I remember watching their episode 10 years ago. I didn't even live in Colorado back then! Their claim to fame is the iconic cheese "skirt" on their burgers. The way they melt the cheese, you get this funky crispy cheesy entity around the burger resembling a skirt. On this visit, I kept it simple with the Pueblo Farmer and fries. Pueblo Farmer ($12.25) // Grass-fed beef, pueblo chilies, pepper jack cheese, & homemade guacamole on our sesame seed bun. Beefy, spicy, creamy, a perfectly balanced burger. I didn't get it skirted (I honestly was so tired from driving that I forgot), but I wouldn't change much about this burger. Damn tasty! Burgers don't come with fries so I added those on. These are thin and salty. Even though the fries are extra, they have a little sauce bar with their ketchup, ranch, and Heifer sauce to accompany it. The sauces were all great and tasted homemade! There are two in town. This location is small but had a line out the door. Limited seating but we snagged a couple of bar stools on the outdoor patio. The place was packed which to me is always a good sign. Skirted Heifer serves a unique burger. The beef is Colorado grass fed and grass finished. Buns are homemade and the garlic bun is so soft and tasty. Condiments are made in house as well which adds to the flavor of the burger. The burgers are made to order and you can enjoy them exactly the way you want. We tried two of the burgers. Initially, we thought we could share a burger. HA! That was a joke. Once we both bit into our burger we knew we had to have a second one. The first burger was on the garlic bun with no skirt but with everything else and we both fell in love instantly with the juiciness of the burger. We went back and as we had to try the skirted burger. The skirted burger has an extra layer of melted cheese that surrounds the burger like a skirt. The burgers may as well be smash burgers, they are way too thin (like McDonalds). The burger of the week - I tasted the honey once, I think they forgot the "hot". I ordered online. I arrived 1 minute prior to the time it said my order would be ready. I went to the "Order Pickup" area and the guy passing out orders said they were really busy and backed up but it "looked like my stuff was on the grill". No big deal, it happens. So I grabbed a seat at the stickiest table I think I've ever sat at in my life. After waiting for about 15 minutes and never hearing my name, I noticed a guy walked up to the counter and was handed a black bag. Next to the bag they handed him sat another black bag. I wonder if that's mine, I thought. So I walked back up to the order pickup area and asked they guy, "Did you call my name, Barry?" He checked all the tickets lined up and said to me in the most smug tone he could muster, "Dude, I don't have anyone named Barry". And then just went back to doing whatever. I said, "Hey man, do you not remember? I was just up here looking for my ToGo order. You told me you guys were ba..." and he cut me off and goes, "Oh ToGo?" And then walks over to the black bag that was sitting there and goes, "Barry?" I nod, and he snatched the back up and slings it on the counter and goes back to doing whatever. I said, "Hey man, how long has it been sitting there?" He smugly replied (as if I was a burden) "probably like five minutes" When I asked how come he didn't call me he just ignored me. He just turned around and went back to doing whatever, totally ignoring me.I said, "Look man, I don't want to get back to my hotel (about 10 minutes away) and my food be cold." He just looked at me and shrugged and went back to ignoring me, as if I was a burden to him and the store. I said "hey man, I think it's BS you're ignoring me" to which he just turned around and walked away. Honestly he's lucky I didn't pull him across the counter and teach him some manners, because his momma obviously didn't. Also, the food sucked. But I'm not sure if it was because, and as I suspected, when I got back to the hotel both burgers and the fries were cold. It was so bad we didn't even eat it. We just threw it away. Service was friendly and they recommended me to get my pueblo farmer burger skirted which is something I've never tried and was willing to give it a shot. I unfortunately was not a fan of the giant crispy cheese overflowing in my burger container. It really overpowered the taste of the burger and made it very greasy and messy to eat. I really enjoyed Skirted Heifer! Getting it to go probably changed some of the texture or at least made the skirted cheese a little soggy. It did fall apart the second I picked it up. But a messy burger is a good burger! I thoroughly enjoyed their signature sauce (basically thousand island dressing) and thought the burger was juicy and delicious. Absolutely delicious! I also found the focaccia bun to be a fun take on a classic burger. And the pricing is actually pretty good in my opinion. My only qualm (besides the cheese which is no fault of them), I ordered fries but didn't get them :( I should've double checked. Although I noticed on my receipt that the cashier didn't even ring up my fries. So that's a bummer because I was excited to try the Belgian fries. I think maybe if he read back the order to confirm that would've been good. But again, it's not the end of the world and the burger was super filling! The skirted option is great if you want something a little over the top. The burger was well seasoned and had some crispiness to it. We visited Skirted Heifer for lunch after hiking in the morning. This is a tiny store with barely enough room to move given all the customers crammed inside. Ordering is pretty easy at the front counter and the employees all super friendly. I ordered our food to eat there but for some reason they packaged it up for takeout. We unpacked everything as quickly as possible to dig in - hopefully the food didn't steam too much in the bag! The Classic Skirted Heifer ($10.95) - Of course we had to start with the classic, the one that made Skirted Heifer famous. As the name implies, it's a pretty classic burger with the patty, lettuce, tomato, pickle, onion, and sauce on a bun. The specialty is the cheese skirt, which is basically a huge mound of cheese flattened and cooked on the flat top. When I ordered, I expected it to be similar to a crisp baked parmesan crisp, but it's not like that at all. Instead, it's super cheesy and caramelized, becoming a chewy, fatty, and almost leathery layer instead of developing much crisp. They use a ton of cheese in the skirt, making the burger extremely heavy and rich. The burger patty itself is cooked excellently. There's still a slight bit of pink inside, which leaves the patty fatty and moist. The exterior is charred well, giving plenty of flavor. The veggies all work well together, but can't quite manage to dampen the richness of the entire sandwich. Heifer sauce, which is basically fry sauce, a combination of mayo, ketchup, seasoning salt, and pickle juice, is slathered on the bun, adding even more richness. Speaking of the bun - the menu lists it as a garlic focaccia. I wouldn't exactly say it's focaccia. While it has some characteristics of one, it's more of a cross between a normal burger bun and focaccia. It's topped with plenty of minced garlic on top and is blistered very well, along with a great toasty crisp on the cut halves. The burger as a whole is a very enjoyable eat, albeit very heavy and filling. I actually wish I had gone with regular cheese instead of the skirt! (4/5) Burger of the Week ($10.95) - The Octoberfest, the Burger of the Week, includes beef, swiss cheese, sauerkraut, pickled red onions, beer mustard, and mayo all on a homemade pretzel bun. The bun is super chewy, kind of bouncy, yet tears apart with ease like a real soft pretzel. It's toasted very well, creating an almost blackened crunchy area especially along the edge. The exterior of the bun is nicely blistered, although I didn't find it especially crisp, nor was there any salt baked on top. It's definitely like a soft pretzel as the name states, but has some characteristics of a normal burger bun to be soft enough to work with the interior ingredients. As with the other burger, the patty is caramelized very well on both sides, giving it plenty of flavor on the exterior complementing the beefy taste inside. There's plenty of fat so the interior remains juicy rather than drying out. They add just a bit of sauerkraut on the bottom - in this case what seems to be quick pickled cabbage, adding a very slight tang but not much other texture. On top of the patty there's some pickled red onion, offering a bit more in texture and taste than the sauerkraut, and finally a bunch of whole grain mustard and mayo, adding creaminess and additional moisture. It all comes together into a great bite. This is an excellent burger, and way easier to eat compared to the Classic. (5/5) Belgian Fries ($3.25) - These are thin fries cooked nice and crisp. The put a ton of salt and sugar on top, making this a fun salty and sweet snack. They go well with any of the dipping sauces they have, which include ranch, heifer sauce, ketchup, and we also requested curry ketchup. (5/5) I do want to comment that all the tables (we tried several) seem to always be super sticky and disgusting. This is even after I saw them wiping down the tables. Also, I found all the food to be a bit on the salty side, but I would still visit again. They definitely focus way more on the food than atmosphere or cleanliness. I really loved the burger and fries I got at the Skirted Heifer. I went with the build your own with lettuce, tomato, pickles and the cheddar skirt on garlic focaccia plus the belgian fries. It was AMAZING. I personally loved just eating the crispy skirt of cheese all on its own! Fries were skinny and crispy. They do natural sodas, but I just opted for iced tea. On the food front is a home run. The space is SMALL. It is counter service so I didn't expect a giant place, but it is tight with a few tables that get absolutely overwhelmed with customers waiting in line or for their food (not pleasant when trying to eat). I also went on a weekday and had no idea that the High School kids basically line up for fries here in the lunch hour. I mean in the less than an hour here I think 2 dozen high schoolers came through). So I would only come back when school is not in service - trying to eat with dozens of backpacks in your face sucks. It is downtown so parking is on the street and metered. We had no problem finding a spot, but judging by the signs around at other businesses you should definitely be sure you are aware of when your meter is up. At any rate, it is an awesome burger. We entered into a very small seating area. They seat maybe 25 people in very tight quarters. We ordered the cheese wrapped burger with lettuce, pickles, and tomatoes along with sweet potato fries. We asked to split the burger as we were not super hungry but wanted a small meal at a good restaurant. Our burger arrived and it looked like they threw it on the plate. The cheese, which I like was burnt. The burger dwarfs the bun, had no flavor and was dry. Thank God for their sauces. The sweet potato fries were hot, perfectly salted and packed with flavor. The food was a 3 / 5 and the burger was flavorless. Here is the rub! The tables were sticky, not one staff cleaned tables, trash of bused dirty tables in the 30 minutes we were there. The soda machine was filthy, cover with drink spray and napkins laid on the floor. The kicker was a mouse ran through the table area and was eating scraps on the floor. I realize that Skirted Heifer is not a gourmet burger joint, but tauted as a good solid burger and fries. They missed the mark. My Oktoberfest burger was very mid, the pretzel bread was not very pretzel flavored or textured, was very below average. I would rate it as a 2.5. The sauce was decent! Better than most. But the main attraction, the meat, was disappointing. The the burger meat was very dry. Surprisingly, there was a lot of grease and oil that dripped out, but the actual patty tasted pretty dry and wasn't very juicy, making it not that enjoyable to eat. My friend had said that the cheese on the skirted burger was good but the patty wasn't as dry as I had complained about so maybe I just had an off prepared burger ‍ not as sure. The burger meat was perfectly cooked, the ingredients really complimented it, and the sauce.... Amazing. This was the burger of the day, the General TSO burger with sweet and sour delicious sauce. The service was great, and helped us make the decision, the guy behind the counter said it's his favorite burger, so we had to have it. It did not disappoint. I would definitely order this again. It's hard to find a burger place that is really above and beyond. Too many burgers places nowadays just put a lot of weird toppings on a patty and thinks that that makes it unique and special. So glad that the Skirted Heifer is not like this. The place is really intentional on the the flavors and combination of toppings. It really shows when I took my first bite. It takes a lot for a burger to impress me but man my burger was truly amazing. I got the #3 with fries. Man, I can still remember the flavors! One of best burgers that I've had in a long time.
