My pozole had good flavor without too much fat (the excess had obviously been skimmed) and was quite hot, though I wish it had more hominy and pork. My wife later found out that the meat used here is butchered on-site and that care is taken to remove excess fat. It really shows: all the meat dishes were not greasy and there wasn't the pools of fat that often accompany hastily prepared dishes. It was appreciated.
