    Me and Tootsie

Great Texas BBQ... really good family fun. I ordered some of everything on the menu and I can truthfully say it's the best I've ever had. From the brisket to the ribs all the way down to the homemade coleslaw and potato salad. Simply the best. If you get the chance, get to Snow's. And remember, I'm always up for a road trip. Oh, the young lady in the picture with me is Tootsie. She's the pitmaster and just turned 91 years old last week.

This was a bucket list item of mine and it not only lived up to my expectations it exceeded them. I must admit having perfect weather helped but even if it had been hot, cold, wet or windy it would still have been a great day. As long as you understand you are going to have to get in line and wait and come prepared for that you should have a good time. They have music playing once 7:30am rolls around they start serving Bloody Mary's and Lone Star Beer. They then start doing a draw for a chance to jump to the front of the line or some merch. Once you make it to the front of the line you are rewarded with some of the best smoked brisket, pork ribs, pork steak chicken, etc., that you will ever eat. The Snow's team know what they are doing! Perfectly seasoned meats, cooked to perfection with just enough smoke to enhance the meat and not smother it! If you have been on the fence about trying out Snow's, my message to you is do it! You will not be disappointed.

This barbecue is more experience than just food. It's open only on Saturday morning, like 8am. Believe it or not, to be first in line you will need to show up around midnight during the winter or earlier, perhaps 10pm or 11pm during the summer. I showed up at 2am and was 23rd in line. The next time I went I was there at midnight and was 2nd in line. Their pitmaster was featured on Food Network - Ms Tootsie. People come from all over the country to see her and have their picture taken with her. They start serving alcohol right before they open the doors for barbecue and people line up for drinks. They have a souvenir shack and people get souvenirs. Finally, the BBQ! I've had everything that make. My favorites are the pork ribs, sausage, brisket, pork steak, and chicken. The sides are ok, the potato salad has a little too much mustard, but the coleslaw and beans are good.

If you're searching for true, old-school Texas BBQ, this spot is an absolute treasure. The flavors are deep and authentic, and the brisket is some of the moistest I've ever tasted--tender, smoky perfection in every bite. They're only open on Saturdays, but it's well worth planning your weekend around. The staff is incredibly friendly and welcoming--one of those places where you feel like family the moment you arrive. And of course, the heart of it all is the legendary 91-year-old pit master, Ms. Tootsie. Her experience, passion, and craftsmanship shine through in every plate she serves. BBQ with this much soul is rare. Adding to the fun, Kerry, the owner of Snow's BBQ, hosts a lucky drawing each time, with prizes ranging from skipping the line to free merch or even 10% off your entire order. A must-visit for any true BBQ lover.

We were on the road at 4:58 AM, arriving at 5:52 AM, and found ourselves approximately number 170 in line. This was on January 4, the first weekend after Christmas that they were open. Snow's BBQ is closed during Christmas weekend, so it's important to check their website before planning a visit. If you want access to all the meats, we recommend arriving around 5 AM. Tips: - Arrive early to ensure you get the full selection of meats. - Tootsie was not there cooking the meat but arrived around 8 AM. - Bring a lawn chair for the long wait; they have some available, but it's best to bring your own. - Bring a football or something to pass the time. - Once the bar opens, free drinks are available, including spicy Bloody Marys. Get as much free alcohol as you can! The Experience: My boys (19m, 9m, 7m) were all excited because we had watched Chef's Table on Netflix right before heading there. We ordered essentially all the meats. Here's the breakdown: The Meats: - Brisket: Horrible - literally the worst brisket I've ever had. - Pork Ribs: The absolute star of the meal. We had previously tried these after freezing and reheating, and they were still amazing. Fresh, they were tender, juicy, flavorful, and fell off the bone. - Sausage: Surprisingly one of the best in Texas. Excellent meat quality, great texture, and flavor. Both the original and jalapeno were top-notch. - Turkey: Unremarkable, though I'm not a huge fan of turkey in general. - Pork Steak: My friends loved it, but while it had decent flavor, we found it a bit too dry. The Sides & Sauce: - Sauce: Delicious, vinegar-based, but the bottled version is too spicy for my taste. - Beans: I was really looking forward to these since I cook a similar style at home, but they lacked depth of flavor and were unpalatable. - Banana Pudding & Coleslaw: Mediocre at best. Final Thoughts: Snow's BBQ is legendary, but it had its highs and lows. The pork ribs and sausage were outstanding, while the brisket and beans were disappointing. Despite the long wait, the free hot coffee was much appreciated on a cold morning. If you go, arrive early, bring a chair, and don't miss the free bar drinks!

When they say nothing good happens after midnight, they've clearly never given up a whole night of sleep for barbecue. TL;DR Camped out on the front porch of Snow's BBQ for the holy grail of Texas smoked meats. Got there at 11 p.m., landed second in line, and waited 9 hours for the pit to open. Worth every minute. The chicken was legendary, the pork steak divine, and I left with a belly full of meat and stamp #29 in the TM passport. Most people head to Lexington on Saturday mornings. I hit the road Friday night, dragging my daughter along for some true BBQ bonding and a shot at being first in line at Snow's. Spoiler alert: we missed the top spot by 30 minutes. But second place still gets brisket so I wasn't about to start crying into my folding chair. Waiting in line culture is its own kind of magic. We talked BBQ lore with fellow die-hards, took cat naps between meat-scented breezes, and watched the stars shift overhead while the smoke never stopped drifting from those hallowed pits. As the night wore on, the rhythm of the pit crew: Kerry, Clay, and the gang, began moving like smoke-slinging ninjas. Around 7 a.m., the legend herself, Ms. Tootsie, rolled in like the pitmaster queen, humble as ever and ready to work. Watching her tend the fire is like witnessing a sacred Texas rite. At 8 AM sharp, the door swung open like the gates of meat heaven. We ordered brisket, pork ribs, pork steak, jalapeño sausage, and of course Tootsie's famous chicken. That chicken wasn't smoked, it was anointed. Moist, tender, with that black pepper crust that would make a preacher cuss. Brisket: Thick-cut, seasoned beautifully, just a bit dry but still a pleasure to chew. Pork Steak: My first time. Life-changing. I may start a fan club. Jalapeño Sausage: Snappy, I wished it was spicier, but it had enough grease to make your fingers smile. Ribs: Perfectly seasoned, pull-off-the-bone, no teeth needed. Chicken: The real reason I came. The reason I'll come back. There's no better bird in the business. My wife requested it by name and I don't argue with royalty. Sides: Potato salad and coleslaw, classic and well-executed. The banana pudding? As always, a required item in this dad's BBQ gospel. We ate what we could, packed up the rest for the Side Dish Queen back home, and snagged a photo with Ms. Tootsie before her fan club could form a line. She's the real deal. The kind of woman who could teach a brisket how to behave just by looking at it. Stamp #29 has been burned into the passport and into my heart. Just 21 more to go, and if I have to sleep on a front porch again, so be it. Snow's isn't a restaurant. It's a rite of passage. Kerry has built a meat cathedral from steel pits and years of love. The staff is down to earth and hospitable beyond measure. The picnic tables set the dining ambiance and the free drinks elevate the experience. I'll be back. Probably in the same hoodie, probably a little earlier next time. Dad Joke Sign-Off: I told my daughter this was our bonding moment. She told me it was just Stockholm syndrome with brisket.

AMAZING! I always pass through Lexington on the way home but it's always on a Sunday and Snows is closed. However, this time a bunch of us went on Saturday. We arrived there around 8:30 am and were about the 30th or so in line. We waited about an hour before entering the meat hut! While outside you can enjoy free drinks and there is also a merch hut to but cool things, I of course did. Tootsie is a gem, full of smiles and great service. The food itself is out of this world. The best Brisket I've ever had! Hats off to the pit master (Tootsie)!

Arrived around 5:15am to get in line and there were over 90 people ahead of me. By the time they opened there was about an additional 100 behind me. They had music playing and a waffle started about an hour prior to opening. Even got photos with the pitmasters! They did serve some drinks after opening, accepting tips only. The line didn't move super fast and we probably got our food at least an hour after they opened. Overall it was worth the hype. We were so hungry by the time we got the food. We got brisket, ribs, pork steak, sausage, slaw, beans, bread, pickles and banana pudding. The meat was incredibly tender and flavorful - peppered more than others I've had. My favorite cuts were the pork steak and brisket (I had never seen pork steak before). The banana pudding was a delicious end to the meal.

This Texas BBQ is open one day a week with a high rating and on some best of lists. The first few people in line had been there since 1am. We showed up around 7:30am and were 155th in line. We ordered at 10:30am and everything was still available. By the time we were done eating the line was barely out the door (11:30am) and everything was still available. The BBQ itself was disappointing. We got every meat, the coleslaw and the potato salad. The potato salad was the best thing we ate. The sausage was decent. The brisket was not very flavorful and mid quality. The ribs were decent. The pork roast was dry. The turkey was dry. The chicken was just okay. I would not come back, pay so much for mid quality BBQ, or wait in line for this level of quality.

We're near here this weekend and decided to give it a shot. Waited for over an hour but the food was as good as it was when were first here about 10 years ago. Brisket and pork ribs were amazing. Tried the pork steak that was also great. I staple of true Texas BBQ. Has not missed a step even after getting so famous. Well done!

Good time, food, worth the adventure! Arrived by 3:20a & 14th in line. Everyone was chill & friendly. Doors opened around 7:45a, ordered the brisket, chicken, jalapeño sausage, pork steak & beans & potato salad & the sweet tea! Done eating by 8:30a! Earlier you get there, the better the parking!

Brisket, sausage, potato salad, and banana pudding

Woke up at 1:45 to drive to Lexington, TX to wait in line from 4:20 am till they opened at 8:00 am. Great atmosphere and friendly staff! Little bit of a wait for the food as we were 50th in line but it was WELL worth it. I had the brisket and sausage while others in my group had the ribs and chicken. They all said it was worth the wait and drive! I highly recommend you make the trip if you are in the Austin area. Between the food and experience it was all top notch!

    The pits

Another check on the BBQ bucket list. What can be said about Snow's that has not been said before? We showed up on a cold early Texas morning and sat with a bunch of strangers talking about barbecue and where we were from. We laughed and huddled around the fire pits to stay warm as we were smelling the delicious smoke pouring from the smokers as the line grew deeper. Nothing beats a crowd of people that is there for the same reason that you are, just to enjoy good bbq. Kerry came outside and inspired the crowd and then upgraded people in line and gave away some coupons. We had complementary Tito's bloody Mary's that were great to warm up with. We finally got inside and placed our order and made it to the table. The food was absolutely delicious. Afterwards, we were able to take pictures with the legendary pitmaster Tootsie and Kerry. It was something that any bbq connoisseur needs to experience at least once. The bbq was terrific and the sides were good. Make this trip and enjoy the experience, it's Texas barbecue to the core.

    One of each.

Do people get upset if we are spot holders? Like if we waited in line and then 2 people joined us later on where we are in line will we get booed?

No it's quite common for instance to swap out or say a wife and kids sleeping in the car.. the atmosphere is more like being in the food line at a private bbq than a commercial place.. everyone just pleasant and swapping stories about bbq and where… Read more

Do they have lawn chairs to use or rent? We are flying in at midnight and going straight there. Would you recommend checking lawn chairs on the plane

Yes they do have a small stack of them get there early at least and hour or two before opening at 8

It opens at 8 and has a growing line already. What will be the ideal time to get a good spot! 4am?

Our group of 6 got there at 5:00AM and we were close to the 200 mark. All the meats were still there but some of the sides were sold out. We were thinking going again we'd want to get there between 4 and 4:30. It is worth it!!

Can you buy by the quarter pound or half pound?

Yes. Pretty much everything is charged by weight. The ladies that serve up the meat are very nice and accommodating.

    What days are they open?

Only on Saturday. Think of a bbq breakfast. Get there early or be prepared to wait in a long line!

Do you offer online order curbside pickup?

No. Order some through their website if you aren't able to wait in line. It isn't as good as being there, but it is still excellent and easy to heat up.

Hi! Is the line still long and whats the average wait time these days? Thank you!

My husband just went yesterday. They were there by 5:10 am. He was the 215th person in line. They didn't get food until just after noon.

They offer orders online shipped for a flat rate. Has anyone purchased online and reheated the food at home?

I have brought their food home as togo order. Its just as juicy as when I had it at the place. Theres heating instructions online as well.

What time do people start lining up usually, am aiming for top 10 coming from Austin? I mean i want…

I went there 3 weeks ago and I was #158 in line, got in line at 6:30am and waited 5 hours in line til I finally ate. I spoke with the person who was #50 in line, and she got in line at 3am. This is not a joke.

If I get there around 1pm on Saturday how long will the wait be and will there be brisket left?

You will not get any meat. They typically sellout by noon. You have to get there early, 8a ish. You'll wait 1.5 to 2 hrs

What's the earliest I need to be there in order to get the chicken and pork steak before it sells out?

To be safe, I say you should be there at the time they open, 8am so that (hopefully) you are only in line for an hour to an hour an half. I wasn't there until they ran out of items but I read that the closer they get to noon the more likely you'll… Read more

I always heard great praise for the brisket from Franklin's and am happy to be able to admit that they have some of the best. As someone who doesn't typically enjoy lean cuts, their leans came out juicier than some place's fattiest cuts. On the fatty cuts, the meat was very well rendered, and it remained succulent! I will say I was expecting more flavoring from bark, but it was very much a "taste the essence of the quality of craftsmanship of this meat" rather than an emphasis of seasoning. While very well prepared, I did need some bbq sauce to make it hit. I enjoy ribs from a couple other spots more than I did from Franklin's, but ya can't do it all. As for the sides, I was sadly disappointed. The pickles were incredibly salty and the beans were a flavor and textural miss. The potato salad was okay, but I would call it not far off from what you'd get in a bucket from HEB. Had me missing the quality sides from Interstellar 100%! We did pickup to split with friends and skip the line. In ordering ahead, you're not allowed to eat there. Unfortunately, they didn't provide any utensils or napkins for our BBQ picnic. Eat with those hands and lick them fingers!
