was good. With major competition a few blocks away they need to step up their game. They have what the other place doesn't. I don't care how long the line is to get to the butcher here, it is well worth it! The juiciness and flavor of their Turkey breast and moist brisket are hands-down amazing. Their bbq sauce is excellent but you don't need it to flavor the meat- it's already flavorful on its own. The sides are great, too. Very average smoked bar-b-que. You order directly from the pit which is very nice. Service was quick and friendly on a Thursday evening. Brisket - I asked for moist brisket and got a decent cut which was just being opened from the butcher paper. The brisket was quite good. Good bark which leans a little sweeter. The brisket was very tender and flavorful. This is the only reason I'm keeping it at 3 stars instead of 2. Pork chop - very dry and bland. Pork chops this thick are generally on the dryer side but this one was particularly dry. They really need to add more rub and spices. There was no discernible taste. Jalapeño and cheddar sausage - Major disappointment. First off it was cold. No excuses for this. Second there was no hint of any spice. I could not detect any jalapeño. The tiny cheddar pieces were few and far between. No flavor to the sausage at all. Had to dunk it liberally in the bbq sauce to make it edible. I returned to this bbq joint recently and found the meat and sides to be better than my last visit. Perhaps the competition down the street motivated the owners to improve their offerings. Regardless, I would recommend it. I ordered brisket (lean) which was tender, flavorful, and not dry at all.
