We went to Signora Pizza Lab, their new brick-and-mortar on Rainbow this weekend. Being vegetarians, we each chose a slice of the Margarita, which is Roman style. The quality of the ingredients shines - with a lovely, fresh red sauce made from DOP San Marzano tomatoes and imported cheeses. The dough was perfectly fermented, with a lovely rise and crisp crust from being baked in their gorgeous, authentic wood-fired oven. In a town with such a great pizza scene, we are so lucky to have World Pizza Champion Chef Floriana Pastore sharing her food with us, as she really knocks it out of the ballpark. Note that the Pizza Lab location has only 4-5 seats on a window rail inside - but has plenty of seating outside. They have a brick and mortar location now on Rainbow. Their menu is extremely vegan friendly, you can remove the meat from any of their Red Pizzas and sub vegan cheese and it's incredibly tasty. Probably one of the best vegan cheeses we've ever had since its a good template and not over powering in flavor. We also tried their fried pizza and it was fantastic, not super oily either. Only thing we'd like that isn't offered is to add additional veggies in lieu of the meat. **Edit, I was informed via the message function on this app that going forward they're going to be charging for the cheese substitution which is extremely disappointing given that they were already not offering anything in exchange for the meat we were removing.** read more

We were super excited to try this pizza place! Got there before them around 3:20pm and just had to wait a little so they were able to set up but it was quick to open a little past 3:30 when they opened. Chose to get prosciutto E fungi pizza! I don't like mushrooms but my husband does so I loved that they were able to accommodate and only put it on half! We also chose to get the pistachio tiramisu, which was a special of the weekend and it was great love that the taste of pistachio came through nicely. Now back to the pizza, when we got the pizza, it was super hot and we were so excited to eat that per usual I burnt my mouth, but it was worth! The sauce with the prosciutto was perfect to me. THE BEST pizza EVER!!! The crust was light and crispy with a thin layer of slightly tart tomato sauce and gooey cheese! The basil was slightly toasted and crisp. The diavolo had all of the above with the addition of a slightly salty and spicy thin salami , delicious! One of the best pizza I've ever had in Las Vegas! This is not a type of greasy and over loaded with cheese and toppings. Every ingredient is fresh and great, you can tell right away. The ingredients used are so authentic and delicious, and the fried pizza is so rich, it's almost like eating a dessert. The BEST pizza in all of Las Vegas and I don't say that lightly. Floriana, the owner is the real deal straight out of Italy. Everything she uses on those pizzas is imported we were completely blown away. I have no idea how this place escaped me for so long. All food trucks are not alike. This is a completely different set up like no other. The pizza oven itself in this huge truck was taller than the person making the pizza lol it looks more like a restaurant on wheels. The pizza was exceptional. The sauce was spot on the arancini (rice balls) were to die for. AND she makes mozzarella stuffed zucchini flowers. I can't even find that in an Italian restaurant out here to find it on a food truck is rare. We also tried something we had never had before anywhere. It was a Bucatini pasta ball with bacon. It was so good. We highly recommend Signoras pizza and we will be going back. I've been following this food truck for about two years. I think what put me off of visiting sooner were the reviews that there was a long wait, however this was not the case. I follow them on Instagram, where they post their weekly schedule. Usually on Saturday evenings they are located in the RC Wiley parking lot is summerlin. We arrived around 520 pm on a Saturday and there were only 2 parties waiting ahead of us. We ordered and were given a pager that buzzed when our order was ready. They have a pretty large menu for a food truck! Pizza wallet, fried pizza, traditional pizza, appetizers and desserts. They have a small bar next to the ordering window where you can sit and wait, or you can wait in your car. We waited less than 15 minutes. We had that arancini- very cheese and delicious but I wouldn't order again, just not my thing. The patatosa- a potato and Italian sausage pizza- again, not my favorite but good for people that love sausage. The real winners here were the simplest items. The Margherita rivaled settebellos (my personal favorite pizza in town)- and this pizza came out of a TRUCK! But the fried pizza was TO DIE FOR. We had the amalia. I would come back and order 10 of these. It was so amazing. The angioletti was also very good with lots of Nutella. Wish they had the pistachio for us to try too, but they were out. Ok so I changed my star rating because after my quick nap I felt a bit better and had another slice of pizza. I reheated it in the conventional oven and it was still quite tasty. I even ate a cold slice at 3am bcs I woke up and was super hungry and it wasn't bad even cold. The sauce is fresh and bright with a bite of acidity from the tomatoes. You can taste the quality of the cheese and it just stays with you. Even the squash blossoms were decent cold. I have to reheat them in the oven to see how they are. Now the angioletti needs to be eaten fresh and hot bcs once they got cold the dough was hard. The flavors are still there though. Love the pistachio stuff. Now the cannoli went to my sister and she's a harsh critic so she said there was too much chocolate chips that it overpowered the other flavors and there was a hint of mint. She told me to stop buying her cannolis to try. She'll just wait until she goes to NY and have one from Venerios or until she makes some. So, all in all what I learned from my trip here is; go early, plan on waiting for at least an hour, don't go on a windy day, don't go hungry, and try and eat it there as soon as you get it but honestly the pizza is good cold so I guess it doesn't matter where you eat it, lastly be prepared to spend some $$. I always overspend bcs I want to try many things, you don't have to be like me haha. I want to try the fried pizza next and the tiramisu. read more

OMG!! I have been following this company on Facebook for a long time but they were always so far but today they were close to me and I am so glad I came! This was real italian pizza. I ordered the margarita, Mimosa, and Diavola. They were all amazing. I'd recommend the Mimosa pizza if you aren't a huge fan of red sauce. All the pizzas were amazing ! I was blown away by how good it was. I highly recommend coming to give this place a try. The wait was a little long but they make it fresh so it is worth the wait! They have a Facebook page which posts their schedule. The food truck looks really nice and I was impressed by seeing the separate work stations they had in there. Signora Pizza has amazing pizza and so much more. I can't believe they are doing so much out of a truck! I've been following them on Instagram after being told by several friends that I needed to try them. I finally was able to try them at Khoury's and again at Foodie Fest. I've tried their Eggplant Parmesan Pizza, Diavola Pizza, and Margherita Pizza. All three are delicious. My favorite so far is The Diavola because I love spicy food and the meat on it is so good! All of their pizzas have quality ingredients which is evident in the taste. The Squash Blossoms and Angioletti are also very good. The Squash Blossoms have a delicious breading and are full of gooey cheese. A delicious red sauce for dipping is the icing on the cake. The Pistachio Angioletti was so good. I love desserts with pistachio cream and knew I needed to try this. This great pizza is a must try. I can't wait to catch this truck again soon. read more

Someone sent me a video of this "pizza on wheels" joint that was posted on Instagram. Well .. why waste time !! The very next day I found them in the parking lot by RC Willey's. There was a semi long line as I approached the counter to order. Others milling around waiting. I placed my order and was told there was a 40-45 min wait. No problem. I don't mind waiting as long as I am told upfront. I ordered two pizzas to go, one was the truffle pizza and one was the Diablo pizza. When I got home and opened the box, they both looked insanely amazing. The flavor was outstanding on both pizzas. The Serano ham that they use was fantastic. Quality ingredients makes for a quality pizza. I highly recommend and I will research them again and find their location when I am in the mood for another gourmet pizza. read more

Finally got to this food truck. This is hands down the best Neopolitan style pizza I have ever had. Perfect char and chew on the crust with great flavor. Quality toppings as well. We ordered the Prosciutto y Fungi and the Diavolo as well as the Mimosa. Now I will say when we got home we didn't get a Diavolo we got a Margarita. Not sure if we got someone else's pie or if it was just a mistake. I will say I didn't care much because the Margarita was delicious. Ordered the Mimosa because it sounded interesting and it was. The combo of sweet corn, cream sauce and ham was excellent. All three pies were excellent and I will definitely be back again. read more
